Mango Rice with Amchur Powder

Ingredients :

Cooked Rice : 2 cups
Aamchur Powder : 1 1/2 to 2 tsp
Mustard Seeds : 1/2 tsp
Chana Dal : 1/2 tsp
Urad Dal : 1/2 tsp
Peanuts : 1 tbsp
Cashews : 5
Curry Leaves : 2 sprigs
Green Chillies : 3 or 4
Dried Red Chillies : 3
Turmeric Powder : 1/4 tsp
Salt to taste
A Pinch Hing
Oil : 1 tbsp

Method :

Heat a tablespoon of oil in a wok. Add the mustard seeds, chana dal, urad dal and peanuts and let them splutter. When the seeds stop popping, add the split green chillies, cashews, red chillies, curry leaves and hing and fry for a minute. Now add the cooked rice, turmeric powder, salt and dry mango powder and mix very well. Switch off the flame and serve.

That surely is a new process, I have always used grated mango, but adding amchur is a great thought and surely less work as don't have to grate mango :)
