    Vegan Persimmon Smoothie Recipe - Healthy, creamy, and a flavorful vegan smoothie with persimmons (kaki), banana, almond milk, and cinnamon. A perfect winter smoothie with seasonal persimmons.

    What is Persimmon Smoothie?

    It is a simple, delicious, and thick vegan beverage made with seasonal persimmons, ripe banana, and flavored with cinnamon and vanilla. It is a perfect and easy way to use the persimmons when they are in the markets.

    If your banana and persimmon are ripe enough, you really don't need any extra sugar. I have not added any sweetener.

    Ingredients:

    Persimmons: Any kind of persimmons can be used but they should be ripe. Overripe persimmons and frozen persimmon would work well.

    Banana: Banana makes the smoothie thick and sweet. Make sure the banana is ripe enough. If it is not ripe enough, you may need to add additional sweeteners such as maple syrup or sugar to the smoothie.

    Almond Milk: It can be swapped with any plant-based milk. You could also add some plant-based yogurt.

    Cinnamon: Cinnamon goes well with persimmons. Do not skip it.

    Vanilla

    Storage suggestions:

    It can be stored in the refrigerator for up to 2 days.

    If you want to store it for longer, freeze it for a few months.

    Variations:

    Flax seeds, nuts, or nut butter can be added for extra flavor and nutrition.

    A bit of chocolate goes well with this smoothie.

    If you are not vegan, feel free to use dairy.

    Plant-based yogurt can also be added.

    Wash persimmons and remove the leaves. The peel is very thin and edible so you don't need to peel them.

    Chop the persimmons into slices.

    Creamy Avocado Yogurt Dip

    Easy, creamy, healthy and delicious avocado dip with greek yogurt and cilantro. You just need 5 minutes and 6 ingredients to make this creamy avocado dip. It is a great addition to your appetizer menu.

    This easy and delicious avocado yogurt dip is so healthy and perfect to serve with nachos, veggies, sandwiches and pita chips. This creamy avocado dip is one of the best and quick avocado dip recipes that is perfect for any occasion.

    Ingredients:

    Greek Yogurt - I recommend using full-fat or low-flat greek yogurt in this recipe to make a creamy dip. You can also replace it with sour cream.

    Garlic - I have used fresh garlic cloves in this recipe. If you want to replace the fresh garlic with garlic powder, use ¼ teaspoon of garlic powder.

    Cilantro - You can skip cilantro or replace it with parsley.

    Cayenne Pepper - It is totally optional. You could also replace it with paprika.

    Lemon / Lime Juice - Do not skip adding lemon, it will keep the avocado from browning.

    Can I make it without a food processor?

    Yes, if you don't have a blender or food processor, you can make it using a fork and bowl. Mash avocados using a fork and mix it with the remaining ingredients, make sure you finely chop cilantro.

    How long can I store it for?

    It can be refrigerated for up to 3 days in an airtight container.

    Cut the avocado in half and remove the pit.

    Scoop out the avocado into a food processor.

    Add cilantro, yogurt, cayenne pepper, salt, group pepper, lemon juice and garlic to the food processor.

    Blend everything well.

    Scrap down the edges using a spoon or spatula and grind until you get a creamy dip.

    Transfer it to a bowl and serve it with chopped veggies or chips.

    Swedish Chocolate Balls (Chokladbollar)

    Chokladbollar or Havergrynkugler or Kokosbollar - Classic and delicious Swedish chocolate oat balls made with just 6 ingredients. A no-bake and no-cook sweet treat for Christmas!

    What are Chokladbollar?

    Chokladbollar are a classic Swedish and Danish delicacy made with oats, butter, cocoa powder, and coffee. These no-bake chocolate oats balls are called Chokladbollar or Kokosbollar or Havrebollar in Swedish and Havergrynkugler in Danish. We first tasted them in a rustic cellar cafe at the city center (Gamlastan) in Stockholm on Christmas eve and instantly fell in love with them. We found out that the Swedes consume them consistently over Fika (short coffee breaks in Sweden) while some Scandinavian countries traditionally make these for Christmas.

    Why you'll love this recipe

    Swedish chocolate balls requires no baking and no cooking.

    They don't need any fancy ingredients. Only need 6 staple ingredients.

    These little chocolate treats are perfect for Fika and Christmas!

    Ingredients

    Oats - Rolled oats work best for this recipe. If you don't have a food processer or blender, want to make them using a bowl, you may use instant cooking oats instead of rolled oats.

    Butter - It has to be at room temperature. Skip adding salt if you are going to use salted butter. Feel free to use vegan butter for the vegan version of chokladbollar.

    Desiccated Coconut - I have rolled chokladbollar in coconut. You may replace it with sprinkles or cocoa powder.

    Sugar

    Cocao Powder - I have used cacao powder. You can also use a good-quality unsweetened cocoa powder.

    Strong Brewed Coffee

    Vanilla

    Salt

    How to make it vegan?

    Swap butter with vegan butter.

    How long can I store them for?

    They can be stored in the refrigerator for up to a week. If you want to store them for longer, freeze them for up to a month or two.

    Serving suggestions:

    These are perfect with a cup of coffee or tea and can also be served as dessert.

    Tips & Notes:

    If you don't want to add coffee, replace it with orange juice or skip it.

    If you are going to use instant oats, do not use a blender or food processor. Just combine all the ingredients in a bowl using a spatula. Or you can cream the sugar and butter first and add the remaining ingredients next.

    If you feel there is too much liquid and you are not able to roll it into balls, add a bit more oats to it.

    Make sure you store them in the refrigerator and let them sit out a bit before serving.

    Step by step instructions:

    Add rolled oats in a food processor. If you are using instant oats, skip the blending process.

    Add butter, cocoa powder, sugar, coffee, salt and vanilla.

    Blend everything until you get a coarse dough.

    Add more oats at this stage if you are not able to roll it into balls.

    Divide the dough into round balls.

    Roll each chocolate oat ball in coconut.

    Refrigerate them for at least an hour to firm them up.

    Let them sit on the countertop for a bit before serving so they're not completely firm.

    What is a chocolate crinkle cookie?

    Chocolate crinkles are a classic Christmas cookie with a soft and fudgy center and crispy powdered sugar outer layer. These delicious holiday treats are super easy and fun to make and are a great addition to your cookie tray. The cookie dough looks more like a cake batter and you will need to refrigerate it for some time before you bake the cookies. Unless the snowball cookies, these crinkle cookies need to be rolled in the powdered sugar before baking to get the beautiful cracks/crinkles on the top.

    Plain Flour - I have not made them with any other flout but you may use wheat flour.

    Sugar - Granulated sugar or caster sugar can be used.

    Cocoa Powder - Either cocoa powder or cacao powder would work well. Use the unsweetened one.

    Vanilla - You could leave it out.

    Oil - I have used sunflower oil in this recipe. You could also use olive oil if you want.

    Milk - I have replaced eggs with milk. Use plant-based milk to make them vegan.

    Baking Powder - Do not skip adding baking powder and make sure it is fresh. It is a rising agent and helps to get the crinkles while baking.

    Powdered Sugar - Use a generous amount of icing sugar or powdered sugar to get a beautiful look.

    How to make it vegan?

    Replace milk with the same amount of any plant-based milk such as oats milk or almond milk to make it vegan.

    How long can you store the unbaked cookie dough for?

    You can prepare the dough beforehand and store it in the refrigerator for up to 3 days. Roll them in the powdered sugar just before you bake.

    The unbaked cookie dough is totally freezer-friendly. You can freeze it for up to 3 months. I would recommend dividing the dough into balls before freezing. Whenever you want to bake, thaw the dough ball for 30-40 minutes and roll them in the powdered sugar, and bake.

    How long can you store baked cookies?

    They should stay well for a week at room temperature. If you want to store them for longer, freeze them for up to 3 months.

    Can I double this recipe?

    Absolutely! this recipe can be doubled easily. You can double or triple the recipe in the recipe card below by clicking on 2x or 3x or by adjusting the serving size.

    Tips & Notes:

    Do not overwork the dough.

    The dough needs to be chilled for at least an hour (preferably overnight). If you are not able to roll the dough, refrigerate it for some more time.

    Make sure you roll the dough balls in the powdered sugar really well. They need to be well coated to get a snowy white top.

    Do not overbake the cookies, remove them from the oven once the cracks are developed and edges are set.

    They will come out soft but will harden as they cool.

    Step by step instructions:

    Combine flour, salt and baking powder in a bowl and set aside.

    In a mixing bowl, add cocoa powder, sugar, vanilla, oil and milk.

    Whisk everything together until smooth.

    Add the flour mixture to the cocoa mixture.

    Gently mix everything together until well combined.

    Cover the bowl with plastic wrap and refrigerate it for an hour or overnight.

    Once the dough is firm and chilled, remove it from the refrigerator.

    Preheat the oven to 180 degrees C.

    Line a baking sheet with a parchment paper.

    Take a spoonful of dough out of it.

    And roll it into 1 inch round balls.

    Roll each ball in powdered sugar to coat well.

    Place the sugar coated dough balls on a lined baking tray and bake them in the preheated oven for about 10-12 minutes at 180 degrees C or until the crinkles are developed and edges are set.

    Once they are baked, remove the tray from the oven and let them cool down slightly.

    Transfer the cookies to a wire rack and let them cool completely.

    Condensed Milk Choco Chip Cookies - Super delicious and easy chocolate chip cookies made with condensed milk. So good with a cup of coffee and perfect for any occasion.

    What are condensed milk chocolate chip cookies?

    The cookie dough is made by combining the basic pantry ingredients such as flour, condensed milk, butter, and chocolate chips. It is naturally an egg-free recipe, if you are looking for an eggless cookie recipe then this one is for you.

    Condensed milk cookies are rich, delicious, and perfect to make during Christmas. These cookies are best if you want to use up any leftover condensed milk.

    Ingredients:

    Plain Flour - I have not replaced it with any other flour but you may use whole wheat flour.

    Unsalted Butter - You can replace it with margarine but I would suggest butter in this recipe. Skip adding salt if you are going to use salted butter.

    Caster Sugar - I have used caster sugar (fine sugar) in this recipe. You can also use the regular granulated sugar but you will need to beat the sugar and butter a bit longer.

    Storage suggestions:

    You can prepare the dough beforehand and store it in the refrigerator for up to 2 days. Before you make the cookies, make sure the dough is at room temperature, otherwise, they won't spread while baking.

    The unbaked cookie dough is totally freezer-friendly. You can freeze it for up to 2 months. I would recommend dividing the dough into balls before freezing.

    The baked cookies can be stored in an airtight container for 2 days at room temperature. If you want to store them for longer, keep them in the refrigerator for a week. You can also freeze the baked cookies for up to 2 months.

    Serving suggestions:

    They are perfect to make for the holiday season and can make a great edible gift.

    They are great when served with coffee, tea, or milk.

    Tips & Notes

    The baking time depends on the size of the cookies. If you are dividing the dough into 1-inch balls, reduce the baking time.

    The edges of the cookies should be slightly golden. If you want your cookies to be on the softer side reduce the baking time. If you want them very crispy, increase the baking time.

    Divide the cookie dough into 8-10 balls and flatten them a bit.

It is a no-flour, gluten-free and grain-free pizza and a healthy alternative to regular pizza. These are perfect to make during Thanksgiving and Christmas!

    Ingredients:

    Sweet Potato - I have used orange sweet potatoes here. They can also be swapped with potatoes or white sweet potatoes.

    Pizza Sauce - If you don't have pizza sauce, tomato ketchup or pesto can be used.

    Toppings - I have used onion, tomatoes, and bell peppers in this recipe. You can also add olives.

    Mozzarella Cheese - Use cheddar for a different flavor.

    Dried Basil / Dried Oregano - Feel free to use fresh herbs if you have them handy.

    Salt & Pepper

    Can I prepare the sweet potato base in advance?

    Yes! Bake them until they are tender and slightly brown in color. Let them cool completely and store in the refrigerator for up to 3 days. These are perfect for meal prep, just add toppings and bake whenever you want a bite.

    Can I freeze the cooked pizzas?

    They are totally freezer-friendly. You can freeze any leftovers for up to a month or two.

    Serving suggestions:

    These can be served hot or cold.

    Perfect for lunch, snack, appetizer, or dinner.

    Topping ideas:

    Sprinkle some red chilli flakes.

    You can add whatever toppings you love such as olives, corn, or cheeses.

    Spinach or arugula can also be added.

    Tips & Notes:

    DO NOT overbake the sweet potatoes, they should be tender and firm.

    The baking time depends on the thickness of the sweet potato rounds.

    Make sure you slice the sweet potatoes equally thick for even cooking.

    Step by step instructions:

    Preheat the oven to 190 degrees C.

    Wash and slice the sweet potato into ¼ inch thick rounds.

    Add the rounds to a mixing bowl. Add salt, pepper powder and olive oil and give them a mix to coat.

    Arrange the rounds on a baking tray and bake them in the preheated oven for 10-12 minutes or until the bottoms are slightly brown colored.

    Remove the tray from the oven and flip all the slices.

    Bake them again for another 5-7 minutes or until slightly browned and cooked.

    (If you are doing meal prep, you can cool them at this stage and store them in the refrigerator for up to 2-3 days.)

    Spread a teaspoon of sauce on each slice evenly.

    Top them with your favorite toppings and sprinkle some salt and pepper.

    Top them with some grated mozzarella or cheddar cheese.

    Finally, sprinkle some dried oregano or basil on top.

    Bake them for 5-8 minutes or until the cheese melts.

    Ingredients

    • 1 Large Sweet Potato
    • ½ Cup Pizza Sauce
    • 1 Cup Mozzarella Cheese or as needed
    • 1 Small Bell Pepper
    • 1 Small Onion

    Instructions

    • Wash and slice the sweet potato into ¼ inch thick slices.

    Bendakaya Pulusu - Andhra Style Okra in Tamarind Gravy

    Bendakaya Pulusu Recipe - Super easy and delicious Andhra style tamarind-based okra stew. It tastes amazing when served with rice.

    What is bendakaya pulusu?

    Bendakaya means Okra or ladies finger and Pulusu means tangy stew in Telugu. Bendakaya Pulusu is a traditional stew from Andhra Cusine. There are many versions of making the classic Andhra Pulusu and can be made with a wide range of vegetables.

    Okra pulusu is one of the easy and comforting dishes and tastes great with hot steamed rice.

    We add more jaggery to our pulusu to make it a sweet and sour kind of gravy.

    Ingredients & Substitutions:

    Okra: Make sure you chop them into 1-2 inch pieces. You can also use potatoes along with okra. Frozen okra can also be used.

    Tomato: I have used fresh tomatoes and they can be replaced with canned ones.

    Onion: Any type of onion will work in this recipe. I use shallots sometimes.

    Mustard Seeds: Do not skip mustard seeds if possible. The tempered mustard seeds will add a great flavor and taste to the stew.

    Fenugreek Seeds: Do not skip adding fenugreek. If you can't find whole fenugreek seeds, use a pinch of fenugreek powder. You can find them in any Indian store.

    Cumin Seeds: You can skip them if you don't have them handy or add a little bit of cumin powder.

    Hing: Hing is Asafoetida. It is a very common ingredient in South Indian cuisine and adds a unique flavor to any dish. Use it if possible.

    Tamarind: It is the key ingredient in any kind of Andhra pulusu recipes. You will need to soak them in hot water for a few minutes and extract the juice. Can be replaced with store-bought tamarind paste.

    Jaggery: It balances the sourness and adds a wonderful sweet taste. Jaggery can be easily replaced with white sugar, brown sugar, coconut sugar, or palm sugar. Use more or less as per your taste.

    Red Chilli Powder: We use chili powder in a lot of recipes such as curries, lentils, and stews. Replace it with cayenne pepper or use more green chillies if you don't have chilli powder and cayenne.

    Green Chilli: Leave it if you don't have it and replace it with more chilli powder or cayenne pepper.

    Rice Flour: It is a thickening agent. You can easily replace it with whatever flour you have in hand.

    Curry Leaves & Cilantro: I recommend using both herbs. If not possible, try to add cilantro.

    Serving suggestions:

    It tastes amazing when served hot with rice. If you are not vegan, add a spoonful of ghee (clarified butter) on top while serving.

    Also, serve papads, or potato chips by side for the crunch.

    Storing suggestions:

    Store it in the refrigerator for up to 2-3 days.

    Step by step instrucions:

    Wash and pat dry okra / bendakaya using a kitchen towel. Chop them into 1-2 inch pieces and set them aside.

    Soak tamarind in hot water for 10 minutes and squeeze the extract. Discard the pulp.

    Mix rice flour with some water and keep it aside.

    Heat oil in a pan. Add mustard seeds, cumin seeds, fenugreek seeds and let them splutter.

    Then add curry leaves, slit green chilli, red chilli and hing. Give it a mix.

    Add sliced onions to the pan and fry until they are translucent.

    Once it is done, add chopped okra or ladies' fingers and saute everything for 4-5 minutes.

    Then add chopped tomato, turmeric powder and one cup of water to the pan. Mix everything well.

    Cover the pan with a lid and cook until they are half cooked.

    Give it a stir.

    Add strained tamarind extract, salt, jaggery and red chilli powder.

    Add 1-1.5 cups of water and mix. Add less water if you want it to be on the thicker side.

    Let it boil for another 8-10 minutes.

    Finally, add chopped cilantro on top and combine it well.

    Serve hot with rice.

    Instructions

    What is paneer puff?

    Paneer Puff is a popular and delicious Indian bakery-style savory snack made with puff pastry sheets and paneer (Indian cottage cheese). It has a flaky outer layer and flavorful paneer filling.

    There are other classic variations of puff fillings such as vegetable filling and egg filling.

    These puffs are very popular and available at most bakeries in India. Paneer puffs can be easily made at home using store-bought or homemade puff pastry sheets.

    Why we love this recipe

    Very quick and easy to make using store-bought puff pastry sheets!

    It's a perfect tea-time snack for evening and parties.

    Can be made with fewer ingredients.

    Ingredients:

    Puff Pastry Sheets: I have used store-bought sheets, you can use homemade ones too.

    Paneer: I have used cubed paneer in this recipe. If you don't want it to be chunky, crumble the paneer. You can use homemade or store-bought paneer.

    Spices: You can use whatever you have handy. If you don't have the mentioned spices, replace them with some garam masala.

    Ginger-garlic paste: Substitute it with finely chopped ginger and garlic cloves. Garlic powder can also be used.

    Are these puffs vegan?

    No, these are not vegan. To make them vegan, swap paneer with tofu and skip brushing the puffs with milk.

    Serving suggestions:

    Serve them hot or warm with ketchup or green chutney.

    They taste great with a cup of chai or coffee.

    Storage suggestions:

    Consume the baked puffs within a day.

    If you want to store them for longer, refrigerate the filled and unbacked puffs for up to 2 days. Remove them from the fridge whenever you want to bake them.

    Step by step instructions:

    Heat oil in a pan. Add cumin seeds and let them sizzle for few seconds.

    Add finely chopped green chilli and sliced onions to the pan and keep stirring until onions are translucent.

    Add ginger-garlic paste and stir for a minute.

    Now add chopped tomato, salt, cumin powder, turmeric powder and coriander powder.

    Mix well and let it cook until tomatoes are mushy.

    Cut the paneer block into small pieces and add them to the tomato-onion mixture.

    Mix everything until well coated.

    You can add some finely chopped cilantro at this stage.

    Turn off the flame and let it cool completely.

    Cut the thawed puff pastry into rectangles and fill each rectangle with a spoonful of prepared paneer filling.

    Apply little water around the edges using your finger.

    Fold and press the edges. Press the edges of the pastry sheet with a fork to seal them completely.

    Transfer them to a lined baking tray and brush the stuffed puffs with little milk to get a beautiful brown color.

    Pop them in the preheated oven and bake at 200 degrees C for 20-25 minutes or until they are golden brown.

    • Add finely chopped green chilli and sliced onions to the pan and keep stirring until onions are translucent.
    • Add ginger-garlic paste and stir for a minute.
    • Now add chopped tomato, salt, cumin powder, turmeric powder and coriander powder.
    • Mix well and let it cook until tomatoes are mushy.
    • Add cubed paneer to the tomato-onion mixture and mix well.
    • Turn off the flame and let it cool completely.
    • Fill the thawed puff pastry piece with a spoonful of prepared paneer filling.
    • Apply little water around the edges using your finger.
    • Fold and press the edges. Press the edges of the pastry sheet with a fork to seal them completely.
    • Transfer them to a lined baking tray and brush them with little milk.
    • Bake in the preheated oven and bake at 200 degrees C for 20-25 minutes or until they are golden brown.

    Plain Cream Cheese: Before you start the process, keep the cream cheese on the countertop for some time and let it comes to room temperature.

    Cherries: I have used fresh sweet cherries in this recipe. You can also use frozen cherries.

    Powdered Sugar: If you want to use cane sugar or brown sugar, grind them to a fine powder and use.

    Can I use frozen cherries?

    Yes, you can! Make sure you thaw the frozen cherries first and drain all the liquid. Replace it with fresh ones.

    Storage:

    It stays well for 1-2 days in the refrigerator. If you are making this for parties, you can make it the day before.

    What is oats idli?

    Idli is a traditional South Indian steamed cake, typically made by grinding and fermenting the soaked lentils. But there are plenty of instant versions of idli recipes with or without urad dal or lentils, oats Idly is one of the easy and quick versions of making idly.

    Oats idly is one of the healthy and easiest South Indian breakfast or dinner recipes. These are puffy and super soft and made with just a couple of ingredients. The best part is they are instant and require no fermentation.

    Ingredients

    Oats: I have used quick cooking oats here but they can be replaced with rolled oats as well.

    Idli Rava: I made these idlys without sooji or semolina and have used idly rava which is made of parboiled rice. You can get it from any Indian or South Indian store or online.

    Yogurt / Curd: I love to use fresh yogurt in my instant idli recipes, but you can also use sour curd if you want.

    Eno fruit salt: It helps to make the idlis super fluffy. If you don't have fruit salt, replace it with half amount of baking soda/cooking soda.

    Water: The amount of water completely depends on the thickness of the yogurt. Add more or less.

    Can I substitute idli rava with sooji?

    Yes! you can replace it with the same amount of sooji or semolina. I have tried both versions and personally love the ones made with idly rava more.

    Can I use buttermilk instead of curd?

    Yes! you can make it with buttermilk. But add just enough to get the right consistency.

    Can I make the batter before hand?

    Yes! you can. If you are planning to make oats idly the next morning, make the batter before night and keep it in the fridge overnight. But DO NOT forget to mix the fruit salt just before steaming idlis. The batter will thicken more, so you will need to add a little water to adjust the consistency.

    Tips:

    Make sure the batter is thick. Watch the video below for a better understanding.

    Always add fruit salt just before you steam the idlis. Don't let the batter sit for a long time after mixing it with fruit salt.

    Do not fill the idli molds full. Just filling it ¾th is enough.

    I would recommend following the exact recipe for the best results. However, you can reduce the amount of yogurt by half and add more water to get the right consistency.

    To check the doneness, touch the top of the idly with wet fingers. If it doesn't stick to your fingers, it is done. Alternatively, insert a toothpick or knife in the middle of the idly, it should come out clean.

    Serving suggestions:

    Serve them hot or warm with coconut chutney, carrot peanut chutney, Peanut Coriander Chutney, Idli Podi, or Sambar.

    They are perfect for breakfast or lunch or at any time of the day.

    Storage:

    If there are any leftovers, place them in an airtight container and store them in the refrigerator for up to a day.

    Re-heat them in steamer or microwave before serving.

    What is oats idli?

    Oats idli is an instant version of classic South Indian idli which is made with oats, yogurt, idli rava or semolina, fruit salt, or baking soda.

    Can I reduce the amount of yogurt?

    Yes! I have used two cups of yogurt for every cup of oats. You can also use a 1:1 ratio and add more water to adjust the consistency.

    What kind of oats should I use for oats idli?

    Quick-cooking / Instant oats or rolled oats can be used. You will need to grind them to a powder.

    How long should I steam idli?

    They should be cooked in 12 -15 minutes over a high flame.

    How long does cooked idli last?

    They can be stored for a day in the refrigerator.

    How to make idli without idli stand?

    You can fill a bowl, vessel or can pan with the batter and steam using a big pot or vessel. Once it is cooked, cut into desired shapes. Muffins molds and jelly molds can be used as well. The cook time will depend on the size of the pan you use.

    Can I skip eno or baking soda?

    You can skip them if you don't have them. But the texture of the idlis won't be the same. They won't be fluffy.

    Can I use baking powder?

    No, eno or baking soda can not be replaced with baking powder.

    Step by step instructions:

    Grind one cup of oats into a powder using a mixie or blender jar.

    Transfer the ground oats to a mixing bowl and add idly rava.

    Add two cups of yogurt to the bowl and mix everything well. Add a little water if needed. The batter should be thick.

    Cover it with a lid and let it sit for 15-30 minutes.

    Meanwhile, grease idly plates with some ghee or oil and keep them ready.

    Once the batter rests well, give it a stir and little more water to adjust the consistency if needed. The batter should be thick like idli batter.

    Add eno fruit salt to the batter and mix until well combined. The batter will be bubbling at this stage. Immediately fill ¾th of the greased idli plates with the batter

    Pour 1.5-2 cups of water into the steamer and insert the idly plates. Cover the pot with a lid.

    Steam cook them over a high flame for about 12-15 minutes.

    To check the doneness, touch the top of the idli with wet fingers and if it doesn't stick to your fingers, it is done. Alternatively, insert a toothpick or knife in the middle of the idly, it should come out clean.
