    Raw Banana Fry with Dried Mango Powder

    Aratikaya Vepudu / Raw Plantain Fry with Amchoor Recipe:

    Preparation & Cooking Time : 20 mins

    Serves: 4 persons

    Ingredients :Chopped Plantain / Raw Banana : 2 cups
    Amchoor / Dried Mango Powder : 1 teaspoon (You can also make amchur at home )
    Red Chilli Powder : ½ to 1 tsp
    Turmeric Powder : ¼ tsp
    Sugar : ¼ tsp
    Mustard Seeds : ½ tsp
    Cumin Seeds : ½ tsp
    Hing: ⅛ tsp
    Salt to taste
    Oil : 2 tbsp

    Method:

    1. Wash, peel and chop the plantain into pieces. Add them to a bowl of water to prevent discoloration.

    2. Heat oil in a skillet. Add the mustard seeds and cumin seeds and let them splutter. Then add the hing and stir fry for a few seconds.

    3. Remove the plantain pieces from water and
    them to the skillet.

    4. Add salt and turmeric powder and stir fry for a
    minute. Cover it with a lid and let it cook on a low flame.

    5. When they
    are turning to soft, remove the lid and continue to stir frying until
    soft and little crisp. Stir in between to avoid burning.

    6. When it's done,
    add the red chilli powder, dried mango powder and sugar.

    7. Sprinkle very
    little water and combine well. Cover and cook for a minute and switch
    off the flame.

    8.Serve hot with rice.
