    What is coconut ice?

    Coconut Ice is a traditional British sweet confection made with desiccated coconut and powdered sugar and condensed milk which makes a soft and chewy candy. It is also very popular in Goa, India during Christmas time. The traditional methods requires cooking milk, coconut and sugar together until it reaches a candy consistency. However, this recipe is a shortcut and it's equally good without any cooking or baking.

    The coconut ice has two layers: one is uncolored, and the other is pink. Making it involves mixing the ingredients together, pressing them into a lined tin in layers, and letting it set in the refrigerator. Once it is firm, cut it into squares.

    • 4 Cups Desiccated Coconut

    Mini Chocolate Chips - This is totally optional. You can swap them with sprinkles or m&ms.

    Snowballs, also known as Russian tea cakes or Mexican wedding cookies, are small, buttery cookies that are rolled in powdered sugar, which gives them a white, snow-like appearance. They are often made with pecans or walnuts and have a crumbly, melt-in-your-mouth texture.

    Ingredients & Substitutions:

    Flour - Plain flour or all purpose flour is the base of the cookie dough. You could also use whole wheat flour but the texture of the baked cookie will be vary.

    Butter -  have used softened unsalted butter in this recipe. It can be replaced with margarine but the flavor and texture might vary slightly. Make sure the butter is at room temperature before making the dough. Replace it with vegan butter if you are looking for a plant-based cookie recipe.

    Dried Cranberries - I do not recommend fresh cranberries for this recipe. Try to use high quality dried cranberries for the best results. Chop them before adding to the dough. Dried cherries, blueberries, or raisins could replace cranberries if desired.

    Orange Zest - Do not skip adding orange zest, it adds a wonderful citrus flavor to the cookies. You can substitute it with lemon zest though.

    Powdered Sugar - Also known as confectioners sugar. If you don't have it, grind sugar into a smooth powder.

    Vanilla - Adds a wonderful flavor to the cookies. You can also use other extracts like almond or lemon for a different flavor.

    Salt - Skip it if you are using salted butter.

    Storage suggestions:

    Once the cookies are completely cooked, store them in an airtight container at room temperature. They'll stay fresh for about a week at room temperature.

    You can also freeze them for up to 2 months. Once the cookies are baked and rolled in powdered sugar, arrange them in an airtight container and separate the layers with parchment papers and store in the freezer. Let them thaw at room temperature and roll them in some powdered sugar again before serving.

    You can also store the unbacked cookie dough in the refrigerator for couple of days. If you want to store it for longer period of time, wrap the dough tightly in plastic wrap, then place it in a freezer safe bag or airtight container. Thaw in the refrigerator before using. It can be stored in the freezer for up to 3 months.

    Serving suggestions:

    Serve them with hot beverages like tea, coffee or hot cocoa. The contrast between the sweet-tart cookies and a warm drink is delicious.

    Combine softened butter and powdered sugar in a mixing bowl. Mix until light and creamy.

    Add vanilla extract and salt. Mix well.

    Add flour and orange zest to the butter-sugar mixture and gently mix everything.

    Add chopped cranberries to the butter-flour mixture.

    Mix everything well to make a soft dough.

    Wrap the prepared dough with cling film and chill it in the refrigerator for an hour or until the dough is firm.

    What are cherry wink cookies?

    Cherry winks are a popular old fashioned cookie, often made during the holiday season. These vintage cookies gained popularity through a national Pillsbury baking contest in the 1950s. What makes them unique are the sweetness from the cherries, nuttiness from the pecans, and the crunch of cornflakes.

    They're chewy on the inside but crispy on the outside. The fruity, nutty, and buttery dough shaped into a ball then rolled in crushed cornflakes cereal before baking, adding a wonderful crunch and an extra layer of texture to the finished cookies. Cherry winks are topped with a halved cherry before baking to add a charming and festive touch.

    Ingredients & Substitutions:

    Flour - This is the base of the cookie dough. I used all purpose flour / plain flour here. Gluten-free flour blends can be replaced regular flour for a gluten-free version of these cookies.

    Butter - Make sure the butter is at room temperature for easy blending. Margarine or a vegan butter substitute can work for those avoiding dairy.

    Sugar - Can be replaced with brown sugar.

    Cornflakes - This is the star ingredient. It is used to coat the cookie dough for a crunchy exterior. Do not skip this ingredient if possible.

    Cherries - Adds a burst of flavor and sweetness. I have used candied cherries here. If you are using maraschino cherries, make sure they are not too wet to prevent affecting the dough consistency. You will need chopped cherries for the dough and halved cherries to decorate the cookies.

    Pecans - Adds a wonderful crunch and nutty taste. Other nuts such as walnuts, almonds, or hazelnuts can also be used.

    Dates - Adds extra sweetness and chewiness. You can replace it with any other dried fruit but the taste and flavor will be different. Raisins, dried cranberries, or apricots can be used instead of dates.

    Milk - The original recipe calls for eggs but I have substituted it with milk.

    Vanilla - Adds a wonderful flavor. You can also use almond extract if you want.

    Baking Powder & Baking Soda - Helps the cookies rise. Do not skip this.

    Salt - Skip this if you are using salted butter.

    Serving suggestions:

    Serve them with a cup of coffee, tea, or hot cocoa.

    Storage suggestions:

    These can be stored in an airtight container at room temperature for up to 5 days. If you want to store them for longer period of time, store them in the freezer for up to 3 months. To freeze the cookies, transfer the cooled cookies to a ziplock bag or freezer safe container and store in the freezer. You could also freeze the unbaked cookie dough for up to 3 months

    Tips & Notes:

    Ensure the pecans, dates, and cherries are chopped into relatively uniform pieces for even distribution.

    If using maraschino cherries, drain and pat them dry with a paper towel. Excess moisture can affect the dough's consistency.

    Do not crush the cornflakes too finely. You want them to coat the dough evenly.

    The dough should be sticky so that the cornflakes will stick well to the dough balls. To shape the cookies, just drop of a spoonful of dough into crushed cornflakes and gently roll to make a round ball. If you find it challenging to roll the dough, chill it for 30 minutes for easier handling.

    While they taste equally good without the cornflakes coating, I highly recommend not skipping it as it adds both crunch and flavor to the cookies and facilitates easier dough rolling.

    Do not overbake the cookies. They should turn golden brown, but be careful not to overbake, as this can make them too crispy.

    Step by step instructions:

    Combine flour, baking powder, baking soda and salt in a mixing bowl and keep it aside until use.

    Cream butter and sugar together in a mixing bow.

    Add vanilla and milk to the creamed butter mixture. Mix until well combined.

    Add the flour mixture to the sugar butter mixture.

    Mix everything together until dough forms.

    Add chopped candied cherries, chopped pecans and chopped dates. Gently fold everything until well combined.

    The dough should be sticky. If you feel you are not able to shape it, chill the dough for 30 minutes.

    Take a spoonful of cookie dough.

    Crush cornflakes using your hands or rolling pin. Drop the dough into the crushed cornflakes and gently roll and shape it into a round ball.

    Repeat the process with remaining dough.

    Arrange them on a lined baking sheet spacing 2 inches apart. Top them with halved cherry and gently press.

    Bake them in the preheated oven for 12-15 minutes at 190 degrees C.

    Once cookies are set and lightly browned around edges, remove them from the oven and let them cool completely.

    Peppermint Kiss Cookies also known as Candy Cane Blossoms are a soft and festive treat made with a buttery dough and peppermint flavored kisses.

    As the cookie cools, the Kiss softens slightly, creating a deliciously sweet and minty center. These are popular during the holiday season and are often enjoyed as a sweet treat or given as homemade gifts.

    Candy Cane Kisses - Hershey's peppermint flavored kisses are the key ingredient. You could also use any type of hershey's kisses.

    All Purpose Flour - Also known as plain flour. I haven't tried them with any gluten-free flours yet.

    Butter - I have used unsalted butter. Skip salt if you are going to use salted butter.

    Sugar - I have used fine sugar for the dough and rolling.

    Milk - The original recipe calls for an egg. I have replaced it with milk.

    Vanilla - Enhances the flavor. You could use peppermint extract as well.

    Baking Soda - Do not skip this. It will help cookies rise and gives them a slightly lighter texture.

    Salt - Skip it if you are using salted butter.

    Serving suggestions:

    Serve them alongside a cup of coffee, tea or hot cocoa for a cozy and comforting treat.

    Arrange the cookies on a festive dessert platter along with other holiday treats.

    Storage suggestions:

    These can be stored in an airtight container at room temperature for up to a week. Freeze them for up to 2 months if you want to store them for longer period of time.

    Tips & Notes:

    Make sure your butter is softened. Room temperature butter blends better with the sugar.

    Roll the shaped dough balls in colored sparkling sugar instead of regular sugar to add a festive touch.

    Once the cookies are baked, DO NOT let them cool completely. Allow them to cool for 2-3 minutes and while they are still warm, gently press a kiss into the middle of each cookie.

    DO NOT move the cookies immediately after placing the kisses on the top. Otherwise, they will collapse.

    Preheat the oven to 180 degrees C. Line a baking tray with parchment paper.

    Add softened butter and sugar in a mixing bowl. Mix using a spatula or beater until combined.

    Add milk and vanilla and mix well.

    Ischoklad - A classic, delicate, creamy, and delicious Swedish chocolates for the holiday season!

    What is Ischoklad?

    Ischoklad is a traditional Swedish chocolate typically made during the Christmas season. The name "Ischoklad" translates to "Ice Chocolate" in English and they just melt in your mouth like ice.

    It is one the simple and classic Swedish Christmas treats made with 2 key ingredients: chocolate and coconut oil. Traditionally, coconut fat is used to make these ice chocolates. Coconut fat is also knows as "kokosfett" in Swedish.

    These tiny chocolates are usually set in colorful foil molds called "Ischokladformar". You can use multiple layers of mini cupcake liners if you can't find the foil molds.

    It's often made during the holiday season and can be flavored with ingredients like coffee, vanilla, or nuts.

    Ingredients & Substitutions

    Coconut Oil - Traditionally, coconut fat (kokosfett) is used to make these ice chocolates. But, I have used coconut oil since I couldn't find coconut fat.

    How to avoid coconut flavor in ischoklad?

    If you are using coconut oil, the chocolates with have a little bit of coconut flavor. Refined coconut oil has a more neutral taste and scent compared to unrefined (virgin or extra-virgin) coconut oil. Look for "refined" coconut oil specifically to reduce the coconut flavor in your ischoklad.

    You could also add flavorings like vanilla, almond, or other extracts to complement the coconut taste.

    Variations:

    Feel free to experiment with different types of chocolates like milk, dark, or white chocolate.

    Enhance the flavor by adding additional flavors like vanilla, almond, peppermint, or orange. These extracts can complement the chocolate and adds a delightful twist.

    You can also add chopped nuts such as almonds, hazelnuts, pistachios, or peanuts for added crunch. Add chopped dried fruits like candied cherries, cranberries, raisins, or apricots for added sweetness or texture.

    Sprinkle a bit of sea salt on top before it sets to make a sweet and salty treat.

    To make spiced ischoklad, add a little bit of cinnamon or nutmeg to infuse warm flavors. You can also incorporate a hint of coffee into the chocolate mixture for a mild coffee flavor.

    Snowballs, also known as Russian tea cakes or Mexican wedding cookies, are bite-sized, buttery cookies that are rolled in powdered sugar, which gives them a white, snow-like appearance. They are often made with pecans or walnuts and have a crumbly, melt-in-your-mouth texture.

    There are many variations of classic snowballs and cherry stuffed snowballs are one of them. The buttery dough is rolled into balls, stuffed with candied cherries, baked until light golden and then rolled in powdered sugar while cookies are still warm, creating a snowy appearance. These are delicious and festive.

    Butter - I have used softened unsalted butter in this recipe. It can be replaced with margarine but the flavor and texture might vary slightly. Make sure the butter is at room temperature before making the dough.

    Cherries - Candied or maraschino cherries are used and should be well-drained before using.

    Vanilla - Enhances the flavor of the cookies.

    Salt - Skip it if you are using salted butter.

    Serving suggestions:

    Serve them with a cup of tea, coffee or hot cocoa.

    Pack them in a festive box or tin along with other holiday treats for a wonderful gift

    Add these cookies to a dessert platter alongside other treats, brownies, or sweets during holiday gatherings.

    Can I freeze the dough?

    You can also freeze the unbacked dough easily. Roll it into a ball, wrap it tightly in plastic wrap, then place it in a freezer bag or airtight container. Thaw in the refrigerator before baking.

    Can the baked snowballs be frozen?

    If you want to store them for longer period of time, freeze them for up to 2 months. Once the cookies are baked and rolled in powdered sugar, arrange them in an airtight container and separate the layers with parchment papers and store in the freezer. Let them thaw at room temperature and roll them in some powdered sugar again before serving.

    Variations:

    You can use any of your favorite dried fruit or chocolate kisses instead of candied cherries.

    You can also incorporate spices like cinnamon, nutmeg, or cardamom into the dough for a warm, aromatic and festive touch.

    You could also add some finely chopped nuts like pecans, walnuts or almonds to the dough.

    If using maraschino cherries, make sure they're well-drained and patted dry to prevent excess moisture in the dough, which could affect the cookie's texture.

    Refrigerating the shaped dough balls for an hour before baking can prevent excessive spreading while baking.

    Do not roll the them in powdered sugar while they are too hot. They should be just warm, so the sugar sticks well without melting. Once cooled, roll them again in the powdered sugar for an extra coating.

    The combination of creamy goat cheese and cream cheese with the tartness of cranberries and the nuttiness of pistachios creates a wonderful blend of flavors. These are creamy, tangy, sweet and often served as bite-sized snacks or appetizers, perfect for parties and celebrations during the holiday season.

    Pistachios - I love the combination of cranberries and pistachios. They will add a nutty flavor and texture. You can use raw or roasted pistachios. Almonds, walnuts, or pecans could be used instead.

    Cilantro - It can be replaced with fresh parsley.

    Honey - Do not skip adding sweetener. Maple syrup or agave can also be used.

    The cookie dough is typically shaped into a log, chilled until firm, and then sliced into round cookies before baking. After baking, they are frosted with zesty buttercream frosting, which adds an extra layer of sweetness.

    All Purpose Flour - Also known as plain flour. I haven't tested this recipe with any other flour yet.

    Corn Flour - Also known as corn starch. Do not skip this. It gives cookies a soft, melt-in-your-mouth texture. You can substitute arrowroot powder or potato starch for cornstarch in equal amounts.

    Unsalted Butter - It can be replaced with margarine but the flavor and texture might vary slightly.

    Powdered Sugar - Also known as confectioners sugar. If you don't have it, grind sugar into a fine powder.

    Lemon Zest - Freshly grated lemon zest adds the vibrant citrus flavor to these cookies.

    Lemon Juice - Use freshly squeezed juice. Do not substitute it with bottled juice.

    Sprinkles - It is totally optional. You can use any of your favorite sprinkles to add a festive touch.

    Serving suggestions:

    Serve them with a cup of tea or coffee.

    Include these cookies on a dessert platter along with other treats during the holiday season.

    You can pack them in boxes to give as gifts during gatherings or holidays.

    Storage suggestions:

    They can be stored in an airtight container at room temperature for up to 4-5 days. If you'd like to store them for longer, they can be frozen for up to 2-3 months.

    Ensure the baked cookies are cooled before frosting.

    Step by step instructions:

    Mix together all purpose flour and corn flour in a mixing bowl and keep it aside until use.

    Add lemon juice and mix everything.

    Add the flour mixture and gently mix everything.

    Knead it to make a soft and smooth dough.

    Roll the dough into a 7-8 inch log and wrap it in a cling film or parchment paper.

    Place the dough log in the refrigerator and chill it for 1-2 hours or until firm.

    Take it out of the refrigerator and remove the cling film. Cut the dough into ¼ inch slices.

    Arrange them on a lined baking tray and bake them in the preheated oven for 12-15 minutes at 180 degrees C.

    Let them cool completely.

    To make the frosting, combine butter, lemon zest and powdered sugar in a bowl.

    Mix everything until smooth and creamy.

    Spread the frosting over the cooled cookies.

    You can also use a piping bag for frosting.

    Leave them for some time until frosting has set.

    • Knead it to make a smooth dough.
    • Form the dough into a 7-8 inch log and wrap it in a cling film.
    • Let it chill the dough for 1-2 hours or until firm.
    • Slice the chilled dough into ¼ inch thick rounds and place them on a lined baking tray.
    • Bake them in the preheated oven for 12-15 minutes at 180 degrees C.
    • Remove and let them cool completely before frosting.
    • Combine all the frosting ingredients until creamy.
    • Spread a spoonful of frosting over the cooled cookies and add sprinkles on top if using.
    • Leave them for some time until frosting has set.
    • Store them in an airtight container.
