Instructions
Cook the spaghetti by following the instructions given in the pack or boil water in a vessel with salt and ½ tsp of oil and cook the spaghetti. Drain water and rinse with cold water. Keep it aside.
Chop the beetroot leaves and stems and set them aside.
Heat oil in a heavy bottomed pan. Add the finely chopped garlic and saute for a min.
Add the sliced onion and fry until light golden brown color.
Now add the chopped beetroot stems and saute for 5 minutes on high flame.
Now add the washed beet greens and saute for a couple of minutes. Add salt and saute for 5 minutes or until the leaves are cooked well.
When it is done, add the cooked spaghetti to it and toss well to combine.
Finally adjust salt and add salt, pepper and oregano. Saute for another 2 minutes.
