    Orange Blueberry Muffins – Super simple and delightful muffins made with citrusy oranges and juicy blueberries, perfect for breakfast or as a snack.

    What are orange blueberry muffins?

    These are one of the simple and delicious muffins made with freshly squeezed orange juice, orange zest and blueberries. They are tender, moist, and full of flavor. They make a wonderful treat for breakfast or as a snack any time of the day.

    Ingredients:

    Flour – I have used all purpose or plain flour in this recipe. You can replace it with whole wheat flour but the texture of the cake will be different. I have yet to try with gluten-free flours.

    Orange Juice – You will need it for flavor and moisture. Use fresh or store-bought orange juice.

    Orange Zest – Do not skip orange zest. It adds a wonderful flavor to the muffins.

    Blueberries – Use fresh or frozen blueberries. No need to thaw them if you are using frozen berries.

    Yogurt – Swap it with plant-based yogurt if you are vegan.

    Melted Butter – You can substitute it with equal amount of coconut oil or any other vegetable oil.

    Sugar – I used caster sugar, you can use any kind of sugar.

    Vanilla – You could also replace it with almond extract.

    Baking Soda & Baking Powder – These are the leavening agents. Don’t skip these.

    Salt

    Variations:

    You can also drizzle a simple orange glaze over the cooled muffins for a variation.

    You could also use mixed berries instead of blueberries.

    Add some chopped nuts such as walnuts, almonds or pecans for a crunch.

    Can I use frozen blueberries?

    Absolutely! But, DO NOT thaw them. Use the frozen ones directly from the freezer. Simply toss the frozen berries in a bit of flour and fold them into the batter.

    Tips & Notes:

    Make sure you are using fresh and good quality ingredients for the best flavor and texture.

    Zest the oranges properly. You should use the outer colored part of the peel only. Do not use the white part.

    Do not overmix the batter. Gently fold in the blueberries to prevent them from bursting.

    Do not skip coating blueberries with a little of flour. This will prevent them from sinking to the bottom the muffins while baking.

    Can we double this recipe?

    Yes! you can! No changes needed.

    Storage suggestions:

    They can be stored at room temperature for up to 3 days. If you want to store them for longer period of time, refrigerate them for up to 5 days. Make sure you store them in an airtight container or wrap them tightly in plastic wrap to prevent them from drying out.

    You can also freeze them for up to 2-3 months.

    Serving suggestions:

    Orange blueberry muffins are great for breakfast, brunch, or as a snack. These are best when served with a cup of coffee, tea, or hot chocolate.

    Step by step instructions:

    Preheat the over to 190 degrees C.

    Combine flour, salt, baking powder and baking soda in a mixing bowl and keep it aside until use.

    Coat blueberries with a little bit of flour to prevent them from sinking to the bottom while baking. Keep them aside.

    Combine orange zest and sugar in a mixing bowl. Rub the mixture together with your fingers until it is well combined.

    Add orange juice, melted butter, and vanilla extract to the sugar mixture and mix until well combined.

    Add the flour mixture and gently mix everything together.

    Add the flour coated blueberries and gently fold. Do not over mix the batter.

    Line a muffin tray with muffin liners. Fill each muffin cup ¾ full with the prepared batter.

    Bake in the preheated oven at 190 degrees C for about 30-35 minutes or until a toothpick inserted comes out clean.

    Let them cool and serve!
