    Mango Lassi Chia Pudding – Creamy, delectable, and fusion breakfast dish that combines the aromatic flavors of Indian Mango Lassi with goodness of chia seeds. It can be served as a healthy breakfast, a snack, or even a dessert.

    What is mango lassi chia pudding?

    Mango Lassi is a classic and popular Indian beverage made with fresh sweet mangoes, yogurt and cardamom. It is usually served as a refreshing beverage or dessert.

    Mango lassi chia pudding is a delightful and innovative fusion recipe that brings together the flavors of Indian mango lassi and the texture of chia pudding.

    It is a no-cook kind of breakfast or snack recipe made with few ingredients. To get the pudding-like consistency, you will need to add chia seeds to the cardamom flavored yogurt and mango mixture and let it sit for 1-3 hours or overnight.

    Ingredients:

    Yogurt – Use fresh and plain yogurt. Swap it with plant-based yogurt if you are vegan. You could also use greek yogurt to make it creamier.

    Chia Seeds – Chia seeds will act as a thickening agent and they are full of protein and nutrients. You can also use white chia seeds.

    Sugar – I have used sugar in this recipe, but you could use any of your favorite sweeteners, such as maple syrup, date paste, honey or agave.

    Cardamom – Do not skip adding cardamom powder. It adds a wonderful and authentic lassi flavor.

    Turmeric – It gives a nice yellow color to the pudding. It is totally optional though.

    Nuts – You can top your chia pudding with any of your favorite nuts. You could also add some chopped fresh fruits on top for added taste and nutrition.

    Tips & Notes:

    Choose ripe and sweet mangoes for the best taste and flavor.

    Blend the mango and yogurt mixture well until it is nice and smooth. This will make the pudding creamy and silky.

    Swap yogurt with greek yogurt to make it creamier.

    You can also add a few strands of saffron to enhance the flavors.

    The quantity of sugar depends on the sweetness of the mango you are using. Add more or less.

    Storage suggestions:

    It should be stored in the refrigerator to keep it fresh.

    This will keep in the refrigerator for a couple of days. If you want to store it for longer, freeze it for up to 2 moths.

    Serving suggestions:

    It is best when you serve it cold as a breakfast, a snack, or even a dessert.

    You can also top it with your favorite toppings such as chocolate chips, coconut, nuts, fruits, or granola.

    Layer the chia pudding with some muesli or granola to make a parfait style breakfast.

    Step by step instructions:

    Combine yogurt, chopped mangoes, sugar, turmeric powder (if using) and cardamom powder in a blender jar.

    Blend everything until nice and smooth.

    Transfer the puree to a bowl and add chia seeds.

    Mix everything well and refrigerate it for 2-3 hours or overnight.

    Once it is set, give it a mix and transfer it to serving bowls.

    Top it with chopped nuts and fresh mango pieces.

    • 1 Heaping Cup Chopped Sweet Mango
    • ⅛ Teaspoon Turmeric Powder (optional)
    • 2 Tablespoons Sugar (or as needed)

      i am in a season where mangoes are unavailable, can i make it with store bought mango lassi? if yes is there any recommended thickening agent or chia will
      do the magic??

        Yes, you can make it with store-bought mango lassi. You can also use frozen mangoes or canned mango pulp if they are not in season. And you don’t need any thickening agent, chia seeds are just enough.
