    Ingredients

    • ½ cup Mango
    • ½ cup Yogurt
    • ½ cup Milk
    • 2 tablespoon Gulkand
    • A big pinch of Cardamom Powder
    • 1 tablespoon Pistachios for garnishing (optional)
    • Dried Rose Petals for garnishing (optional)
    • Ice Cubes

    Instructions

    • Combine the mango, yogurt, gulkand, cardamom powder, milk and ice cubes in a blender. 
    • Blend until smooth and creamy.
    • Pour the lassi into a glass and garnish with chopped pistachios and dried rose petals. 
    • Serve immediately.

    Notes

    You can also use canned mango pulp instead of fresh mangoes.
    Adjust the consistency by adding more milk or water.
    You can also refrigerate the lassi and serve later.

    • Wash, peel and chop the mango into pieces and measure them.
    • Combine the chopped mango, plain yogurt, milk, homemade or store-bought gulkand, cardamom powder and ice cubes in a mixie jar or blender and blend until creamy.

    Sweet Bread Toast is a super quick and simple snack made with easily available ingredients in no time. These are a great alternative to the regular cookies. You can use any bread to make this delicious sweet snack. This recipe is my own creation and I have used cardamom powder and nuts to give an Indian touch.

    Ingredients

    • 4 Bread Slices
    • 6 tablespoon Softened Butter
    • ¼ cup Powdered Sugar
    • 2 tablespoon Crushed Pistachios
    • 1 tablespoon Crushed Almonds
    • 1 tablespoon Crushed Cashews
    • ½ teaspoon Cardamom Powder

    Instructions

    • Preheat the oven to 150 degrees C.
    • Combine the softened butter, sugar powder and cardamom powder in a bowl and mix until well combined and creamy.
    • Remove the edges of bread slices and cut them into squares.
    • Spread the prepared the butter on the bread pieces and place them on a baking sheet.
    • Top the buttered bread pieces with nuts and bake them for about 15 -18 minutes or until they are crispy at 150 degrees C. 
    • Remove them from the oven and let them cool completely.
    • Store them in an airtight container and serve as a teatime snack.

    Crispy Sweet Toast Recipe with Step by Step Photos:

    • Preheat the oven to 150 degrees C.

    • Combine the softened butter, sugar powder and cardamom powder in a bowl and mix until well combined and creamy. Keep it aside.

    • Combine the cashews, pistachios and almonds in a bowl and keep it aside.

    • Take 4 white or wheat bread slices and remove the edges. Cut them into squares or triangles.

    • Spread a little thick layer of prepared butter on one side of the bread pieces and arrange them on a baking tray.

    • Sprinkle the mixed nuts on the buttered bread slices and bake them in the preheated oven for 15-18 minutes or until they are crisp and light golden color at 150 degrees C.
    • Remove from the oven and let them cool completely.
    • Store them in an airtight container and serve with tea or coffee.

    Ingredients

    • ½ cups Ragi Flour / Finger Millet Flour
    • ½ cup Semolina / Sooji
    • ½ cup Yogurt
    • ¼ teaspoon Baking Soda
    • ¼ - ½ cup Water or as needed
    • Salt to taste

    Instructions

    • Combine the ragi flour, semolina and salt in a mixing bowl. Mix until well combined.
    • Add the yogurt to the flour mixture and mix. 
    • Add water little by little and make a batter. 
    • Let the batter sit for about 15 -30 minutes. 
    • Mix the batter once and add water if needed. The batter consistency should be like a normal idli batter consistency. 
    • Finally, add baking soda and mix until well combined.
    • Immediately fill the greased idli plates with the prepared batter and steam cook for 8-10 minutes over a high flame.

    Instant Ragi Idli Recipe with Step by Step Photos:

    • Combine the ragi flour, semolina and salt in a mixing bowl. Mix until well combined. Do not add the baking soda at this stage.

    • Add fresh or little sour yogurt to the flour mixture and combine.

    • Add required water little by little and make a batter. The water quantity depends on the yogurt. If you are using very thick yogurt, you will need more water to get the medium thick consistency.
    • Let the batter sit for about 15 -30 minutes.

    • After 15-30 minutes, mix the batter once and add little water to get the medium thick consistency if needed.
    • Just before steaming the idlis, add baking soda to the batter and mix until well combined.

    • Refer the above image or video for the right consistency.
    • Grease the idli plates with little oil or ghee and fill them with the prepared batter.
    • Immediately steam cook them for about 8-10 minutes over a high flame.

    • When they are done, remove the idlis from the plates and serve with chutney and sambar.

    Semiya Pineapple Kesari Recipe - Indian Style Dessert made with vermicelli, pineapple, saffron and nuts.


    We usually make Semiya Kesari and Pineapple Kesari, but I have created a new recipe combining those two flavors. This recipe is very quick to make and needs less ghee / clarified butter. I have used saffron to make this halwa more flavorful and colorful.

    Semiya Pineapple Kesari Recipe

    Ingredients

    • ½ cup Vermicelli / Semiya
    • ½ cup Pineapple, finely chopped
    • ¼ cup Sugar
    • 2 tablespoon Ghee (clarified butter)
    • ¾ cup Water
    • 10 Cashew Nuts
    • 10 Golden Raisins
    • A Big Pinch of Saffron
    • ½ teaspoon Cardamom Powder (optional)

    Instructions

    • Soak saffron in 2 tablespoons of warm water and keep it aside.
    • Heat ghee in a pan and fry the cashews until golden color. Then add the raisins and fry until plumps up. Take them out of the pan and set aside.
    • In the same ghee, add the vermicelli and roast over a low flame until golden color. Remove from the pan and set aside.
    • In the same pan, add the chopped pineapple and water. Bring water to a rolling boil. 
    • Add the roasted vermicelli and combine.
    • Cover and cook over a low flame for about 6-7 minutes or until the vermicelli is cooked. 
    • Give it a stir and add the sugar and soaked saffron water. Mix until well combined.
    • Let it cook for 5 minutes or until the halwa is thick. 
    • Add the roasted nuts and cardamom powder and combine.
    • Turn off the flame and serve.

    Notes

    Make sure you cook the vermicelli or semiya well. If the vermicelli is not fully cooked before adding the sugar, the texture of the halwa will be chewy.
    This is a semi-dry halwa. Use another ¼th cup of water if want it to be little loose. 
    Saffron will give the nice flavor and color to the halwa. You can skip if you don't want.

    Semiya Pineapple Kesari Recipe with Step by Step Photos:

    • Soak a big pinch of saffron in 2 tablespoons of warm water and keep it aside.

    • Heat two tablespoons of ghee in a pan. Add and fry the cashew nuts until light golden color.

    • When the cashews are light golden color, add the raisins and fry until plumps up. Take them out of the pan and set aside.

    • In the same ghee, add the vermicelli and roast over a low flame.

    • Fry continuously to roast them evenly. When the vermicelli is golden color, transfer them to a plate and set aside.

    • In the same pan, add the finely chopped pineapple and water.

    • Bring the water to a rolling boil over the medium flame.

    • Wait for the water to boil thoroughly before adding the roasted vermicelli to make the halwa soft.

    • Reduce the flame to low and add the roasted vermicelli to the boiling water.

    • Cover the pan with a lid and cook over a low flame for about 6-7 minutes or until the vermicelli is fully cooked.

    • When the vermicelli is cooked, give it a quick stir and add the vermicelli and soaked saffron water. Make sure you cook the vermicelli or semiya well before adding sugar. If the vermicelli is not fully cooked before adding the sugar, the texture of the halwa will be chewy.

    • Mix everything until well combined. Let it cook for about 5 minutes or until the halwa is thick.

    • When the halwa is thick, add the roasted nuts and cardamom powder(if using) and mix well.
    • Turn off the flame and serve.

    Upma is a savory porridge made with semolina / rava, ginger and green chillies. It is a traditional South Indian breakfast dish and usually served with coconut chutney, peanut chutney, podi or any pickle. It tastes great even without any side dish. Upma is so easy to make and can be done in 15-20 minutes. You can also use ready-made roasted rava / semolina or you can roast the rava and store in an airtight container.

    Ingredients

    • 3 tablespoon Oil
    • 1 tablespoon Ghee (clarified butter)
    • Salt to taste

    Instructions

    • Dry roast the semolina or sooji on a low flame for about 5 minutes. Keep it aside.
    • Heat oil in a pan and add the mustard seeds, urad dal, chana dal and peanuts. Saute until they are light brown color.
    • Add the cashew nuts, finely chopped green chillies, chopped ginger and red chilli and fry until brown color.
    • Add the curry leaves and saute for a few seconds.
    • Add the chopped onion and saute until they are translucent.
    • Add water and salt and bring it to a rolling boil.
    • Slowly add the roasted rava or semolina and stir continuously to avoid any lumps. 
    • Mix it well.
    • Cover and cook over a medium-low flame for 3 - 5 minutes or until the rava gets cooked. 
    • Give it a mix and finally add the ghee.
    • Mix until well combined and serve hot.

    Do not skip adding ginger, it gives a wonderful flavor and taste to the Upma.
    Roasting the Rava, water ratio and boiling the water is very important to make a soft and fluffy upma.

    Upma Recipe with Step by Step Photos:

    • Dry roast the semolina or sooji on a low flame for about 5 minutes or until fragrant, non-sticky and free-flowing. Roasting the rava is very important to make a non-sticky upma. Roast it only on a low flame and keep stirring to prevent color change. Keep it aside.

    • Heat oil in a pan for seasoning. Add the mustard seeds, urad dal, chana dal and peanuts. Saute until they are light brown color.
    • Add the cashew nuts, finely chopped green chillies, chopped ginger and red chilli and fry until brown color.

    • Add the curry leaves and saute for a few seconds.

    • Add the chopped onion and saute over a medium flame until they are translucent.

    • Add 1 and ½ cups of water and required salt and bring it to a rolling boil. Wait for the water to boil thoroughly before adding the roasted rava to make the upma soft and fluffy.

    • Slowly add the semolina and keep stirring to avoid any lumps from forming.

    • The upma will splutter a lot at this stage so be careful while stirring. Cover with a lid and let cook over a low flame for about 5 minutes or until the sooji or rava gets cooked completely.

    • When it is done, give it a quick stir and add ghee. Mix until well combined and serve hot with a cup of coffee.

    What is Raspberry Fool?

    A fruit fool is a classic English dessert. It is a lightly sweetened mashed or pureed fruit swirled with freshly whipped cream. You can use any fruit to make this easy dessert but it tastes great with tart fruits such as blackberries, raspberries, kiwi, and strawberries. I have used a ready-made whipped cream for this classic British raspberry fool recipe.

    Can I use frozen raspberries?

    You can! Thaw them in the refrigerator first and mash them.

    Can I make this dessert beforehand?

    You can make this 3-4 hours in advance. It needs to be refrigerated.

    Step by step instructions:

    Add sugar to the raspberries and mix well. Keep it aside for 10 minutes.

    Mash the raspberries with a fork until they are mushy. Keep it aside.

    In a mixing bowl add the chilled whipped cream and half of the mashed raspberries.

    Gently fold the raspberry mixture into the cream.

    Add the remaining raspberry mixture and fold. Do not overmix. The swirls of raspberries pulp should remain visible.

    Spoon the dessert into two glasses or cups and garnish with whipped cream, fresh berries or mashed berry pulp.

    Serve immediately or store in the refrigerator until ready to serve.

    Ingredients

    • 3 Rotis / Chapathi (Indian Wheat Flatbread)
    • 1 Medium Onion
    • ½ teaspoon Mustard Seeds
    • 2 tablespoon Peanuts
    • 1 Green Chilli, chopped
    • Few Curry Leaves
    • 1 tablespoon Oil
    • 1 - 2 tablespoon Lemon Juice
    • ⅛ tsp Turmeric Powder
    • 2 Sprigs Coriander Leaves / Cilantro
    • Salt to taste

    Instructions

    • Cut the leftover rotis into small pieces and grind them into flakes. Keep it aside.
    • Heat oil in a pan and add the mustard seeds and peanuts. Fry until they are brown.
    • Add the chopped green chilli and curry leaves. saute for a minute.
    • Add the chopped onion and mix well.
    • Add turmeric powder and salt and fry until onions are translucent.
    • Cover the pan with a lid and let it cook over a low flame for 2 minutes.
    • Aff the prepared roti flakes and some salt and mix well.
    • Turn off the flame and add the lemon juice and coriander leaves. Mix until everything is well combined.
    • Serve hot.

    • Cut the leftover rotis into small pieces and grind them into flakes. Keep it aside.

    • Heat oil in a pan and add the mustard seeds and peanuts. Fry until they are brown.

    • Add the chopped green chilli and curry leaves. saute for a minute.

    • Add the chopped onion and mix well.

    • Add turmeric powder and salt and fry until onions are translucent.

    • Cover the pan with a lid and let it cook over a low flame for 2 minutes.

    • Add the prepared roti flakes and some salt and mix well.

    • Turn off the flame and add the lemon juice and coriander leaves. Mix until everything is well combined.
    • Serve hot.

    Sorakaya / Anapakaya / Lauki / Bottle Gourd is a commonly used vegetable in Andhra Pradesh. We make many Andhra recipes using Bottle Gourd such as Sorakaya Pachadi, Sorakaya Palu Posina Koora, Sorakaya Pappu and Sorakaya Perugu Pachadi.

    These traditional Andhra vadas are crispy outside and soft inside and best when eaten hot. These are usually served as a breakfast with yogurt or as a snack with a cup of chai or coffee. The good thing is these Sorakaya Vadalu doesn't take much time to make. All you need is a few ingredients and a little time to make these yummy Bottle Gourd Vadalu.

    Ingredients

    • 1 cup Grated Bottle Gourd
    • 1 cup Rice Flour
    • 2 Green Chillies, finely chopped
    • 1 teaspoon Grated Ginger
    • ¾ - 1 teaspoon Cumin Seeds
    • 2-3 Sprigs Coriander Leaves, finely chopped
    • Salt to taste
    • Oil for deep frying

    Instructions

    • Wash, peel and grate the bottle gourd and keep it aside. 
    • In a mixing bowl, add the rice flour, grated bottle gourd, cumin seeds, grated ginger, finely chopped green chilies, salt and coriander leaves and mix everything well.
    • Make a smooth dough without adding any water. Sprinkle water only if needed. 
    • Heat oil over a medium flame.
    • Divide the dough into small round balls. keep them aside.
    • Grease a plastic sheet with little oil. Take a dough ball and flatten it into a thin round disc on the greased plastic sheet. 
    • Make a small hole in the middle of the vada/dough disc and slowly drop it into the hot oil.
    • Deep fry them over a medium flame until golden brown on both sides.  
    • Drain on a paper towel and serve hot with yogurt.

    Notes

    The oil should not be smoking hot. Fry the vadas over a medium flame. 
    I have used the grated ginger and chopped chillies in this recipe, but you can use ginger green chilli paste. 
    The oil should be hot enough to fry the vadas.

    Eggless Nutella Sandwich Cookies Recipe

    Ingredients

    • 10 tablespoon Plain Flour / All Purpose Flour
    • ¼ cup Unsalted Butter, softened
    • 2 tablespoon Powdered Sugar
    • ½ teaspoon Vanilla Essence
    • Nutella as needed
    • A pinch of Salt
    • Brown Sugar for decoration

    Instructions

    • Combine the butter and sugar powder in a mixing bowl and whisk until soft and creamy.
    • Add vanilla essence and salt and combine well.
    • Add flour and mix well until everything is well combined.
    • Knead the mixture to make it into a soft dough.
    • Wrap the prepared dough in a plastic wrap and refrigerate for about 40 – 60 minutes.
    • Preheat oven to 180 degree C. Line the baking tray with parchment paper and set aside.
    • Remove the dough from the refrigerator. Dust the work surface with flour and roll out the dough into ¼ inch thick circle.
    • If the dough is very stiff to be rolled, let it sit at room temperature for few minutes.
    • Cut the cookies with a cookie cutter and press one side of the cookies against the brown sugar.
    • place them on the prepared baking tray. Re-roll the scraps and repeat.
    • Bake them in the preheated oven at 180 degree C for about 10 – 15 minutes or until lightly browned on edges.
    • Remove from the oven and let them cool for a couple of minutes.
    • Remove the cookies from the tray and let them cool completely on a wire rack.
    • Once cool, place some nutella on one cookie and place another cookie on top to make a sandwich cookie.

    Ingredients

    • 2.5 cup Cooked Rice (I used Basmati Rice)
    • 2 ¼ cups Chopped Tomatoes (4 medium sized)
    • 2 Small Onions
    • 10 Cashews
    • 1 Green Chilli
    • ½ teaspoon Cumin Seeds
    • ¼ teaspoon Turmeric Powder
    • 2 Cloves
    • 2-3 tablespoon Oil
    • Small Piece Cinnamon Stick
    • Salt to taste
    • Few Curry Leaves
    • A pinch of Hing

    Instructions

    • Heat oil in pan and add cumin seeds, cloves, cinnamon and chopped or crushed garlic. Saute for a few seconds and add the slit green chilli. Fry until slightly browned.
    • Add cashew nuts and saute until they are golden brown.
    • Now add curry leaves and hing and saute for a few seconds.
    • Add the chopped onions and fry until they are transparent.
    • Then add the chopped tomatoes, salt and turmeric powder and saute until thick, mushy and all the water evaporates. 
    • When it is done, turn off the flame. Add the cooked rice to the tomato mixture and mix well until everything is combined.
    • Serve with yogurt or raita and papad.

    Notes

    I used basmati rice in this recipe. You can use normal sona masoori rice if you want

    • Heat oil in pan and add cumin seeds, cloves, cinnamon and chopped or crushed garlic. Saute for a few seconds and add the slit green chilli. Fry until slightly browned.

    • Add cashew nuts and saute until they are golden brown.
    • Now add curry leaves and hing and saute for a few seconds.
    • Add the chopped onions and fry until they are transparent.

    • Then add the chopped tomatoes, salt and turmeric powder and saute until thick, mushy and all the water evaporates.

    • When it is done, turn off the flame. Add the cooked rice to the tomato mixture and mix well until everything is combined.

    Fruit Custard is one of the most delicious and rich Indian desserts and is very easy to make for any occasion. I have already posted the traditional fruit custard which is a mixed fruit salad with vanilla custard sauce. Today's recipe is a variation with chocolate custard sauce to make the dessert richer.. You can use any of your favorite seasonal fruits except watermelon to make this fruit custard. I’ve used apple, papaya, banana, pomegranate, strawberries, blueberries and raspberries. You can also add a handful of nuts to this chocolate dessert recipe to give little more crunch.

    I have prepared this fruit custard recipe without custard powder but you can substitute the corn flour and vanilla essence with vanilla custard powder.

    • 2 cups Milk
    • 3 cups Mixed Fruits
    • 3 tablespoon Unsweetened Cocoa Powder
    • 2 tablespoon Corn Flour / Corn Strach
    • 6 tablespoon Sugar
    • ½ teaspoon Vanilla Essence

    Instructions

    • In a small mixing bowl, combine ½ cup warm milk, cocoa powder and corn flour. Mix well without any lumps. keep it aside.
    • Heat remaining 1.5 cups milk and add sugar sugar, vanilla essence and prepared chocolate milk mixture.
    • Stir continuously to prevent lumps forming.  Keep stirring and cook on low flame until the mixture thickens.
    • Turn off the flame and let it cool completely. This will thicken more as it cools.
    • Add the chopped fruits to the cooled chocolate custard and mix everything well.
    • Refrigerate it and serve chilled. 
    • You can also chill the custard first and add the fruits before serving.

    Notes

    I have used papaya, apple, banana, pomegranate and berries. You can use any of your favorite fruits except watermelon to make this custard.
    You can substitute the corn flour and vanilla essence with vanilla flavored custard powder.
