    What is coconut halwa?

    Coconut halwa or Nariyal ka Halwa is a simple and delicious Indian dessert that is often made during festivals such as Krishnashtami, Diwali and Holi. It is typically made by cooking freshly grated coconut, sugar and milk together until it thickens.

    Coconut halwa with condensed milk is a variation of the traditional coconut halwa. The addition of condensed milk will give a rich and creamy texture to the halwa and will also reduces the cooking time by eliminating the need of stirring and cooking for longer period of time.

    It can be made easily with 4-5 ingredients and is a wonderful dessert for special occasions.

    Ingredients & Substitutions:

    Coconut - You can use fresh or frozen coconut in this recipe.

    Sweetened Condensed Milk - It gives a rich and creamy texture to the dessert. Add more if you want more sweetness and cook for little longer.

    Milk - Full-fat or low-fat milk can be used.

    Ghee - Ghee is clarified butter, you can get it from any Indian store or online. If you can't find ghee, replace it with equal quantity of melted butter or coconut oil.

    Cardamom - For the best flavor, use freshly ground cardamom seeds if possible.

    Nuts - You can use any of your favorite nuts.

    Storage suggestions:

    If you are storing the halwa at room temperature, consume it within a day.

    It can be stored in the refrigerator for up to 2 days.

    If you want to store it for longer period of time, freeze it for up to 1-2 months.

    Serving suggestions:

    It can be served as a dessert or sweet snack. In India, it is often offered as prasad during festivals and religious occasions.

    Coconut halwa can also be used as a filling in desserts like dumplings, pies, cakes, and turnovers to make a fusion dessert.

    Tips & Notes:

    Use freshly grated coconut for the best taste and flavor if possible. You could also use frozen one if you don't have fresh ones in hand. Thaw it before cooking.

    Stir the halwa continuously while cooking to avoid burning.

    Do not overcook the mixture, it can make the halwa hard and chewy.

    You can also add some ghee-roasted cashews and raisins to it.

    Step by step instructions:

    Heat 2 tablespoons of ghee in a wide pan.

    Add coconut and roast for 2-3 minutes.

    Add milk and condensed milk to the pan and mix everything until well combined.

    Keep stirring and cook on a medium flame for 6-7 minutes until the mixture thickens and starts leaving the sides of the pan.

    Add ground cardamom and give it a mix.

    Remove it from heat when the halwa starts leaving the sides of the pan.

    Let it cool down a bit and serve.

    Sprinkle nuts on top before serving.

    Ingredients

    Motichoor Ladoos - Homemade or store-bought ladoos can be used in this recipe. You can get these ladoos from any Indian sweet shops or mithai shops. Any leftover ladoos can be used to make this dessert. Frozen ladoos can be used as well.

    White Chocolate - I have used white chocolate bar in this recipe. You could also use white chocolate chips, almond bark or melting wafers.

    Nuts & Edible silver leaf - These are optional but they definitely enhance the look and taste of the truffles. You can any of your favorite nuts or sprinkles.

    Storage suggestions:

    These can be stored for up to 4 days in refrigerator.

    Place them in an airtight container and store them in the refrigerator.

    Serving suggestions:

    Serve them chilled as a dessert

    These can be a perfect edible gift during Holi, Diwali and Christmas!

    Tips & Notes:

    Use a good quality chocolate for the best taste and flavor.

    If you are using chocolate slab, chop them into fine pieces, it will melt evenly.

    Sprinkle toppings immediately, otherwise they won't stick.

    If you want to make bite-sized truffles, crumble the laddus and roll into desired sized balls before chilling.

    Step by step instructions:

    Arrange the laddus on a lined plate or tray and let them chill in the freezer for 30 minutes.

    Heat some water in a pan or vessel over low heat and place a heat resistant bowl on top of the water pot.

    Add chopped white chocolate into the top bowl.

    Keep stirring with a spatula until it is almost melted.

    Remove it from the heat and continue stirring until smooth and shiny.

    Transfer it to a small bowl.

    Take the laddus out of the freezer.

    Dip each chilled ladoo into the melted chocolate and coat it well.

    Tap to remove the excess chocolate.

    Place it back to the lined plate or tray.

    Immediately, sprinkle chopped nuts on top.

    Let them set and serve!

    Pui Shaker Bora - A popular Bengali tea-time snack made with malabar spinach, red lentils and spices. These crispy and flavorful fritters make a perfect addition to any festive spread!

    What is pui shak bora?

    Pui Shak er bora is a traditional Bengali style fried fritters made with pui shak, or Malabar Spinach, red lentils, and spices. These are crispy outside and soft inside.

    To make these fritters, the malabar spinach leaves, onions, chillies. rice flour and spices are mixed with a batter made of soaked red lentils or masoor dal, then deep fried until golden brown and crispy.

    It is a popular and delicious tea-time snacks in Bengal and Bangladesh. These are often served with ketchup or chutney.

    Ingredients:

    Malabar Spinach - You can replace it with chopped spinach if you can't find malabar spinach.

    Red Lentils - You could also use equal quantity of moong dal / split mung beans in the place of red lentils/masoor dal.

    Ginger Garlic Paste - Do not skip adding ginger and garlic. If you want to use fresh garlic cloves and chopped ginger, grind it along with soaked lentils.

    Rice Flour - It helps as a binding agent and makes them crispy. You can replace it with any other flour.

    Turmeric Powder - This is totally optional.

    Cumin - Do not skip adding cumin. It helps in digestion. You can also replace it with crushed or ground coriander seeds.

    Onion - You could use any type of onion in this recipe.

    Green Chillies - You can substitute with other types of fresh or dried chilies.

    Storage suggestions:

    The fried fritters can be stored at room temperature for up to a day. If you have any leftovers, store them in the refrigerator, but note that they will lose their crispiness. To reheat, use a microwave or oven.

    You can store the batter in the refrigerator for up to a day or two. Remove it from the fridge and bring it to room temperature before deep-frying in hot oil.

    Serving suggestions:

    It can be served as a snack or appetizer on any occasion. It's a perfect tea-time or party snack during holi parties or diwali parties.

    It tastes great with any Indian chutneys such as green chutney or tamarind chutney. They can also be served with tomato ketchup or any other dips.

    Tips & Notes:

    Do not reduce the soaking time, it helps making the batter smooth and improves the texture of the fritters.

    After soaking the lentils, make sure to drain the excess water to prevent runny batter. The batter should be thick enough. Otherwise, it will be difficult to shape the fritters.

    Make sure you are using fresh and tender malabar spinach for the best flavor and texture.

    Do not fry them over a low flame.

    Step by step instructions:

    Wash and soak red lentils in plenty of water for 2-3 hours.

    Drain water and grind the soaked lentils to a smooth batter. Add little water while grinding if needed.

    Transfer it to a mixing bowl.

    Rinse malabar spinach leaves and discard any hard stems. Chop the leaves and add them to the lentil batter.

    Add chopped onions, ginger onion paste, chopped green chilli, turmeric powder, rice flour, salt and cumin powder to the batter.

    Mix everything well to make a thick batter. Add more flour if you feel the batter is not thick enough.

    Take a small portion of the prepared batter and gently drop them into the hot oil.

    Deep fry them over the medium-high flame until they are crispy and golden brown color.

    Take them out of the oil and place them on a kitchen towel to remove all the excess oil.

    Serve hot with a cup of tea or coffee.

    What is Thandai?

    It is typically made by soaking and grinding a mixture of nuts and spices into a fine paste. This paste is then mixed with milk and sugar to make a flavorful beverage.

    Sweetener - I have used sugar in this recipe, but you could use any of your favorite sweeteners, such as maple syrup, date paste, honey or agave.

    Thandai Powder - I would recommend using homemade thandai powder for a better flavor and taste. You can also use store-bought powder.

    Chia Seeds - These are the main ingredient, they help thicken the pudding. You can use white or black chia seeds.

    Saffron - It gives a wonderful flavor and color to the pudding. You can skip it if you want.

    Nuts & Rose Petals - You can top your chia pudding with any chopped nuts and dried rose petals. You could also add some chopped fresh fruits on top for added taste and nutrition.

    Storage suggestions:

    This will keep in the refrigerator for a couple of days. If you want to store it for longer, freeze it for up to a month.

    If you are adding any toppings like fresh fruits or nuts, add them just before serving. Otherwise, they will turn into soggy or mushy in the pudding.

    Serving suggestions:

    Serve it as breakfast, snack or dessert. This recipe is so versatile and can be enjoyed at any time of the day.

    Top it with any of your favorite toppings like fruits, nuts, honey and chocolate.

    It tastes best when served chilled.

    Can I make this with leftover thandai?

    Absolutely! Using leftover thandai to make Chia Pudding is a lovely way to use up leftovers. Simply replace the milk with leftover thandai drink, and skip adding thandai powder and sugar since the leftover drink already contains those ingredients.

    Tips & Notes

    To adjust the sweetness, add more or less sweetener according to your taste.

    For a stronger thandai flavor, increase the amount of powder in the recipe.

    The thandai powder already has cardamom in it. If you prefer more cardamom flavor, you can add a small amount of ground cardamom to the pudding.

    You can also decorate it with edible silver foil to make the dish festive and more elegant.

    Avocado Paratha - Nutritious, delicious and flavorful Indian fusion flatbread made with whole wheat flour, mashed avocado, spices and cilantro.

    What is avocado paratha?

    Avocado paratha / Chapati is a spiced Indian fusion flatbread made with whole wheat flour, mashed avocado and spices. The paratha dough is prepared combining ripe mashed avocado with wheat flour and flavoring it with carom seeds, ground cumin, red chili powder, and cilantro. Then the dough is rolled out into flatbreads, cooked on a pan or tawa until golden brown on both sides.

    It can be served with chutney or curries.

    Serving suggestions:

    This paratha is a great meal for breakfast, lunch, or dinner and can be served with raitas, plain yogurt, curries, dips and chutneys.

    Serve them warm with your favorite side dish.

    These are also great to pack for lunch boxes.

    Storage suggestions:

    I don't recommend to make the dough ahead of time. However, you can store the cooked parathas in the refrigerator for couple of days and re-heat later.

    Tips & Notes:

    Make sure to use ripe avocados for the best flavor and texture.

    Mash the avocados well to ensure there are no chunks in the dough. A smooth avocado mixture will make the dough easier to roll out. Alternatively, you can blend the avocado and cilantro into a fine paste instead of mashing.

    The dough should be soft and pliable. Start with small amounts of water and add little by little as needed.

    Don't skip adding lemon juice, as it will prevent the avocado from discoloring.

    Skip ajwain (carom seeds) if you can't find them.

    You can experiment with different herbs and spices.

    Cook the paratha over a medium-high heat and make sure it cooks properly on both sides.

    Step by step instructions:

    Cut the avocado in half and remove the pit.

    Scoop out the avocado into a bowl.

    Mash it well using a fork or masher. Add lemon juice and mix well.

    Add wheat flour, salt, red chilli powder, carom seeds, cumin powder, turmeric and chopped cilantro to the mashed avocado mixture.

    Mix everything well without adding any water first.

    Sprinkle water little by little as needed and knead the mixture into a soft dough.

    Divide the dough into 6-7 equal-sized round balls.

    Dust each ball with wheat flour and roll it using a rolling pin to make a thin or slightly thick round circle.

    Transfer the rolled dough to a hot pan and press gently and cook for a minute.

    Flip the paratha and drizzle some oil and cook on both sides.

    Remove it from the pan and serve hot with your favorite side dish.

    Motichoor Ladoos - Homemade or store-bought ladoos can be used in this recipe. You can get these ladoos from any Indian sweet shops or mithai shops. Any leftover ladoos can be used to make this dessert. Frozen ladoos can be used as well.

    If you can't find motichoor laddu, you can replace them with boondi laddus.

    Milk - Use full-fat milk for a rich and creamy kheer. If you prefer a lighter version of the kheer, use skimmed milk. However, the texture and creaminess of the kheer may be vary. I have used skimmed milk in this recipe.

    Sugar - The quantity of sugar will depend on the sweetness of the laddus you are using.

    Nuts - You can use any nuts of your choice, I have used almonds, cashews, or pistachios. Chop them into small pieces and add them to the kheer while boiling.

    Saffron - It adds a wonderful and rich flavor to the dessert. You can skip it if you want.

    Cardamom - Do not skip adding cardamom. Use freshly ground cardamom if possible.

    How long can I store it for?

    It can be stored in the refrigerator for 2-3 days if stored properly in an airtight-container.

    If you want to store it for longer period, you can freeze it for up to a month.

    Serving suggestions:

    For the best taste, refrigerate the kheer for a few hours before serving. It tastes amazing when served chilled.

    If you prefer warm kheer, you can reheat it on low heat until it's warm. Be sure to stir it constantly to prevent it from burning. You can also microwave it.

    Serve as a dessert or a snack, and don't forget to sprinkle some chopped nuts on top before serving.

    This kheer makes a perfect dessert for festivals and Diwali or Holi parties. You can serve it in small glasses for an elegant presentation.

    Tips & Notes:

    Use fresh ingredients for the best texture and taste.

    Gently crush the ladoos using your fingers or a fork. Do not turn them into a paste, and make sure not to crush the pearls.

    Santa's whiskers are one of the popular cookies around the holiday season. These are crunchy slice and bake cookies made with candied cherries, pecans and coconut. They are often enjoyed with a cup of hot cocoa or coffee.

    Ingredients:

    All- Purpose Flour - Also known as plain flour. I haven't tried these cookies with any gluten-free flours yet.

    Butter - I have used unsalted butter. Skip salt if you are going to use salted butter.

    Sugar - Make sure you are using fine granulated sugar. It adds a wonderful crunch to the cookies.

    Candied Cherries - Traditionally, both red and green candied cherries are used to make santa's whiskers. If you don't have both in hand, stick to one color. You could also maraschino cherries.

    Pecans - These can be substituted with chopped walnuts, almonds or hazelnuts.

    Coconut - The dough needs to be rolled in sweetened or unsweetened flaked coconut before chilling. You can skip this step, if you don't love coconut in your cookies.

    Vanilla - Swap it with almond extract for a different flavor.

    Variations:

    Substitute vanilla with almond extract for a flavor variation.

    Drizzle icing or melted chocolate oven the baked cookies to make them more pretty and delicious.

    If you want to a soft cookie, cut the chilled dough into thick slices and bake.

    Make sure the dough is chilled enough before baking to prevent the cookies from spreading while baking.

    Chill the dough for at least 4 hours.

    Cut the dough into even slices to ensure even baking.

    You can also store the unbaked cookie dough in the refrigerator for 4-5 days. If you want to store them longer period of time, freeze them for about 3 months.

    Can we double this recipe?

    Yes, you can! If you want double the recipe, divide the dough into two parts and roll into 8 inch logs. No changes needed.

    Step by step instructions:

    Combine butter and sugar in a mixing bowl.

    Beat everything using a spatula or whisk until the butter is light and fluffy.

    Add in vanilla and milk and mix well.

    Add salt and flour to the butter-sugar mixture.

    Gently mix everything until well combined.

    Add in chopped pecans and chopped candied fruits to the dough.

    Gently mix the dough until combined.

    Mix everything using your hand to make a soft dough. Do not knead it.

    Shape the dough into a 8 inch long roll and roll it in flaked coconut.

    Wrap it with a parchment paper or cling film and chill it in the refrigerator for at least 4 hours or up to a day.

    Preheat the oven at 180 degrees C.

    Line a baking sheet and keep it aside.

    Remove the dough from the fridge.

    Cut the chilled dough into ¼ inch even slices.

    Place them on the lined baking tray.

    Immediately, place the in the preheated oven and bake for 15-18 minutes or until the edges are light golden brown color at 180 degrees C.

    When they are set and baked, take them out of the oven and let them cool down for a couple of minutes.

    Transfer them to a wire rack and let them cool completely.

    Store them in an airtight container.

    Ingredients:

    Plain Flour - Also known as all-purpose flour. I haven't tried any gluten-free flours yet.

    Vanilla Extract - The original recipe calls for peppermint extract for the dough, but I felt it will be too strong for us and replaced it with vanilla. You can substitute it with peppermint extract if you want.

    Peppermint Extract - I have added peppermint extract to the frosting. If you can't find it, replace it with peppermint oil.

    Butter - Make sure the butter is softened.

    Candy Canes - I have used crushed peppermint candy canes here. You can also use peppermint candies.

    Milk - You can swap it with water.

    To freeze the cookies, place them in a freezer-safe container or bag. Add a piece of wax paper or parchment paper between each layer of cookies to prevent the icing from sticking to other cookies.

    Whenever you want to have a cookie, allow them to thaw at room temperature on in the refrigerator.

    If you love spiced cookies, add some ground cinnamon or pumpkin pie spice to the dough to make them more festive.

    You can experiment with different flavors such as almond and orange.

    Add a little bit of red/pink food coloring to the frosting if needed.

    You can use any of your favorite icing to decorate the cookies. Cream cheese frosting will go really well with these cookies. You could also add a little bit of red food color to the dough and decorate the cookies with cream cheese frosting to make your red velvet meltaways.

    Add a bit of cocoa powder or mini chocolate chips to the dough to make chocolate peppermint meltaways.

    Step by step instructions:

    Combine both flours in a small mixing bowl and keep it aside until use.

    To make the dough, combine butter and powdered sugar in a mixing bowl.

    Beat well until the butter is light and fluffy.

    Add vanilla and mix until combined.

    Add the flour mixture to the creamed butter.

    Gently fold everything to make a dough.

    Cover the dough with a cling film or plastic wrap and chill the dough in the refrigerator for 2 hours.

    Remove the dough from the refrigerator.

    Preheat the oven at 180 degrees C.

    Line a baking sheet with parchment paper and keep it aside.

    If the dough is too hard to handle, let it sit on the counter top for few minutes.

    Divide the chilled dough into 1-inch small balls.

    Arrange them on the lined baking sheet spacing 2 inches apart.

    Let them bake in the preheated oven for 10-15 minutes or until the bottom of cookies lightly browned at 180 degrees C.

    When the bottoms are light browned, take them out of the oven and let them cool completely before decorating them with icing.

    Combine softened butter, peppermint extract and milk in a mixing bowl.

    Add powdered sugar and mix until nice and smooth.

    Add little more milk to the frosting if needed.

    Once the cookies are cooled completely, spread a small spoonful of prepared frosting over the cookies.

    Place them back to the tray and sprinkle with crushed candy canes.

    Leave them for some time until frosting has set.

    Store them in an airtight container.

    Serve and enjoy!

    Snowball cookies, also known as Russian tea cakes or Mexican wedding cookies, are tiny, buttery cookies that are rolled in powdered sugar. They are often made with pecans or walnuts and have a crumbly, melt-in-your-mouth texture.

    These classic cookies are one of the popular treats during Christmas, but they can be enjoyed any time of year.

    There are many variations of snowball cookies, and chocolate chip snowballs are one among them all.

    Ingredients:

    Chocolate Chips - Make sure you are using a good quality mini chocolate chips. Do not use the regular size chips.

    Unsalted Butter - Skip salt if you are using salted butter.

    Plain Flour - Also known as all-purpose flour. I haven't tried any gluten-free flours yet.

    Corn Flour - Also known as corn starch. You can replace it with same quantity of plain flour.

    Vanilla - You could also use a good quality almond extract.

    Powdered Sugar

    Salt

    Variations:

    You can swap vanilla with almond extract or peppermint extract for a flavor variation.

    To make them more chocolatey, add some cocoa powder to the cookie dough.

    You could also substitute dark chocolate chips with white chocolate chips.

    Storage suggestions:

    You can store the unbaked stuffed cookie balls in the refrigerator for 4-5 days. If you want to store them longer, freeze them for about 2 months.

    You can store the baked ones in an airtight container at room temperature for up to 3-4 weeks.

    Serving suggestions:

    These choco chip cookies tastes best when served with a cup of coffee or milk.

    They can also be served as a sweet treat at parties.

    Can the baked snowballs be frozen?

    Absolutely, once the cookies are baked and rolled in powdered sugar, arrange them in an airtight container and separate the layers with parchment papers.  You can freeze them for up to 2 months. Let them thaw at room temperature and roll them in some powdered sugar again before serving.

    Step by step instructions:

    Combine all-purpose flour, corn flour and salt in a small mixing bowl. Keep it aside.

    In a mixing bowl, add softened butter and powdered sugar. Mix well until it is smooth and creamy.

    Add vanilla to the creamed butter.

    Give it a good stir.

    Add the flour mixture to the butter and mix everything to make a smooth dough using a spatula.

    Finally add the mini chocolate chips.

    Gently fold everything.

    Wrap the prepared dough with cling film and refrigerate it for an hour or until the dough becomes firm.

    Buckeyes are often served at holiday parties and special occasions, and they can be made ahead of time.

    If you are not able to roll the dough into balls, chill it in the fridge for sometime to harden the dough.

    Let them chill in the refrigerator until firm, around 20 minutes.

    Heat some water in a pan or vessel over low heat and place a heat resistant bowl on top of the water pot.

    Add chocolate and coconut oil into the top bowl.

    Keep stirring with a spatula until it is almost melted.

    Remove it from the heat and continue stirring until smooth and shiny.

    Transfer the melted chocolate to a small bowl.

    Take the peanut butter balls out of the refrigerator.

    Pick them using a toothpick and dip it into the melted chocolate, leaving a small portion of the peanut butter exposed.

    Place the chocolate dipped peanut butter balls back onto the lined tray and remove toothpick.

    Smooth out the hole using a knife.

    Chill them in the refrigerator until the chocolate has set.
