    Eggless Banana Cake Recipe – Vegan Banana Cake Recipe – Step by Step Pictures

    Eggless Banana Cake Recipe

    Prep Time: 15 mins    |  Cook time: 35 mins    |  Serves: 4-5
    Recipe adapted from Martha Stewart 

    Ingredients:

    • ¾ cup All purpose flour / Maida
    • ¾ cup Mashed Banana (about 2 ripe bananas)
    • 6 tbsp Sugar
    • ½ tsp Baking Powder
    • ¼ tsp Baking Soda
    • ⅛ tsp Salt
    • ¼ cup Oil
    • ½ tsp Vanilla Essence

    Method:

    • Mix the flour, salt, baking powder and baking soda and sieve this together to ensure even mixing. Keep this aside.
    • Preheat the oven to 180 degree C.
    • Grease an 7″ round cake pan with oil and set aside.
    • In a mixing bowl, whisk the mashed banana, sugar, oil and vanilla essence until combined.
    • Slowly add the sifted flour to the banana mixture and gently fold the mixture until the batter shows no trace of flour. Don’t overmix or overbeat.
    • Pour this batter into the prepared cake tin.
    • Bake in preheated oven at 180 degree C for 35 minutes or till a toothpick inserted into the middle of the cake comes out clean.
    • Allow the cake to cool down for 15 minutes and then invert.
    • Let it cool completely and cut into pieces.
    • Serve & enjoy!

      Lovely recipe and not too much sugar but still very sweet. I added a little cinnamon and nutmeg to the dry mix and it is great. The cake is already half eaten by my husband and I still have more very ripe bananas so I think I may make this again!

        You can replace 2-3 tbsp of flour with the same amount of cocoa powder.

      I usually bring something to my mom when I go to visit her but discovered I was out of eggs. Since I had a few dead ripe bananas that were at the use or freeze stage I looked for an egg free banana recipe and found this. Since I had 3 bananas I made 1 1/2 times the recipe, added some cinnamon and raisins and baked it in a 7 x 10 pan. It came out beautifully and made the house smell amazing! lol. By the way, thank you for doing this in imperial measurements – if I come across a recipe that’s in metric I usually pass it by. I don’t have time to waste on measuring and weighing every single ingredient, it’s a pain in the butt for me lol. I will make this again!
