Add old-fashioned rolled oats, pumpkin puree, chia seeds, vanilla, salt, pumpkin pie spice and honey to a mixing bowl.
Pour in the choice of milk and mix everything until well combined.

Make sure you use rolled oats/old-fashioned oats for the perfect texture.Use homemade pumpkin puree or canned pumpkin puree. Do not use the pumpkin pie filling, which has added sugar and spices.The overnight oats will thicken as they sit. Stir it and add more milk before serving if needed.
