    December 19, 2024

Christmas Popcorn - Easy, delicious and addictive festive treat made with popcorn, white chocolate, pretzels, m&ms and sprinkles. Perfect for the holiday season, it's great for gifting, parties, or Christmas movie nights!

    What is Christmas popcorn?

Christmas Popcorn, also known as Santa Munch or Christmas Crunch Snack mix is a delicious, addictive and easy festive holiday treat that is perfect for the Christmas season. It is nothing but plain or salty popcorn coated with white chocolate. It's a great combination of chocolate coated sweet popcorn and fun add-ins like holiday M&M candies, Christmas sprinkles and mini pretzels. It is one of the easy treat recipes that can be made in under a half hour.

    Ingredients & Substitutions:

Popcorn - You can use homemade popcorn, microwave popcorn or kettle popcorn. I have used lightly salted popcorn, you can also use the plain one.

White Chocolate - Use a good quality white chocolate or white candy melts to coat the popped corn. It can be replaced with green candy melts or red candy melts for a more festive look.

Mini Pretzels - Adds crunch and salty balance to the sweetness. If you want to use pretzel sticks, break them into small pieces.

M&Ms - Red and green m&m candies will add sweetness, crunch and festive touch. You can replace them with any similar chocolate candies.

Sprinkles - Use red and green holiday sprinkles to add texture and a festive vibe.

    Serving suggestions:

This simple popcorn candy mix is ideal for holiday parties or a cozy Christmas movie night. It can be added to the Christmas tin along with other goodies. Pack it in cellophane bags or festive tin for a great gift or party favors. This sweet treat is perfect for any occasion.

    Storage suggestions:

It tastes the best the day you make it. However, It can be stored in a tightly sealed airtight container for few days. If you want to store it for longer period of time, place them in a freezer safe zip lock bag and seal properly. It can be stored in the freezer for a month or two.

    Tips & Notes:

Use fresh and good quality popped corn for the best taste and texture. Use either plain or salted one.

Melt the chocolate carefully to avoid burning it. Stir the chocolate frequently until it is smooth. Use a double boiler or microwave in short intervals to melt chocolate or candy melts.

Once the chocolate is melted, pour it over the popped corn immediately and mix quicky to coat before it sets. Add your favorite sprinkles while the chocolate is still wet so that they stick.

Do no forget to use a parchment paper or a silicone mat for easy cleanup to prevent sticking.

    Variations:

Use dairy-free chocolate and vegan toppings for vegan variation of holiday popcorn.

Use red candy melts for half the corn and green for the other half to make them more festive.

To make nutty Christmas crunch, add some chopped toasted nuts like almonds, pecans or walnuts.

Feel free to experiment with different toppings like crushed peppermint candy canes, mini marshmallows, dried cranberries or candied cherries.

    Step by step instructions:

Line a baking sheet with parchment paper and keep it aside until use. Combine 5 cups of popcorn, pretzels and m&ms in a very large bowl.

Give them a mix and set aside.

Add chopped white chocolate or candy melts in microwave safe bowl and melt in microwave until smooth.

If you don't have a microwave, melt chocolate in a heatproof bowl over a pot of simmering water (double boiler method).

Pour melted white chocolate over the popcorn mix.

    Mix everything until evenly coated.

Spread the chocolate coated popcorn on a lined baking sheet in a single layer. Sprinkle your favorite festive sprinkles top of the popcorn. Let it set at room temperature in the in the fridge for few minutes or until the chocolate hardens fully.

    Molasses Crinkle Cookies

    December 18, 2024

Molasses Crinkle Cookies - Classic, rich, soft, chewy and delicious Christmas cookies with the warm flavors of molasses and spices. They're an irresistible addition to any holiday cookie tray.

    What are molasses crinkle cookies?

Molasses crinkles are rich, cozy and delicious old-fashioned holiday cookies with a soft center and crispy powdered sugar outer layer. These delicious holiday treats are super easy and fun to make and are a great addition to your cookie tray. The molasses gives the cookies a deep, smoky caramel flavor, while cinnamon, ginger and cloves add warmth. Unless the snowball cookies, these old fashioned molasses crinkle cookies need to be rolled in the powdered sugar before baking to get the beautiful crackly tops.

    Ingredients & Substitutions:

Flour - I have used all purpose flour or plain flour in this recipe. I haven't tried it with any other flour yet.

    Unsalted Butter -

Molasses - Make sure you're using dark molasses or robust molasses for the best flavor. Avoid blackstrap molasses. I have used grandma's brand molasses.

Brown Sugar - Use dark brown sugar for the best flavor and chewy texture. It complements the molasses flavor well. It can be replaced with regular sugar but the texture and taste of the cookies will be different.

Milk - The original recipe calls for eggs. I have replaced it with milk.

Spices - I used cinnamon, ginger and cloves. Feel free to experiment.

Caster Sugar - Also known as fine granulated sugar, you will need this to roll the dough balls to create a crust around the cookies.

Powdered Sugar - Use a generous amount of icing sugar or powdered sugar to get a beautiful look.

Baking Soda - Do not skip adding baking soda and make sure it is fresh. It is a rising agent and helps to get the crinkles while baking.

    Serving suggestions:

Arrange them on a platter along with other holiday treats for holiday gatherings. They can also be served with a cup of coffee or tea as a snack.

    Storage suggestions:

Store them in an airtight container at room temperature for up to a week. The baked cookies can also be stored in the freezer for 3 months.

    Tips & Notes:

The dough needs to be chilled for at least an hour. If you are not able to roll the dough, refrigerate it for some more time.

Make sure you roll the dough balls in the powdered sugar really well. They need to be well coated to get a snowy white top.

Do not overbake the cookies, remove them from the oven once the cracks are developed and edges are set. They will come out soft but will harden as they cool.

Adjust the spices as per your taste preference.

    Step by step instructions:

In a medium bowl, combine flour, spices, salt and baking soda. Mix everything until combined using a spoon and keep it aside until use.

Add softened butter and packed dark brown sugar to a mixing bowl or bowl of a stand mixer.

Mix until fluffy and light. Add molasses and milk to the wet ingredients.

    Mix everything until well combined.

Add the prepared flour-spice mixture to the butter mixture and gently mix until dough forms.

Cover the dough and let it chill in the refrigerator for 1-2 hours or until it is firm.

Preheat the oven to 190 degrees C. Line a baking sheet with parchment paper and keep it aside.

Divide the chilled cookie dough into 12 cookie balls using a tablespoon or cookie scoop. Roll cookie dough into round balls.

Roll dough balls in granulated sugar until well coated.

Roll the sugar coated dough balls in powdered sugar. Arrange the cookie dough balls on the prepared baking sheet and bake them in the preheated oven at 190 C for 11-12 minutes.

Cool them on a cooling rack and store in an airtight container.

    Sugar Plums

    December 14, 2024

Traditional Sugar Plums - An easy, delicious, warm, and flavorful old-fashioned Christmas treat made with dried fruits, nuts and spices. These bite-sized confections are perfect for holiday gatherings!

    What are sugar plums?

Sugar plums are one of the classic holiday treats made with dried fruits like prunes (or dried plums), dates and cranberries. Despite the name, they aren't actually plums. Instead, they are small, sweet confections typically made by blending the dried fruits with nuts, orange zest, fruit jam and spices into a coarse mixture, which is then rolled into small balls.

These traditional sugar plums have a rich history and were often enjoyed as a sweet snack, a treat for children, or even given as gifts during the holiday season. They are rolled in sparkling or decorative sugar to give them a festive appearance.

    Ingredients & Substitutions:

Walnuts - Walnuts can be substituted with almonds, pecans, hazelnuts, or pistachios for a different flavor.

Prunes - Prunes are dried plums. The traditional recipe calls for prunes. However, you can replace them with dried figs.

Cranberries & Dates - I used half a cup of each dried cranberries and dates in this recipe. They can also be replaced with raisins, apricots, dried cherries, or currants.

Spices - I used cinnamon, ginger, cloves, allspice, and anise for a warm and festive touch. Adjust the quantity of spices according to your preference.

Orange Zest - I highly recommend using orange zest. You can swap it with lemon zest for a different flavor. Skip if you don't want it.

Apricot Jam - It will add sweetness and moisture. It can be replaced with any of your favorite fruit preserve, honey, or maple syrup.

Sparkling Sugar - You will need this to roll the sugar plums. You can also use granulated sugar, coarse sugar, powdered sugar, cinnamon sugar or desiccated coconut.

    Serving suggestions:

Serve sugar plums with a cup of coffee or tea as a cozy evening snack. Include them as part of a dessert platter or cookie platter during the holiday season. These can make a great edible gift.

    Storage suggestions:

Store them in an airtight container at room temperature for up to a week. If you want to store them for longer period of time, store them in the refrigerator for up to a month. You can also freeze them for 2-3 months. You may need to roll them in them again in sugar before serving.

    Tips & Notes:

You can use any of your favorite nuts instead of walnut. Lightly toast them before grinding to enhance the flavor.

Adjust the spices according to your taste preference.

Make sure the dried fruits you are using are fresh and soft for the best flavor and texture.

If the mixture is too sticky, chill it in the refrigerator for sometime before rolling. If the mixture feels too dry, add little more jam or honey to get the right consistency.

Do not blend the fruit mixture into a paste, it should have some coarse texture.

    Step by step instructions:

Preheat the oven to 180C (350F). Spread a cup of walnuts on a lined baking sheet in a single layer. Toast them in the preheated oven at 180C for about 8-10 minutes or until they are fragrant.

Add the toasted walnuts to a food processor along with prunes, walnuts, cranberries and orange zest.

Pulse it until the dry fruits are chopped.

Give it a mix using a spatula and add all the aromatic spices and apricot jam to the mixture.

Pulse it again until just combined and comes together. You should be able to roll the mixture but do not over-process it. It should have some texture.

Roll the mixture into small round balls.

Roll the shaped plums in granulated or decorative sugar until well coated. Repeat the process with the remaining mixture.

Chocolate - Use a good quality chocolate bar for the best results. It can also be substituted with chocolate chips, milk chocolate, white chocolate, or nutella.

Salt - A pinch of salt is enough. It balances the sweetness and enhances the flavors.

Add a pinch of cinnamon, cardamom, or nutmeg to the dough for a warm, spiced variation.

Substitute dark chocolate with milk chocolate or white chocolate for a sweeter filling.

Roll the dough into evenly sized small balls for even sized sandwiched cookies. Use a cookie scoop, teaspoon or weigh the dough for even baking and a polished look.

    Step by step instructions:

Grind toasted hazelnuts to a powder using a blender or food processor.

Stop grinding before it becomes a paste. Keep it aside.

In a mixing bowl, cream together the softened unsalted butter and sugar until light and fluffy.

Add the ground hazelnuts and flour to the butter mixture.

Mix gently until a soft dough forms.

Wrap the dough in a plastic wrap and chill it in the refrigerator until firm.

Take about 2 teaspoons of chilled dough (8grams) and shape into a small round ball. You will get 48-50 balls.

    Castagnelle (Italian Crunchy Almond Cookies)

    December 5, 2024

Castagnelle Cookies - Traditional Italian Christmas cookies made with almonds, cocoa, orange zest, coffee, and warm spices. These simple yet delicious cookies are nutty, crunchy, and perfect for the holiday season!

If you love classic holiday recipes, you might also enjoy my Pecan Snowballs, Baci di Dama, and Santa's Whiskers.

    What are castagnelle?

Castagnelle are traditional Italian Christmas cookies that originated from Pugila (or Apulia), particularly the Bari region. These crunchy almond cookies are a classic Christmas staple, with every household having its own variation of the recipe. They are typically made with a spiced dough flavored with cocoa powder, orange zest, cinnamon, and cloves and loaded with toasted almonds. The dough can be made with either coffee or water, I chose to use coffee for a rich, coffee flavor which compliments the spices so well. Once baked, Castagnelle cookies become crunchy, aromatic, with a light texture. They have crunchy exterior and soft interior. They are usually dusted with powdered sugar after baking, which adds a touch of sweetness and makes them festive.

Castagnelle cookies are naturally butter-free and egg-free, and are perfect for those who are looking for vegan holiday cookie recipes. These cookies are one of the easy and delicious Christmas cookie recipes made with simple yet flavorful ingredients. It's a perfect holiday cookie to enjoy with a cup of coffee or tea!

    Ingredients & Substitutions:

Almonds - Almonds are traditionally used for their nutty and crunchy texture. You could also replace them with hazelnuts or walnuts.

Flour - I have used plain flour or all purpose flour in this recipe. It can be replaced with whole wheat flour for a healthier variation.

Sugar - Granulated sugar or caster sugar will give you the best results.

Cocoa Powder - Adds a touch of chocolate flavor to the cookies. Use a good quality unsweetened cocoa powder for the best results.

Coffee - Hot brewed coffee is used to bring the dough together and add a subtle coffee flavor. You can substitute it with hot water if you don't want a coffee flavor.

Orange Zest - Adds a bright, citrusy aroma to the cookies. Do not skip adding it. You can also use lemon zest.

Spices - I have used cinnamon and cloves in this recipe. They give cookies their signature warmth and festive touch. You can omit cloves but I recommend adding cinnamon.

Baking Powder - For a slight lift in the cookies. You can skip it if you want to make denser cookies.

    Serving suggestions:

Serve these crunchy cookies with a cup of espresso, cappuccino, spiced chai or tea for a cozy afternoon snack.

Add them to your holiday cookie tray along with other Italian treats.

    Storage suggestions:

Store the cookies in an airtight container at room temperature for up to 2-3 weeks. If you are making them for Christmas and want to store them for longer period of time, freeze them for 2-3 months.

If you want to store the unbaked dough, wrap it tightly in plastic wrap and store it in the freezer for up to 3 months. Thaw in the refrigerator or on the counter top before shaping and baking.

    Variations:

Replace almonds with any of your favorite nuts like hazelnuts or walnuts for a different nutty flavor.

Add some mini chocolate chips to the dough to give a chocolatey twist to the classic cookies.

Swap orange zest with lemon zest or lime zest for a brighter flavor.

Feel free to experiment with different different spices.

You can also drizzle melted chocolate over the cookies instead of dusting with powdered sugar.

    Tips & Notes:

Do not skip toasting the almonds. It will enhance their flavor. Chop the roasted almonds using a sharp knife or food processer. Do not powder them entirely.

Add coffee or water little by little to the flour while making the dough. The dough should be stiff and non-sticky. If you feel it is sticky, add little more flour and knead it again.

Evenly cut the cookie dough to ensure even baking.

Cookies should be still soft when baked, they will become crunchy once cooled.

    Step by step instructions:

Preheat the oven to 180 degrees C (350F). Line a baking tray with a parchment paper. Spread almonds in a single layer and bake for 15 minutes or until they golden brown.

Allow them to cool, then chop finely using a sharp knife or food processor.

Combine chopped almonds, flour, sugar, cocoa powder, baking powder, spices and orange zest in a large mixing bowl.

Mix everything until well combined. Gradually add hot brewed coffee or water and mix using a spatula.

Add just enough coffee to bring the dough together.

Start kneading the mixture to make a dough, it should be firm but not sticky.

Divide the dough into 4 portions.

Roll each portion into a 10 inch log, then gently flatten it a bit.

    Cut the log into diamonds.

Place them on a lined baking sheet and bake in the preheated oven at 180C (350F) for 15 minutes or until they are soft but dry to the touch. They will become crunchy once cooled.

    Gingerbread Snowball Cookies

    November 30, 2024

Gingerbread Snowball Cookies - A festive twist to the classic snowball cookies, packed with warm, cozy gingerbread flavor in every bite. These are the perfect cookies to enjoy during the holiday season!

    What are gingerbread snowballs?

Gingerbread snowballs are a variation of the classic snowball cookies, which are also known as Mexican wedding cookies, Russian tea cakes, and Italian wedding cookies. These tiny cookies are made with flour, butter, light brown sugar and molasses, infused with warm, aromatic spices like ginger, cinnamon, cloves, nutmeg and allspice.

These spiced cookies are tender, warm, and delicious and taste like gingerbread. These are one of the easiest cookie recipes to make during the holiday season.

    Ingredients & Substitutions:

Flour - Plain flour or all purpose flour is the base of the cookie dough. You could also use whole wheat flour but the texture of the baked cookie will be vary. I haven't tried them with gluten-free flour yet.

Butter - You will need to use softened unsalted butter. It can be replaced with margarine but the flavor and texture might be vary. Make sure the butter is at room temperature before making the dough. Replace it with vegan butter for dairy-free version.

Sugar - I have used light brown sugar. It can be replaced with regular sugar.

Powdered Sugar - Also known as confectioner's sugar. You will need it to coat the baked cookies.

Molasses - Don't skip adding molasses. Make sure you're using dark molasses or robust molasses for the best flavor. Avoid blackstrap molasses. I have used grandma's brand molasses.

Spices - I used ginger, cinnamon, cloves, nutmeg and cloves. These warm spices adds a wonderful festive flavor the gingerbread cookies. You can also use store-bought gingerbread spice mix.

Vanilla Extract - Enhances the overall flavor of the cookie.

Salt - Skip if you are using salted butter.

    Serving suggestions:

These are so good alongside with a cup of coffee or tea.

They are perfect for parties, holiday gatherings and cookie trays.

    Storage suggestions:

These cookies can stay fresh in an airtight container at room temperature for up to a week. They can freeze well too. Once they are baked and cooled, transfer them to a freezer-safe airtight container or ziplock bag and store them in the freezer for up to 3 months. Thaw them at room temperature before serving.

    Variations:

Add a little bit of orange zest to add a citrusy flavor.

Stir in ½ cup of mini chocolate chips to the dough for a chocolaty twist.

You could also fold in some chopped candied ginger for bursts of extra zing.

Stuff the cookies with hershey kisses, similar to my secret kiss snowballs.

You can also add chopped hazelnuts, pecans, almonds or walnuts for added crunch and texture.

    Tips & Notes:

Measure the flour properly. Spoon the flour into your measuring cup and level it off with a knife.

Use a good quality butter and other ingredients for the best flavor.

Add more or less spices according to your taste preference.

Use a small cookie scoop or tablespoon to shape the dough balls evenly for even baking.

Use a small cookie scoop to ensure uniform size and even baking.

DO NOT skip chilling the dough. Refrigerating the shaped dough balls for an hour before baking can prevent excessive spreading while baking.

If you are not able to roll the dough after chilling, let the dough sit at room temperature for few minutes.

Do not roll the cookies in powdered sugar while they are too hot. They should be just warm, so the sugar sticks well without melting. Once cooled, roll them again in the powdered sugar for an extra coating.

Do not overbake the cookies, as it can make the cookies dry. Bake them until the bottoms are lightly golden.

    Step by step instructions:

In a mixing bowl, cream together butter and light brown sugar until light and fluffy.

Add all the spices, vanilla extract and salt to the creamed butter and mix well.

Add molasses and give it a mix.

Add all purpose flour to the butter mixture and gently mix everything until incorporated.

Gently knead to make a soft dough.

Wrap the prepared dough with plastic wrap / cling film and chill it in the refrigerator for an hour or until the dough is firm.

Once it is chilled, take it out of the refrigerator and let it sit at room temperature for few minutes.

Line a baking tray with parchment paper and keep it aside. Preheat the oven to 180 degrees C (350F).

Using a cookie scoop or tablespoon, take a small portion of the chilled dough. Roll dough into 1 inch small balls.

Arrange the cookie dough balls on the prepared cookie sheet spacing about 1 inch apart.

Let them bake in the preheated oven for about 12-15 minutes or until the bottom of cookies are slightly browned at 180 degrees C.

Once they are baked, take them out of the oven and let them cool down a bit for 3-5 minutes.

When the baked cookies are still warm, roll them in powdered sugar.

    Cream Cheese Mints

    November 29, 2024

Cream Cheese Mints - Sweet, delicious, rich, old-fashioned holiday treats. These are perfect for weddings, baby showers, Easter and Christmas!

    What are cream cheese mints?

Cream cheese mints are old-fashioned candy made with cream cheese, powdered sugar, vanilla and peppermint extract. These small, soft and sweet candies are also known as "Wedding Mints", often served at special occasions such as baby showers, bridal showers, weddings, and holidays. These have a creamy texture that melts in your mouth. These are usually colored with food coloring to match the theme of the event to add them a festive appearance. These are one of the easy and best no-bake candy recipes made with simple ingredients.

    Ingredients & Substitutions:

Powdered Sugar - Also known as confectioner's sugar. You will be using lot of powdered sugar. It sweetens and thickens the mixture, forming the dough.

Cream Cheese - Provides a creamy base and soft texture, use a full-fat cream cheese for the best results. Make sure the cream cheese is softened before using. You can replace it with vegan cream cheese for a dairy-free option.

Butter - I have used unsalted butter. If you are using salted butter, skip adding salt. Make sure it is softened before using.

Peppermint Extract - This is what adds the minty flavor. You could also experiment with different flavors.

Vanilla Extract - Enhances the overall flavor.

Salt - Skip if you are using salted butter.

Food Colors - It adds a festive touch. Totally optional though.

    Serving suggestions:

They can be served on special occasions like baby showers, bridal showers, weddings or holiday gatherings. Use molds or food colors to match the theme. Use pastel colors for Easter, pink shades for valentines day, or red and green for Christmas.

Include them as part of a dessert platter or cookie platter during the holiday season. These can make a great edible gift.

    Storage suggestions:

Transfer the dried cream cheese mints to an airtight container and store them in the refrigerator for up to 2 weeks. If you want to store them for longer period of time, freeze them for 3 months.

    Tips & Notes:

Make sure the cream cheese is at room temperature and is fully softened. Take it out of the fridge 30-60 minutes before starting the process.

Make sure there are no lumps in the powdered sugar, it makes the dough smoother and easier to work with.

If the dough is too sticky, add little a little bit of powdered sugar to make a stiff dough. If you feel the dough is too dry, knead in a tiny bit of softened cream cheese to get the desired consistency.

Feel free to experiment with any of your favorite flavors such as almond, vanilla, lemon, or any other extract.

If the dough becomes too soft while shaping, chill it in the refrigerator for 15 minutes to firm up.

Food colors are totally optional. If you want to use them, I highly recommend using gel food colorings instead of liquid food colors. Too much liquid colors will thin out the consistency of the dough.

You can also roll the mints in granulated sugar.

You can also use silicone molds to shape the mints.

Make sure to air dry them for 12-24 hours. Don't stack them until they are firm to prevent sticking.

Always start with a small amount of extract and taste the dough before adding more.

    Step by step instructions:

Add softened cream cheese, butter, salt, vanilla extract and peppermint extract in a large bowl or bowl of a stand mixer.

Beat using a electric mixer, whisk or spatula until soft and creamy.

Add 1 cup of powdered sugar at a time to the cream cheese mixture and mix well.

Add remaining powdered sugar little by little and mix well using a spatula. Make a non-sticky dough.

If you feel the dough is sticky, add little powdered sugar and mix again.

Divide the mint dough into 4 parts.

Mix in few drops of the desired gel food colors until evenly incorporated.

Line a baking sheet with parchment paper or wax paper and keep it aside. Take a teaspoon of dough and roll into round balls.

Roll a couple of balls at a time and arrange them on the lined cookie sheet.

Dip a fork in powdered sugar and flatten each dough ball gently. Repeat the process with remaining dough.

Let them air dry overnight until they are firm. Serve and enjoy!
