    Corn Sundal ~ Boiled and Seasoned Corn

    Ingredients :Sweet Corn : 1 cup
    Grated Fresh Coconut : 2 tbsp
    Dries Red Chillies : 2
    Green Chillies : 1 or 2
    Mustard Seeds : ½ tsp
    Cumin Seeds : ½ tsp
    Curry Leaves : 2 sprigs
    A pinch of hing
    Salt to taste
    Oil : 2 tsp

    Method :

    In a saucepan bring two cups of water to a boil. Add the corn to the boiling water. Cover the pan with a lid and let it cook completely. Once the corn is cooked, drain the excess water and set aside. Heat two teaspoons of oil in a pan. Add the mustard seeds and cumin seeds and let them sputter. Now add the finely chopped green chillies, red chillies, hing and curry leaves to it and fry for another few seconds. Add the boiled corn, salt and grated coconut and fry for a minute. Switch off the flame and serve with a cup of chai.

      Wow, what a great recipe to try out! Liked the addotion of coconut and curry leaves. Your home must be full of the delicate aroma when you were cooking this…I am coming for dinner!
