    Mango Lapsi ~ Mango and Broken Wheat Halwa

    Ingredients :Cracked Wheat / Wheat Rava : 1 cup
    Mango Puree : 1 cup
    Water : 2.5 cups
    Sugar : ½ cup
    Cardamom Powder : ½ tsp
    Ghee : 2 tbsp
    Cashews and Raisins

    Method :

    Heat a tablespoon of ghee in a pan and fry the cashews and raisins and keep them aside. In the same pan, add and fry the broken wheat until light golden color. Now add the boiling water and mix well. Close with a lid, let it cook completely on a medium flame. When it's done, add the cardamom powder, sugar, mango puree and remaining ghee and cook for another 5 minutes. Switch off the flame and garnish with fried nuts. Serve and enjoy !!

    Aratikaya Podi ~ Spicy Plantain Powder

    Ingredients :Raw Plantain : 2 small sized
    Coriander Seeds : 1 tbsp
    Chana Dal : 1 tbsp
    Urad Dal : 2 tsp
    Dried Red Chillies : 8
    Tamarind : small piece
    Garlic : 2 to 4 cloves
    Salt to taste
    Oil : 1tbsp

    Method :

    Wash, peel and chop the plantains into thin slices. Heat a teaspoon oil in a heavy bottomed pan. Add and fry the plantain slices till they become crisp and light golden color. Turn off the flame and allow it to cool. Heat two teaspoons of oil in a pan and add the coriander seeds, chana dal and urad dal and fry until golden brown color. Finally add the red chillies and fry for another few seconds. Switch off the heat and let it cool completely. Grind the roasted spices, roasted plantain chips, salt, tamarind and garlic into a powder. Serve with hot steamed rice and dollop of ghee.

    Crunchy Mango Diamond Cuts

    ~ Mamidi Pandu Limkilu ~Ingredients :Maida : 1 ¼ cups
    Mango Pulp : ½ cup
    Sugar : 3 to 4 tbsp
    Poppy Seeds : 1 tsp
    Ghee : 1 tbsp
    Oil for deep frying

    Method :Grind the sugar into a fine powder and set aside. Combine the mango puree, powdered sugar, poppy seeds, maida flour and a table spoon of melted ghee and make a soft dough. Divide the dough into small balls and roll the dough ball into a little thick round disc. Cut them into small pieces and deep fry them in hot oil on a low flame till golden brown color. Remove from the oil and store in a airtight jar.

    Amrakhand ~ Mango Shrikhand

    Ingredients :Thick Curd : 1 cup
    Mango Pulp : ¾ to 1 cup
    sugar to taste
    A pinch of cardamom powder

    Method :

    Wash, peel and chop the mangoes. Blend the mango pieces into a smooth puree and set aside. In a wide bowl, combine the thick yogurt, sugar, mango pulp and cardamom powder. Beat well till the sugar dissolves. Refrigerate for 30 minutes and serve chilled.

    Homemade Mango Jam

    Ingredients :

    Mango Puree : 4 cups
    Sugar : 1 to 2 cups

    Method :

    Wash, peel and chop the mangoes into cubes. Blend the mango pieces into a smooth puree. In a heavy bottomed pan, combine the mango puree and sugar and cook until a thick consistency. The jam should be thick and easily spreadable. Switch off the flame and let it cool completely. Pour the jam into a airtight jar and store in the refrigerator.

    Mix the hot cooked rice with fresh yogurt and a pinch of salt. Add the mango cubes to it and enjoy the sweet mango with curd rice.

    Mango Milkshake Recipe:

     

    Preparation & Cooking Time : 5 mins

    Serves: 3 persons

    Ingredients :

    Chopped Mango : 1 cup
    Chilled Milk : 2 cups
    Sugar : 2 tbsp
    Cardamom Powder : ½ tsp
    Ice Cubes

    Method :

    1. Wash, peel and chop the mango into cubes.

    2. In a blender, combine the chopped mango, sugar, milk and cardamom powder and blend until smooth.

     

    3. Add more milk if you want a thinner consistency.

    4. Pour the milkshake into glasses. Add the ice cubes and serve chilled.

    Mango Rabri / Rabdi

    Ingredients :Milk : 2 cups
    Mashed Mango Pulp : 1 cup
    Sugar : 2 tbsp
    Cardamom Powder : ¼ tsp

    Method :

    Heat the milk in a heavy bottomed pan and boil on a low flame until it reduces to half quantity. When the milk is reduced to half, add the sugar and cardamom powder and cook for few minutes. Switch off the flame and let it cool completely. Then add the mashed mango pulp and mix very well. Garnish with mango pulp and chopped almonds. Serve immediately or refrigerate for few hours and serve it chilled.

    Mango Lassi ~ Mango Flavored Yogurt Drink

    Ingredients :Chopped Mango: : ½ to 1 cup
    Yogurt : ½ cup
    Water : 1 cup ( add more water if you need thinner consistency)
    Sugar :1 to 2 tbsp
    Cardamom Powder : ¼ teaspoon ( Optional )
    Ice Cubes

    Method :

    Wash, peel and chop the mango into cubes. In a blender, combine the chopped mango, sugar, curd, water and cardamom and blend until smooth. Then add the crushed ice cubes and blend it again for few seconds. Pour the lassi into glasses, garnish with finely chopped mango and serve.

    Ingredients :Chopped Mango : ¾ cup to 1 cup
    Coconut Milk : ½ cup
    Powdered Jaggery : 2 tbsp
    Cardamom Powder : ¼ tsp
    Chopped Almonds for garnishing

    Method :

    Wash, peel and chop the ripe mango into small cubes. In a bowl, combine the mango cubes, coconut milk, powdered jaggery and cardamom powder. Mix well and garnish with chopped almonds. Serve immediately or refrigerate and serve it chilled.

    Ingredients

    • 2 cups Chopped Mango
    • 1 cup Milk
    • 2 teaspoon Sugar

    • Bring milk to a boil and let it cool completely. 
    • Wash, peel and chop the ripe mango into small cubes. 
    • In a bowl, combine the mango pieces, milk, sugar and cardamom powder.

    Notes

    You can also mash some mango pieces and add it to the shikran to make creamy.
