    What is oats modak?

    Oats Modak is a modern and nutritious variation of the traditional Indian sweet called "Modak". It is a popular sweet snack in India, especially during the Ganesh Chaturthi festival season.

    Oats Jaggery Modak is a one of the easy modak recipes and perfect for those looking for a guilt-free indulgence. Its preparation is quick and straightforward, involving basic steps of toasting the ingredients, blending them, and shaping them into modak.

    Ingredients & Substitutions:

    Oats - I recommend using instant or quick oats in this recipe because they require less roasting time, making it suitable even for novice cooks. While you can also use rolled oats, please note that they will need a longer roasting time.

    Jaggery - You can get jaggery from any Indian stores or online. It can be replaced with powdered jaggery, coconut sugar or palm sugar.

    Nuts - I have added almonds, cashews and pistachios in this recipe. You can use any of your favorite nuts. They give a wonderful taste and richness to the modaks.

    Cardamom - Do not skip adding cardamom. I have added cardamom seeds, you could use ground cardamom. It give a lovely aroma to the sweet. If you don't like cardamom, replace it with cinnamon or nutmeg.

    Ghee - It helps bind the mixture and adds richness and flavor. You can reduce the quantity by half and substitute it with milk. If you are looking for a vegan alternative, replace it with the same quantity of coconut oil.

    Serving suggestions:

    Serve it as a prasad / naivedyam (offering) to Lord Ganesha during Vinayaka Chaturthi festival.

    It makes a perfect edible gift for special occasions such as diwali parties, birthdays and gatherings.

    You can also serve them as a healthy sweet snack with a cup of tea or coffee.

    These are wonderful in your kids lunchbox as well.

    Storage suggestions:

    I haven't used any milk in this recipe so they will stay fresh at room temperature for 7-10 days if stored properly.

    If you want to store them for longer period of time, refrigerate them.

    You can also freeze them in a ziplock bag for up to 3 months.

    Tips & Notes:

    Make sure you are using fresh and high quality ingredients for the best flavor and taste.

    Always roast the nuts and oats over a low-medium flame to avoid burning.

    You can increase the nuts quantity in this recipe but you may add more jaggery in that case.

    Always add warm/hot ghee little by little until the mixture holds its shape. You may need more or less ghee.

    Grease your hand and modak mould with ghee. This prevents the mixture from sticking to your hands and makes it easier to shape them into laddus or modaks.

    To add a festive touch, decorate the shaped modaks with edible silver or gold foil.

    Variations:

    Nut-Free Modak - Omit the nuts altogether for a nut-free option.

    Chocolate Oats Modak - Add 1-2 tablespoons of cocoa powder to the mixture for chocolatey twist.

    Spiced Modak - Experiment with spices like cinnamon, nutmeg, or ginger for a spiced variation.

    Coconut Oats Modak - Roast some desiccated coconut and add it the modak mixture for a different variation.

    Can I use rolled oats in this recipe?

    Yes, you will need to roast them for a little longer though.

    What can I use instead of ghee for a vegan version?

    To make it vegan, replace ghee with coconut oil or vegan butter.

    Can I use flavored oats?

    Yes! You can use saffron or cinnamon flavored oats.

    Is this recipe suitable for people with nut allergies?

    No! You can make this recipe nut-free by omitting the nuts altogether. The modaks will still be delicious without them. Replace them with same quantity of oats or reduce the jaggery.

    Can I make these modaks ahead of time for a festival or special occasion?

    Absolutely! you can prepare Oats Jaggery Modak a day or two in advance for festivals or special occasions. Store them in an airtight container until ready to serve.

    Are these oats modaks gluten-free?

    Yes! These are naturally gluten-free!

    Step by step instructions:

    Dry roast almonds and cashews for 2-3 minutes or until they are slightly golden brown.

    Take them out of the pan and set aside.

    In the same pan, add oats and roast them on a low flame for 2-3 minutes or until it turns slightly golden and emits nutty aroma.

    Remove from the flame and let it cool completely.

    Combine the roasted nuts, roasted oats and cardamom seeds in a mixie or blender jar.

    Grind everything to a little bit coarse powder.

    Add jaggery to the ground oats mixture and blend it again until smooth and well combined.

    If you feel the sweetness is not enough, add more jaggery and blend it again at this stage.

    Transfer the ground mixture to a mixing bowl.

    Add chopped pistachios and mix well.

    Add 2 tablespoons of warm/hot ghee over it and mix well.

    Add one more tablespoon of ghee if needed. You should be able to roll the mixture into balls.

    Grease a modak mould with ghee and stuff the mould with oats jaggery mixture.

    Close the mould and remove any excess mixture.

    Press and push gently at the bottom.

    Gently unmold the modaks and repeat the same process with the remaining mixture.

    What is chocolate modak?

    Chocolate Modak is a delectable and innovative variation of the traditional Mawa Modak, which holds immense significance during Ganesh Chaturthi festival. Modaks are Indian sweet dumplings typically made during festivals like Ganesh Chaturthi. There are many variations of making modak such as Paneer Modak, Mango Modak, Rava Modak and Sesame Modak.

    Chocolate modak is one of the easy and rich modak recipes that is made with mawa/khoya (dried milk solids), cocoa powder, sugar, cardamom, nuts and ghee. It can be prepared in no time with just a handful of ingredients. It is rich, delicious, creamy and, chocolatey.

    Ingredients:

    Khoya - It is also known as Mawa. Make sure you are using fresh and good quality unsweetened khoya as this is the base of the modak. I have used store-bought khoya here, you can also use homemade khoya.

    Cocoa Powder - Use a high-quality unsweetened cocoa powder or cacoa powder to add the rich chocolate flavor.

    Sugar - You can use white, brown or palm sugar in this recipe. You could also use jaggery but the taste and flavor will be completely different though.

    Cardamom Powder - This is totally optional.

    Ghee - Ghee is clarified butter and can be replaced with coconut oil.

    Pistachios - I love the combination of chocolate and pistachios. You can also any of your favorite nuts. I have chopped them finely and added to it.

    Variations:

    To enhance the texture, you can add loads of chopped almonds and cashews along with pistachios.

    You can also add a little bit of vanilla extract or ground cinnamon for a different flavor profile.

    You can stuff the modaks with nuts, nutella or gulkand while shaping them

    Tips & Notes:

    Make sure you are using fresh and high-quality mawa and cocoa powder to ensure a rich flavor.

    ¼ cup of sugar for every cup of mawa is just fine. If you want more sweetness, add more sugar.

    Do NOT overcook the mawa mixture. Otherwise, the modaks will be chewy.

    If there are any lumps in the cocoa powder, sift it before using.

    Serving suggestions:

    These are perfect to make during Indian festivals such as Ganesh Chaturthi, Diwali and Rakhi.

    Offer them to Lord Ganesha as prasad during Ganesh Chaturthi.

    These can also be served as a sweet snack or dessert.

    Storage suggestions:

    They stay fresh at room temperature for a day. If you want to store them for longer period of time, refrigerate them for up to 5 days.

    Step by step instructions:

    Heat ghee in a heavy-bottomed pan and add crumbled khoya or mawa.

    Sauté on low-medium flame until soft and smooth.

    Add sugar and keep stirring.

    Continue stirring and cooking over a low-medium flame for about 5 minutes or until the mixture leaves the sides of the pan.

    Turn off the flame and add cocoa powder, cardamom powder, chopped pistachios.

    Mix everything until well combined. There should be no cocoa powder lumps.

    Transfer it to a plate and let it cool down a bit.

    Grease your hands with ghee and knead it into a smooth ball.

    Grease a modak mould with a little bit of ghee to prevent modaks from sticking.

    Take a small portion of the prepared chocolate mawa mixture and stuff it into the greased mould.

    Close the mould and remove any excess mixture.

    Press and push gently at the bottom.

    Gently unmold the modaks and repeat the same process with the remaining mixture.

    You can decorate the shaped modaks with edible silver foil or varq.

    Serve and enjoy!

    What is white chocolate jalebi bark?

    Chocolate bark is one of the quick and easy chocolate desserts that can be made with just couple of ingredients. The process of making this dessert is pretty much straight forward. Melt the chocolate, add your favorite flavors and variety of toppings and set it in the refrigerator or freezer, that's it!

    Jalebi is a popular Indian sweet. The combination of jalebi and white chocolate is so good and it is a perfect fusion combination for festivals such as Diwali, Holi and Raksha Bandhan!

    To make this fusion dessert, all you need to do is melt some white chocolate and spread it on a lined plate and top it with jalebis and your favorite nuts. It can be made in under 20 minutes.

    Mango quinoa salad is a refreshing and healthy salad made with cooked quinoa, ripe mangoes, cucumbers, and cherry tomatoes, all tossed in a simple lemon dressing. It has all sweet, savory and tangy flavors and can be enjoyed as a light meal or side dish.

    The combination of protein packed quinoa, sweet mangoes, juicy cherry tomatoes and crunchy cucumbers makes this salad not only super flavorful but also highly nutritious. A wonderful dish for meal prep, gatherings and picnics.

    Cucumber - I have used english cucumbers in this recipe, they make the salad refreshing and adds crunch. If you don't have cucumbers in hand, replace them with red or yellow bell peppers.

    Cherry Tomatoes - These will add freshness and color to the salad. Substitute them with regular tomatoes, if you don't have cherry tomatoes. Dice them into small pieces if you are using regular tomatoes.

    Jalapeño Pepper - If you are fine with heat, don't remove seeds. You can swap it with any other peppers or simply skip it.

    Onion - You can use any onion such as red, yellow or white onion. You can also replace them with shallots or green onions if you prefer milder taste.

    Cilantro - If you are not a fan of cilantro / coriander leaves, use less or replace it with parsley.

    Honey - Do not skip the sweetener, it balances the flavors in the dressing. If you are vegan, substitute it with maple syrup, sugar, agave.

    Lemon Juice - You can substitute it with lime juice, orange juice, or vinegar. Do not skip it.

    Olive Oil - I highly recommend using a good quality extra-virgin olive oil.

    Salt & Pepper - Adjust as per your taste.

    Tips & Notes:

    Rinse quinoa thoroughly before cooking with plenty of water to remove any bitterness.

    Make sure the quinoa is cooked well. You could also use any leftover cooked quinoa in this recipe.

    You could also add cooked beans, diced red bell pepper, or avocado to the salad.

    Adjust the amount of honey/maple syrup, lemon juice, olive oil, salt, and pepper according to your taste.

    Chill the assembled salad for at least 30 minutes for the best flavor.

    Storage suggestions:

    Store any leftover quinoa mango salad in the refrigerator for up to 2-3 days.

    Step by step instructions:

    Rinse quinoa well with plenty of water to remove any bitterness and drain.

    Combine rinsed quinoa, 1 cup of water and required salt in a saucepan and bring it to a boil.

    Reduce the flame to low and cover the pot with a lid.

    Let it cook until it is soft and cooked.

    Once it is soft and cooked, remove it from the heat. Cover and let it cool completely.

    Fluff it using a fork and keep it aside until use.

    To prepare the dressing, combine olive oil, lemon juice, honey, salt and black pepper in a small mixing bowl or jar.

    Mix it well until well combined.

    Wash, peel and dice a ripe and sweet mango. Cut the rinsed cherry tomatoes in half.

    Deseed jalapeno and chop it finely. Peel and chop onion into small pieces

    Wash and chop cucumber into desired shapes.

    Combine cooked quinoa, mango, cherry tomatoes, jalapeno, onion, cucumber and chopped cilantro in a mixing bowl.

    Pour the prepared dressing over it.

    Gently mix everything until well combined.

    Adjust the salt and pepper if needed.

    Serve and enjoy!

    Ingredients

    • ½ Cup Quinoa
    • 4 Tablespoons Extra Virgin Olive Oil
    • 2 Tablespoons Lemon Juice

    Instructions

    • Rinse quinoa well with plenty of water to remove any bitterness and drain.
    • Combine rinsed quinoa, 1 cup of water and required salt in a saucepan and bring it to a boil.
    • Reduce the flame to low and cover the pot with a lid.
    • Let it cook until quinoa is soft and cooked.
    • Once it is soft and cooked, remove it from the heat. Cover and let it cool completely.
    • Fluff it using a fork and keep it aside until use.
    • To prepare the dressing, combine olive oil, lemon juice, honey, salt and black pepper in a small mixing bowl or jar.
    • Mix it well until well combined.
    • Wash, peel and dice a ripe and sweet mango. Cut the rinsed cherry tomatoes in half. Deseed jalapeno and chop it finely. Peel and chop onion into small pieces.
    • Wash and chop cucumber into desired shapes.
    • Combine cooked quinoa, mango, cherry tomatoes, jalapeno, onion, cucumber and chopped cilantro in a mixing bowl.
    • Pour the prepared dressing over it ang gently toss everything until combined.
    • Adjust the salt and pepper if needed. Serve chilled!

    Ingredients:

    Flour - I have used all purpose or plain flour in this recipe. You can replace it with whole wheat flour but the texture of the cake will be different. I have yet to try with gluten-free flours.

    Orange Juice - You will need it for flavor and moisture. Use fresh or store-bought orange juice.

    Orange Zest - Do not skip orange zest. It adds a wonderful flavor to the muffins.

    Blueberries - Use fresh or frozen blueberries. No need to thaw them if you are using frozen berries.

    Yogurt - Swap it with plant-based yogurt if you are vegan.

    Melted Butter - You can substitute it with equal amount of coconut oil or any other vegetable oil.

    Sugar - I used caster sugar, you can use any kind of sugar.

    Vanilla - You could also replace it with almond extract.

    Baking Soda & Baking Powder - These are the leavening agents. Don't skip these.

    Variations:

    You can also drizzle a simple orange glaze over the cooled muffins for a variation.

    You could also use mixed berries instead of blueberries.

    Add some chopped nuts such as walnuts, almonds or pecans for a crunch.

    Can I use frozen blueberries?

    Absolutely! But, DO NOT thaw them. Use the frozen ones directly from the freezer. Simply toss the frozen berries in a bit of flour and fold them into the batter.

    Tips & Notes:

    Make sure you are using fresh and good quality ingredients for the best flavor and texture.

    Zest the oranges properly. You should use the outer colored part of the peel only. Do not use the white part.

    Do not overmix the batter. Gently fold in the blueberries to prevent them from bursting.

    Do not skip coating blueberries with a little of flour. This will prevent them from sinking to the bottom the muffins while baking.

    Can we double this recipe?

    Yes! you can! No changes needed.

    Storage suggestions:

    They can be stored at room temperature for up to 3 days. If you want to store them for longer period of time, refrigerate them for up to 5 days. Make sure you store them in an airtight container or wrap them tightly in plastic wrap to prevent them from drying out.

    You can also freeze them for up to 2-3 months.

    • Soak sabja seeds or sweet basil seeds in water for about 15 minutes.
    • Drain the soaked seeds and set it aside.
    • Combine water and vermicelli in a saucepan or vessel and let it cook until vermicelli is soft and cooked.
    • Once it is cooked, drain excess water and let it cool completely.
    • Combine the cooked and drained vermicelli and soaked sabja seeds in a mixing bowl or jar.
    • Add milk and rose syrup or rooh afza syrup to the vermicelli.
    • Mix everything until well combined.
    • Pour prepared milk mixture into the popsicle molds.
    • Insert popsicle sticks and freeze until set.
    • To remove the popsicles from the mold, run the water on the outside of the molds for some time until the ends are loose.

    It is a simple and easy sweet pastry made with puff pastry sheet that is braided and filled with a layers of sweetened cream cheese mixture and dark chocolate and baked until golden brown and crispy. It is a delicious and festive treat that is perfect for celebration Easter or any other special occasions.

    It can be served warm or at room temperature and is a wonderful treat for dessert, breakfast or lunch.

    Ingredients:

    Puff Pastry Sheet - Puff pastry sheets works best for this recipe. Thaw them before assembling the pastry. You could also use shortcrust pastry sheet, the texture will be different though.

    Cream Cheese - If you want to substitute cream cheese, you could use mascarpone cheese or ricotta cheese instead. It should be at room temperature.

    Chocolate - I have used chopped dark chocolate in this recipe. Feel free to use whatever chocolate you have in hand such as milk chocolate, chocolate chips or white chocolate.

    Sugar - You can replace it with brown sugar or powdered sugar.

    Mini Eggs - These will add a festive touch to the pastry. You can substitute them with any other easter-themed candies like pastel colored M&Ms.

    Milk - I have brushed the pastries with milk instead of egg wash to get a nice and golden color.

    Serving suggestions:

    It taste amazing when served with a cup of hot coffee or tea.

    Slice it and serve with whipping cream or ice cream. It can be served as a snack, breakfast or dessert.

    It is perfect for parties, gatherings and holidays!

    Storage suggestions:

    Unbaked - Braided and unbaked pastries can be stored in the refrigerator for up to 2 days. If you want to store them for longer period of time, freeze them for up to 2 months. Thaw them and bake whenever you want. You can bake them straight from the freezer, but it will take extra time to bake.

    Baked - Store the baked pasty at room temperature for a day or in the refrigerator for up to 5 days. Store them properly in an airtight container. You can also freeze them for up to 2 months. Reheat before serving.

    Topping ideas:

    • The baked pastry can be dusted with icing sugar or drizzled with melted white or dark chocolate for added sweetness and flavor.
    • You could also sprinkle some sugar or sliced almonds over the braided pastry before baking.
    • Add some whipped cream on top of the pastry before serving.
    • You can also add some fresh fruits such as raspberries or blueberries.

    Tips & Notes:

    Puff pastry should be thawed in the fridge overnight, or at room temperature for an hour before starting the process.

    Make sure your cream cheese is not cold to make a smooth filling.

    You can also add a little bit of vanilla extract to the cream cheese filling.

    I have used cadbury mini eggs as a decorative topping. You can also add them to the filling to make to more festive.

    Do not skip brushing the pastry with milk, it will give it a shiny and golden brown finish. If you are fine with egg wash, use it.

    Let it cool down a bit before slicing it. Use a sharp knife for neat slices.

    Step by step instructions:

    Combine cream cheese and sugar in a small mixing bowl.

    Mix everything well using a spoon or whisk until smooth and creamy.

    Unfold the thawed puff pastry onto the lined baking tray.

    Spread the prepared cream cheese filling down the center of the pastry sheet, leaving some space around it.

    Top it with chopped dark chocolate.

    Cut strips on both sides and remove the corner pieces

    Fold the strips over the chocolate mixture, alternating sides, to make a braided pattern.

    Once it is done, brush the top with milk.

    Bake in the preheated oven at 200 degrees C for about 30-35 minutes or until golden brown.

    Once it is baked, top it with a handful of mini eggs.

    Koulourakia Cookies - Traditional Greek Easter cookies made with flour, orange zest, orange juice, vanilla and sesame seeds. These buttery and citrusy cookies are crispy on the outside and tender on the inside. So good with a cup of coffee or tea.

    What are Koulourakia?

    Koulourakia (Greek: κουλουράκια, singular: κουλουράκι / koulouraki) are a traditional Greek butter cookies that are often made for Easter and special occasions. They can also be enjoyed year-round.

    These cookies are made with a simple dough flavored with orange zest and vanilla. They can be shaped into different shapes , such as twists, braids, or circles, and are often decorated with sesame seeds.

    They traditionally have an egg glaze which give them a wonderful golden brown color. I have brushed these butter cookies with milk instead of egg wash to make this recipe egg-free. They taste wonderful with a cup of coffee or tea.

    How do you pronounce Koulourakia?

    Koulourakia is pronounced as "koo-loo-RAH-kee-ah". The stress is on the third syllable "rah".

    Ingredients:

    Flour - I have used plain flour / all-purpose flour here. You can substitute it with whole wheat flour but the texture of the cookies will be vary. I haven't tried with any other flours yet.

    Orange Zest - Do not skip adding orange zest, it adds a wonderful citrus flavor and color to the cookies. You can substitute it with lemon zest though.

    Orange Juice - I would recommend not to skip this.

    Sugar - Use a fine or caster sugar for the best results.

    Vanilla - Use a good quality extract for the best flavor. You may swap it with almond extract.

    Butter - Make sure you are using softened unsalted butter. Skip salt if you want to use the salted butter.

    Salt - Skip if you are using salted butter.

    Sesame Seeds - These are totally optional.

    Baking Powder & Baking Soda

    How to shape Greek easter cookies?

    The traditional Greek butter cookies can be shaped in different ways. Here are some common shapes:

    • Twisted - Roll the dough into rope and twist it into braids.
    • S-Shaped - Roll the dough into a thin rope and shape in an S-shape.
    • Coil - Roll and shape into a coil, similar to a snail shell.

    Serving suggestions:

    These cookies can be served as a snack or dessert. They taste best when served with coffee or tea.

    They are perfect for holidays such as Easter, Christmas and other special occasions.

    Storage suggestions:

    They can be stored at room temperature in an airtight container for up to few weeks. If you want to store them for longer period of time, store the dough or baked cookies in the freezer.

    Variations:

    Chocolate Dipped Koulourakia - Dip the one side of the baked and cooled cookies in the melted chocolate for a rich chocolatey flavor.

    Chocolate Koulourakia - These cookies can also be made by adding a little bit of cocoa powder to the dough.

    Lemon Koulourakia - Instead of orange zest and orange juice, use lemon zest and lemon juice for a tangy flavor.

    Cinnamon Koulourakia - To make them warm and spicy, add a little bit of ground cinnamon to the dough. You could also use pumpkin pie spice blend.

    Sesame Koulourakia - Sprinkle some sesame on the shaped cookies before baking for a crunchy variation.

    Tips & Notes:

    Make sure that your butter is at room temperature to make a smoother dough.

    The dough should not be too dry.

    Chill the dough for at least 30 minutes or up to a day before shaping the cookies. This will help it to hold its shape and prevent them from spreading too much during baking.

    Make sure to leave 2 inch space between the cookies on the baking tray to allow for spreading during baking.

    Keep an eye on the cookies while baking to avoid overbaking or underbaking. They should be lightly golden brown when done.

    You can experiment with different flavors such as cardamom, almond, chocolate and cinnamon.

    FAQs

    What is the difference between Koulouria and koulourakia?

    They both are completely different. Koulouria (singular: koulouri) are a type of round bread rings which has a sesame seed studded crunchy outside and soft inside. Koulourakia are a variety of butter cookies flavored with orange and vanilla.

    Can I use margarine instead of butter for koulourakia?

    Yes! You can. However, the taste and texture will be slightly different.

    Why did my cookies crack?

    Too much flour or not enough moisture in the flour will make your dough dry. If your dough is too dry, your cookies will crack.
    Also, if you twist the cookies too tightly, they may crack during baking.

    Can I freeze koulourakia dough?

    Absolutely! Place it in a freezer-safe bag or container and store in the freezer for a month or two.

    Can I freeze baked cookies?

    Yes! Once the cookies are cooled completely, transfer them to a freezer-safe Ziplock bag or container and store them in the freezer for up to 3 months.

    Step by step instructions:

    In a mixing bowl, combine sugar and orange zest. Rub the mixture together with your fingers until it is well combined.

    Add softened unsalted butter to the sugar mixture and beat until light and creamy.

    Once it is light and fluffy, add orange juice, vanilla and milk to it and beat until combined.

    Add baking powder, baking soda and salt to the bowl and mix well.

    Add flour little by little to the butter mixture.

    Beat until a dough forms.

    If the dough too sticky add little more flour and mix.

    Make a smooth dough and let it chill for 30 minutes.

    Divide the dough into 21-22 round balls.

    Roll the dough into a 7 inch rope.

    Fold it in half and twist.

    Arrange them on a lined baking tray spacing 2 inches apart.

    Brush them with milk and sprinkle sesame seeds on top.

    Bake them in the preheated oven for about 20-25 minutes or until light golden brown at 180 degrees C.
