    Corn Poha ~ Beaten Rice with Corn

    Ingredients :Thick Poha / Thick Beaten Rice : 1.5 cups
    Boiled Corn : ¾ cup
    Onion : 2 medium sized
    Green Chillies : 3
    Dried Red Chillies : 2
    Curry Leaves : 1 sprig
    Mustard Seeds : ½ tsp
    Chana Dal : ½ tsp
    Urad Dal : ½ tsp
    Turmeric Powder : ¼ tsp
    Lemon : 1
    Salt to taste
    Oil : 1 tbsp
    Method :

    Wash and soak the beaten rice for a few minutes to make it soft. Drain and set aside. Peel and chop the onions into small pieces and set aside. Heat a table spoon of oil in a wok. Add the mustard seeds, chana dal and urad dal and let them splutter. Then add the chopped green chillies, red chillies and curry leaves to it and fry for a few seconds. Now add the turmeric and chopped onions and fry till light brown color. Then add the boiled corn and fry for a minute. Add the soaked poha and salt to it and mix well. Cook for another 2 minutes and turn off the flame. Add the lemon juice and mix well. Serve as a snack or breakfast.

      love this, adding corn to poha, after doing lot of corn dishes these days, hubby got hooked with corn, who never used to like it before :), last sunday he made Upma with corn and kids loved it!, H doesn't like poha much should try this out on him :))
