    Dosakaya Mukkala Pulusu ~ Lemon Cucumber Stew

    Ingredients :Lemon Cucumber : 1 cup (Peeled, seeded and cubed)
    Onion : 1
    Tomato : 1
    Tamarind : Gooseberry sized ball
    Powdered Jaggery : 2 tsp
    Rice Flour : 2 tsp
    Mustard Seeds : ½ tsp
    Cumin Seeds : ¼ tsp
    Fenugreek Seeds : ¼ tsp
    A big pinch of turmeric powder
    Curry Leaves : 1 sprig
    Fresh Coriander Leaves : 1 or 2 sprigs
    Red Chilli Powder : ½ tsp
    A pinch of hing
    Salt to taste
    Oil : 1 tsp

    Method :

    Wash and cut the tomato into medium size pieces and set aside. Peel and chop the onion into lengthwise and set aside. Soak the tamarind in water and extract the juice and keep it aside. In a cooking vessel, add the cucumber cubes, chopped onion, chopped tomato and enough water and cook for 5 minutes. Now add the tamarind extract, salt, red chilli powder, rice flour, turmeric powder, powdered jaggery and two cups of water to it and let it cook for 10 minutes. When it's done, switch off the heat and set aside. Heat a teaspoon of oil in a pan for seasoning. Add the mustard seeds, cumin seeds and fenugreek seeds and let them splutter. When the seeds stop tossing, add the curry leaves and hing and fry for a few seconds. Turn off the heat and add it to the cucumber stew and mix well. Serve with warm steamed rice with a dollop of ghee.

    Ragi Flour and Dry Coconut Ladoo

    Ingredients :Ragi Flour / Finger Millet Flour : 2 cups
    Dry Coconut Powder : 1 cup
    Sugar : 1.5 cups
    One cup of melted ghee or 4 tablespoon of warm milk

    Method :Dry roast the ragi flour until it changes color and allow it to cool. Grind the sugar into a fine powder and set aside. In a mixing bowl, combine the roasted ragi flour, powdered sugar and dry coconut powder and mix until well combined. Add warm milk or warm melted ghee to the ragi flour mixture and mix well. Shape the mixture into balls / laddus and serve.

    Mamidi Pandu Mukkala Pulusu ~ Andhra Ripe Mango Stew

    Ingredients :Ripe Mango Pieces : 1 cup
    Tamarind : gooseberry sized ball
    Powdered Jaggery : 1 tbsp
    Rice Flour : 2 tsp
    Mustard Seeds : ½ tsp
    Cumin Seeds : ¼ tsp
    Fenugreek Seeds : ¼ tsp
    A big pinch of turmeric powder
    Dried Red Chillies : 1
    Curry Leaves : 1 sprig
    Red Chilli Powder : ½ tsp
    A pinch of hing
    Salt to taste
    Oil : 1 tsp

    Method :

    Wash and cut the mango into medium size pieces and set aside. Don't peel the mango skin for this pulusu recipe. Soak the tamarind in water and extract the juice and keep it aside. In a cooking vessel, add the mango cubes and enough water and cook for 5 minutes. Now add the tamarind extract, salt, red chilli powder, rice flour, powdered jaggery and two cups of water to it and let it cook for 10 minutes. When it's done, switch off the heat and set aside. Heat a teaspoon of oil in a pan for seasoning. Add the mustard seeds, cumin seeds and fenugreek seeds and let them splutter. When the seeds stop tossing, add the curry leaves, hing and red chilli and fry for a few seconds. Turn off the heat and add it to the mango stew and mix well.

    Palakoora Mamidikaya Pappu ~ Spinach and Mango Dal

    Ingredients :Spinach : 3 bunches
    Raw Mango : 1 small sized
    Toor Dal : ½ cup
    Green Chillies : 3 or 4
    Dried Red Chillies : 2
    Turmeric Powder : ¼ tsp
    Mustard Seeds : 1tsp
    Urad dal : 1tsp
    Chana dal : 1tsp
    Salt to Taste
    Oil : 2 or 3 tsp
    A Pinch of Hing

    Method :

    Remove the stems from spinach leaves. Wash and chop the spinach leaves and keep aside. Wash, peel and chop the mango into medium size pieces. Wash the toor dal properly with plenty of water. Put the toor dal, mango pieces, chopped spinach, chopped green chillies and one cup of water in a pressure cooker. Cook till 3 or 4 whistles. Turn off the flame and wait unill the pressure go off. Remove the dal mixture from cooker and keep aside. Heat oil in a vessel add mustard seeds, urad dal, chana dal and a pinch of hing. When the seeds stop popping add cooked dal mixture, turmeric powder and salt. Mix well and cook about 5 minutes. Take it out and serve with roti or hot steamed rice and a dollop of ghee.

    Kelyache Shikran ~ A Maharashtrian Dessert

    Ingredients :One cup of chopped banana
    Half cup of boiled and cooled milk
    Sugar to taste
    A big pinch of cardamom powder
    Chopped Almonds

    Method :

    Peel and cut the banana into small pieces. In a wide bowl, combine the chopped banana, milk, sugar and cardamom powder and mix very well. Garnish with chopped almonds. Refrigerate for 30 minutes and serve it chilled. Serve as a dessert or with poori, roti and dosa.

    Aratikaya Koora ~ Simple Plantain Curry

    Ingredients :Chopped Plantain / Raw Banana : 1 cup
    Onion : 1
    Green Chillies : 2 to 4
    Mustard Seeds : ½ tsp
    Chana Dal : ½ tsp
    Urad Dal : ½ tsp
    Curry Leaves : 1 sprig
    Dried red chillies : 1
    A big pinch of turmeric powder
    Salt to taste
    Oil : 2 tsp

    Method :Wash, peel and chop the plantain into pieces and set aside. Heat oil in a vessel. Add the mustard seeds,chana dal and urad dal and let them splutter. When the seeds stop popping, add the curry leaves, chopped green chillies, red chillies and chopped onion and fry for 2 minutes. now add the chopped plantain, salt, turmeric powder and little water. Mix very well and cover with a lid. Let it cook completely. When it's done, switch off the heat and serve with hot steamed rice with dollop of ghee.

    Raisins and Roasted Gram Laddu

    Ingredients :Raisins : 1 cup
    Roasted Bengal Gram / Dalia : 1 cup
    Dry Coconut Pieces : ½ cup
    Cashews : ¼ cup
    Melted Ghee : 2 tbsp
    Cardamom Pods : 2 (Optional )

    Method :

    Grind the raisins and set aside. Grind the roasted gram, cardamom seeds, coconut pieces and cashews into a powder. Combine the roasted gram mixture, ghee and raisins pulp in a wide bowl and mix the mixture thoroughly. Shape the mixture into small round balls. Serve and enjoy !!

    Chukkakoora Pulusu Kura ~ Sorrel Spinach Stew

    Ingredients :Sorrel Spinach Leaves : 4 small bunches
    Bengal Gram/ Chana Dal : ¼ cup
    Onion : 1 big sized
    Tomato : 1 small sized (Optional)
    Green Chillies : 3 or 4
    Red Chilli Powder : ¼ to ½ tsp
    Turmeric Powder : ¼ tsp
    Mustard Seeds : ½ tsp
    Cumin Seeds : ½ tsp
    Urad Dal : ½ tsp
    Salt to taste
    A pinch of hing
    Oil : 2 tsp

    Method :

    Wash the chana dal properly with plenty of water. Put the washed lentil and ½ cup of water in pressure cooker and cook till 3 whistles. Remove the stems from the sorrel spinach leaves. Wash and chop the leaves and set aside. Peel and chop the onion into large pieces and keep aside. Put the chopped onion, chopped tomato, chopped leaves, chopped green chillies, turmeric and water in a vessel and let it cook completely. Now add the salt, red chilli powder and little water to it and cook for 8 to 10 minutes. Add the chana dal and cook for another two minutes and switch off the flame. Heat two teaspoons of oil for seasoning. Add the mustard seeds, urad dal and cumin seeds and let them splutter. When they start to splutter add the hing and stir for few seconds. Remove from the heat and pour over the stew. Mix well and serve with hot steamed rice.

    Ingredients:

    • 1.5 teaspoon Green Tea Powder
    • 1 cup Water
    • Sugar or Honey to taste


    Instructions:

    1. Boil a cup of water in a vessel.
    2. Once the water starts boiling, turn off the flame and add the green tea powder.
    3. Let it sit for 3 - 5 minutes.
    4. Now strain the tea into a cup and add the sugar / honey.
    5. Enjoy your healthy green tea.

    Bendakaya Ulli Kaaram ~ Okra with Spiced Onion

    Ingredients :Chopped Okra : 1 cup
    Chopped Onion : ¾ cup
    Dried Red Chillies :4 or 5
    Mustard Seeds : ½ tsp
    Chana Dal : ½ tsp
    Urad Dal : ½ tsp
    Curry Leaves : 1 sprig
    A big pinch of turmeric powder
    Salt to taste
    Oil : 1 tbsp

    Method :Wash and dry the okra, chop them into pieces and set aside. Peel and chop the onions into small pieces. Heat a teaspoon of oil in a pan. Add and fry the chopped onions till they get golden color. Now add the red chillies and fry for a few seconds. Turn off the heat and allow it to cool. Grind the fried onions and red chillies into a paste and set aside. Heat two teaspoons of oil in a pan and add the mustard seeds, urad dal and chana dal and let them splutter. When the seeds stop popping, add the curry leaves, chopped okra and turmeric powder and mix well. Fry for a few minutes and cover with a lid. Let them cook on a low flame, stirring occasionally. When it's done, add the onion mixture and salt and fry for a few minutes. Switch off the flame and serve with hot steamed rice and dollop of ghee.

    Bendakaya Pappula Vepudu ~ Okra Fry with Spicy Dalia Powder

    Ingredients :Chopped Okra : 1 cup
    Spicy Dalia Powder : 1 to 2 tbsp
    Mustard Seeds : ½ tsp
    Chana Dal : ½ tsp
    Urad Dal : ½ tsp
    Curry Leaves : 2 sprigs
    Dried Red Chillies : 2
    A big pinch of turmeric powder
    Salt to taste
    Oil : 1 tbsp

    Method :

    Wash and dry the okra, chop them into small pieces. Heat a tablespoon of oil in a pan. Add the mustard seeds, chana dal and urad dal and let them splutter. When the seeds stop tossing, add the curry leaves and red chillies and fry for a few seconds. Now add the chopped okra and turmeric powder and mix well. Fry for a few minutes and cover with a lid. Let them cook on a low flame, stirring occasionally. When it's done, add the spicy dalia powder and salt and fry for another 2 minutes. Switch off the flame and serve with hot steamed rice and dollop of ghee.

    Batata Poha ~ Aloo Poha

    Ingredients :Thick Poha / Thick Beaten Rice : 2 cups
    Potatoes : 2 small sized
    Onion : 2 small sized
    Finely Chopped Green Chillies : 3 or 4
    Peanuts : 1 tbsp
    Mustard Seeds : ½ tsp
    Urad Dal : ½ tsp
    Chana Dal : ½ tsp
    Turmeric Powder : ¼ tsp
    Red Chilli Powder : ½ teaspoon (Optional)
    Garam Masala Powder : 1 teaspoon (Optional)
    Curry Leaves : 1 sprig
    Fresh Coriander Leaves : 2 sprigs
    Lemon Juice : 1 to 2 tbsp
    A big pinch of hing
    Salt to taste
    Oil : 1 tbsp

    Method :

    Wash and soak the thick poha in water for a minute and strain it to remove all excess water and keep them aside. Wash, peel and cut the potatoes into small pieces and set aside. Heat a tablespoon of oil in a pan. Add and fry the mustard seeds, chana dal, urad dal and peanuts. Fry till chana dal changes color, add the chopped green chillies, curry leaves and hing and fry for a few seconds. Now add the chopped onions and fry till light golden color. Then add the turmeric powder, a pinch of salt, chopped potatoes and little water to it and mix well. Cover with a lid and let them cook till potatoes are soft. When it's done, add the soaked poha, salt, garam masala, red chilli powder and mix well. Switch off the flame and add the lemon juice to it. Mix well and serve.
