Sweet Potato Pizza Bites
These sweet potato pizzas are super delicious, flavorful, healthy and super easy to put together. They make a great fun snack, appetizer, or dinner and are perfect for the holiday season!

Ingredients

Instructions
Wash and slice the sweet potato into ¼ inch thick slices.
Add salt, pepper and olive oil to the slices and mix well.
Place them on a baking sheet and bake in the preheated oven for 10-12 minutes at 190 degrees C.
Flip the slices and bake again for another 5-7 minutes until they are cooked.
Spread pizza sauce on each sweet potato round and top them with toppings (onion, bell pepper and tomatoes).
Sprinkle some salt and pepper.
Add cheese on top and sprinkle some dried basil over it.
Bake them for 5-8 minutes or until the cheese melts.
Serve and enjoy!

DO NOT overbake the sweet potatoes, they should be tender and firm.
The baking time depends on the thickness of the sweet potato rounds.
