Ingredients

Instructions
Cook the rinsed quinoa with 2 cups of water and let it cool a bit.
When it is still warm add milk to the quinoa. Mix and lightly mash the quinoa.
Add the yogurt, chopped cucumber, grated carrot and salt and mix everything well. Keep it aside.
Heat oil in a pan for seasoning. Add the mustard seeds, chana dal, urad dal and fry until they are light brown color.
Then add the cashews and continue frying until they are brown color.
Now add the finely chopped ginger and chopped green chillies and fry for a few seconds.
Add the broken red chillies and curry leaves and fry for a couple of seconds.
Finally add a big pinch of hing / asafoetida and fry for a few seconds.
Remove it from the flame and pour it over the prepared quinoa yogurt mixture.
Mix until well combined. Serve and enjoy! :)
