    Potato Kale Soup – A creamy, delicious, satisfying and nourishing soup made with potatoes, kale, simmered to perfection with milk, garlic, and butter.. A perfect soup for chilly days.

    What is potato kale soup?

    Potato kale soup is a type of creamy soup made with potatoes, kale, onion and garlic. It is a healthy and filling soup that is perfect for winters.

    It is one of the easy and comforting soups that can be made in no time with minimal ingredients.

    This can be stored in the refrigerator for up to 4-5 days.

    If you want to store the soup for a longer period of time, you can freeze it. However, I would recommend freezing it before blending to avoid changing the texture of the soup. It can be stored in the freezer up to 3 months.

    Thaw soup and blend it until nice and smooth.

    Serving suggestions:

    It can be served both as main course or a side.

    Serve it hot with a crusty bread or garlic bread. You can also top the soup with some croutons to add a crunch.

    Add a can of beans for a protein boost.

    Sprinkle some grated parmesan or any other cheese over the top for a different flavor.

    Step by step instructions:

    Melt 3 tablespoons of butter in a vessel.

    Add chopped garlic and saute them for a minute.

    Add chopped white onion and saute them for couple of minutes.

    Add cubed potatoes to the pot and mix everything.

    Sauté them for few minutes.

    Then add water or vegetable broth.

    Cover the pot with a lid let it cook until potatoes and onions are almost cooked.

    Reduce the flame to low and add milk.

    Add kale to the pot and give it a good stir.

    Season it with salt and pepper and mix.

    Let it simmer for 10 minutes or until potatoes and kale are soft and wilted.

    Transfer it to a blender and blend it until smooth and creamy.

    Serve hot!

    • 4.5-5 Cups Kale
