    Corn Palak ~ Corn in Spinach Gravy

    Ingredients :Chopped Spinach : 2 cups
    Chopped Onion : 1 cup
    Boiled Corn : 1 cup
    Tomato : 1
    Ginger Garlic Paste : 1 tsp
    Garam Masala : 1 tsp
    Cumin Seeds : ¼ tsp
    Oil : 1 tbsp
    A pinch of turmeric powder
    Red Chilli Powder to taste
    Salt to taste

    Method :

    Blanch the chopped spinach in boiling water for a few minutes and drain the excess water. Grind the blanched spinach and chopped tomato to a puree and set aside. Heat oil in a wok and add the cumin seeds and let them splutter. Now add the ginger garlic paste and fry till the raw smell goes off. Add the chopped onions and fry till the onions are translucent.Then add the spinach puree, salt, turmeric powder, garam masala and red chilli powder and cook for 4 to 5 minutes. Add the boiled corn kernels and little water and cook for 8 to 10 minutes. Switch off the flame and serve hot with roti or paratha.

      Almost like palak panner...but instaed of paneer we are using corn...nice idea...dear...
