    Ingredients

    • ½ cup Broken Wheat / Wheat Rava
    • ½ cup Sugar
    • ¼ cup Ghee (clarified butter)
    • 1.5 cups Water
    • ½ teaspoon Cardamom Powder
    • 15 Cashews or as needed
    • 15 Raisins or as needed

    Instructions

    • Heat 2 tablespoons of ghee in a heavy bottomed pan. Add and fry the cashews until they are light brown color. Then add the raisins and fry until they plump up. Remove them from the ghee and set aside.
    • In the same ghee, add the wheat rava and stir continuously on medium – low flame until it becomes light golden brown color. 
    • Now add 1.5 cups of boiling water and remaining ghee and combine.
    • Cover and cook the mixture over a low flame for few minutes or until the wheat rava gets cooked.
    • When it is cooked, add the sugar and cardamom and combine well.
    • When the mixture thickens, add the fried nuts and mix everything.
    • Turn off the flame and serve warm or cold!

    • Heat 2 tablespoons of ghee in a heavy bottomed pan. Add and fry the cashews until they are light brown color. Then add the raisins and fry until they plump up. Remove them from the ghee and set aside.

    • In the same ghee, add the wheat rava and stir continuously on medium - low flame until it becomes light golden brown color.

    • When it is light golden color, add 1.5 cups of boiling water and remaining ghee and combine.

    Lo Mein Recipe - How to Make Vegetable Lo Mein Noodles Recipe

    Ingredients

    • 1 cup Lo Mein Noodles (or Spaghetti) I used Spaghetti
    • 2 cups Sliced Mushrooms
    • 1 small Carrot
    • 2 medium sized Bell Peppers I used mixed colors
    • 2 - 3 Spring Onions
    • 2 tablespoon Olive Oil
    • 2 - 3 large Garlic Cloves
    • 1 teaspoon Chopped Ginger
    • Salt to taste

    For the Sauce

    • 1.5 tablespoon Soy Sauce
    • 1 teaspoon Sugar
    • 1 teaspoon Sesame Oil
    • 1 teaspoon Sriracha Sauce (hot red chilli sauce)

    Instructions

    • Cook the noodles by following the instructions given in the pack or boil water in a vessel with little salt and ¼ teaspoon of oil and cook the noodles until soft.
    • Meanwhile, In a small bowl, combine the soy sauce, sugar, sesame oil and sriracha sauce and keep it aside.
    • Heat olive oil in a skillet, add the chopped ginger and garlic and fry for a minute.
    • Add the carrot, bell peppers and mushrooms and stir-fry over a high flame for about 5- 10 minutes or until they are tender.
    • Add the chopped spring onions.
    • Drain and rinse the cooked spaghetti with cold water and add it to the sauteed vegetables.
    • Add the prepared soy sauce mixture and salt and mix well.
    • Saute for 2 minutes and serve immediately.

    • ¼ cup Pureed or well mashed Avocado (about ½ of an avocado)
    • ¼ cup Olive Oil
    • 1 cup Whole Wheat Flour
    • ½ cup Unsweetened Cocoa Powder
    • ¾ cup Sugar
    • ½ cup Semi Sweet Dark Chocolate Chips / Chunks
    • ¾ cup Water
    • 1 teaspoon Baking Soda
    • ½ teaspoon Salt
    • 2 teaspoon Lemon Juice

    Instructions

    • Preheat the oven to 180 degree C. Grease a baking tin and keep it aside.
    • In a mixing bowl, whisk together the avocado pure and olive oil until well combine.
    • Add the water, wheat flour, cocoa powder, baking soda, sugar, salt and lemon juice and mix everything until smooth.
    • Add the chocolate chips / chocolate chunks and gently fold the mixture.
    • Pour the brownie batter into the prepared tin and bake for 30 - 35 minutes, or a toothpick inserted into the center comes out moist with few crumbs (not clean). 
    • Remove from the oven and cut into squares. Cover and store in the refrigerator for up to 3 days.

    Notes

    The brownies will have a cake like texture if you over-bake them. Don't overbake them.
    You can add more chocolate chips on top before baking.

    How to make South Indian Style Yogurt Quinoa Recipe with Video - Quinoa is one of the super foods as it is rich in protein and dietary fiber and has many more nutritional values. I always add quinoa to my everyday cooking as it is super healthy. I love to try Indian recipes using quinoa and include them in baked goods and desserts.

    Today's recipe is Curd Quinoa / Thayir Quinoa / Quinoa Daddojanam. Curd Rice or Daddojanam is a simple South Indian dish which is steamed rice mixed with yogurt and tempered with ginger and other Indian spices. I have replaced the rice with quinoa and added a handful of chopped cucumbers and grated carrots to make it more delicious. You can leave the cucumber and carrots if don't like them and add pomegranate seeds, mangoes or grapes for a variation.

    • When it is still warm add milk to the quinoa. Mix and lightly mash the quinoa.
    • Add the yogurt, chopped cucumber, grated carrot and salt and mix everything well. Keep it aside.
    • Heat oil in a pan for seasoning. Add the mustard seeds, chana dal, urad dal and fry until they are light brown color.
    • Then add the cashews and continue frying until they are brown color.
    • Now add the finely chopped ginger and chopped green chillies and fry for a few seconds.
    • Add the broken red chillies and curry leaves and fry for a couple of seconds.
    • Finally add a big pinch of hing / asafoetida and fry for a few seconds.
    • Remove it from the flame and pour it over the prepared quinoa yogurt mixture.
    • Mix until well combined. Serve and enjoy! 🙂

    Bread Kaja Recipe with step by step photos. Bread Kaja is a super quick and easy dessert or sweet snack that can be prepared in no time. It's been my favorite since my schooling days. As far as I am concerned, this was my mom's creation and then I named it "BREAD KAJA".  And now Surya loves it too more than Shahi Tukda, double ka meetha and any other bread based sweets and he can't get enough of it 😉 .. There is lot of difference between shahi tukda and bread kaja. This kaja is crispier and doesn't require rabdi.  I've already made some Indian sweets with bread and posted in this blog.  Here are few of them: Bread Rasmalai, Bread Halwa , Mango Rabri Tukda and Double Ka Meetha.

    UPDATE: Months after posting this recipe, I now see the name "Bread Kaja" popping up in many blogs and youtube and it gives me immense pleasure.

    How to Make Bread Kaja Recipe

    Crispy fried bread dipped in a cardamom flavored sugar syrup.

    Ingredients

    • 6 Bread Slices
    • ½ cup Sugar
    • ¼ cup Water
    • A pinch of Cardamom
    • Chopped Pistachios to garnish
    • Oil for deep frying

    Instructions

    • Remove the brown edges of the bread slices and cut them into pieces.
    • Heat oil in a pan and deep fry the bread pieces till crisp and golden brown evenly.
    • Drain them on paper towels and keep aside.
    • Combine the sugar, water and cardamom powder in a saucepan and mix well until the sugar dissolves completely.
    • Let the syrup boil until you get a half thread consistency.  Remove from the heat.
    • Dip the fried bread slices in the hot syrup for a few seconds and take out. Arrange them in a plate and sprinkle the chopped pistachios or almonds on top when the slices are still sticky.
    • Let them cool completely and enjoy! 🙂

    • 1 Large Onion
    • ½ inch Ginger
    • 3 Red Chillies
    • 1 tablespoon Chana Dal
    • Marble Sized Tamarind
    • 1.5 tbsps Oil
    • A big pinch of Turmeric Powder
    • Salt to taste

    For Seasoning

    • 1 teaspoon Oil
    • ¼ teaspoon Mustard Seeds
    • ¼ teaspoon Cumin Seeds
    • ¼ teaspoon Urad Dal
    • Few Curry Leaves
    • 1 Red Chilli
    • A pinch of Hing

    Instructions

    • Heat 1.5 tablespoons of oil in a pan and add the chana dal and urad dal and fry until they are golden brown.
    • Add the red chllies and fry for few seconds.
    • Then add the chopped ginger and onion and fry until they are transparent.
    • Add the grated radish to the onion mixture and continue frying for a couple minutes.
    • Add salt and turmeric and mix well. Sprinkle a handful of water over it and cover with a lid. Cook until the radish is completely cooked.
    • Turn off the flame and add the tamarind to the hot radish mixture. Mix and let it cool completely.
    • Grind the cooled mixture to a smooth or little coarse paste. Keep it aside
    • Heat remaining oil in a small pan for seasoning. Add the mustard, cumin seeds and urad dal and let them splutter.
    • Add hing, red chilli and curry leaves and fry for a couple of seconds.
    • Pour it over the prepared chutney and combine.
    • Serve with idli, dosa, vada or any Indian breakfast dishes.

    How to Make Radish Chutney Recipe with Step by Step Photos:

    • Heat 1.5 tablespoons of oil in a pan and add the chana dal and urad dal and fry until they are golden brown.
    • Add the red chllies and fry for few seconds.
    • Then add the chopped ginger and onion and fry until they are transparent.

    • Add the grated radish to the onion mixture and continue frying for a couple minutes.

    • Add salt and turmeric and mix well. Sprinkle a handful of water over it and cover with a lid. Cook until the radish is completely cooked.
    • Turn off the flame and add the tamarind to the hot radish mixture. Mix and let it cool completely.

    This eggless strawberry cake is a super simple cake recipe with very few ingredients. If you want to bake something simple and delicious using seasonal fresh strawberries, it is a perfect recipe.

    Can I use frozen strawberries?

    I prefer using fresh strawberries in the summer. However, it can also be made with frozen ones. Thaw the frozen berries before using.

    How long can I store it?

    It stays well for up to 2 days at room temperature.

    Serving suggestions:

    It is a perfect cake to serve as a dessert or tea time snack. I love it with a cup of coffee.

    • Start the process by preheating the oven to 180 degrees C.
    • Combine the flour, baking powder and salt together in a bowl. Keep it aside.
    • Combine the butter and ½ cup of sugar in a mixing bowl until well combined.

    • I have used 7 inch round cake pan.
    • Sprinkle the remaining sugar over the strawberries and bake in the preheated oven.
    • Bake at 180 degrees C for about 30 - 35 minutes or till a toothpick inserted into the middle of the cake comes out clean.

    Ingredients

    • 250 grams Mushrooms (approx. 12 -13)
    • 1 cup Green Peas
    • 2 heaped cups Chopped Tomatoes (approx. 3 medium tomatoes)
    • 1 medium Onion
    • ¼ cup Cashews (17-18)
    • 1 cup Water
    • 4 tablespoon Butter
    • 1 - 1.5 teaspoon Ginger Garlic Paste
    • ½ teaspoon Cumin Seeds
    • 3 Cloves
    • 3 Cardamom Pods
    • 1 small piece Cinnamon Stick
    • 1 Bay Leaf
    • 1 teaspoon Red Chilli Powder
    • ½ teaspoon Kasoori Methi
    • 2 tablespoon Milk /Fresh Cream
    • ½ teaspoon Garam Masala
    • ⅛ teaspoon Turmeric
    • ¼ teaspoon Cumin Powder
    • ½ teaspoon Coriander Powder
    • ½ - 1 teaspoon Sugar (optional)
    • Salt to taste

    Instructions

    • Soak the cashews in hot water for 20 - 30 minutes.
    • Grind the chopped tomatoes and soaked cashews into a smooth puree and keep it aside.
    • Heat butter in a pan, add the cumin seeds, bay leaf, cardamom, cloves and cinnamon and fry until they are fragrant.
    • Then add the ginger garlic paste and fry until the raw smell disappears.
    • Add the chopped onions and fry until light brown color.
    • Pour the prepared tomato & cashew puree to it. Add the red chilli powder, cumin powder, coriander powder, chilli powder and turmeric. Combine well.
    • Stir and cook till the melted butter starts leaving the sides of the pan.
    • Now add the sliced mushrooms, peas and salt and mix well. 
    • Add water, cover and cook over a medium flame until the pieces are cooked.
    • When they are done, add the sugar and garam masala and cook for a minute.
    • Add the crushed kasoori methi and combine well. Turn off the flame and add the milk or fresh cream. Mix everything well.
    • Serve hot with rice or roti.

    Notes

    • Use less or more sugar depending on the sourness of the tomatoes. Or you can skip the sugar if you want.
    • Different vegetables can also be added.

    • 1 cup Grated Apple ( 1 large apple)
    • 2 cups Milk
    • ½ cup Unsweetened Khoya / Mawa

    • Soak the saffron in little warm milk and set aside.

    • Pour milk in a heavy bottomed pan and bring it to a boil.
    • Add the khoya, sugar and saffron milk to the boiling milk and mix well.
    • Let it boil for about 5 - 7 minutes or until the mixture thickens a little.
    • Add the cardamom powder and cook for another 2 minutes. Turn off the flame and let it cool down.
    • Add the prepared apple to the cooled milk mixture and mix well.
    • Garnish with nuts and refrigerate for sometime. Serve chilled.

    • Add more milk if you want thinner consistency.
    • Use less or more sugar depending on the sweetness of the apples.
    • You can serve this at room temperature  or chilled.

    Orange Rava Kesari Recipe - Orange Sooji Ka Halwa {Video}

    Orange Kesari Recipe - Indian style semolina pudding or dessert using semolina, fresh orange juice, cardamom and nuts.

    What is orange rava kesari?

    Orange rava kesari is a new and innovative variation of making the traditional Indian semolina pudding. Rava kesari is also known as sooji ka halwa and kesari bhath.

    It is usually cooked with water but I have added freshly squeezed orange juice to it for the wonderful fruity flavor and taste.

    Unlike the traditional halwa, this orange halwa doesn't require any food color. The orange juice itself gives a lovely color to the dessert.

    Can I use store-bought orange juice?

    Yes, if you can find the best quality natural orange juice. If the juice is too sweet, reduce the sugar accordingly.

    How long can I store it for?

    It keeps well for 2-3 days in the refrigerator.

    Serving suggestions:

    It can be served cold or warm.

    You can shape the pudding into small pieces or fluff it with a fork and serve as a dessert or snack.

    It is a perfect sweet to make during festivals such as Varalakshmi vratham, Navaratri and Ganesh Chaturthi.

    Tips to make the best orange halwa:

    • Roasting the semolina and liquid ratio is very important to make the perfect and soft halwa.
    • Do not add more water or juice than mentioned.
    • Wait for the water-juice to boil thoroughly before adding the roasted rava / sooji/ semolina to make the halwa soft.
    • Make sure the semolina or rava is cooked completely before adding sugar. Otherwise, it will remain uncooked.

    Step by step preparation:

    • Heat a tablespoon of ghee in a pan and fry the nuts to golden brown color and keep them aside.

    • In the same ghee, add semolina and fry continuously on medium-low flame until it becomes light golden brown color.
    • Transfer the roasted semolina to a plate and keep it aside to use it later.

    • Bring orange juice and water together to a rolling boil in a vessel or nonstick pan.

    • Slowly add the roasted semolina to the boiling orange juice mixture and mix without any lumps.

    • Now reduce the flame to low and add the remaining ghee to the pan.
    • Cook the mixture over a low flame for a couple of minutes or until the semolina gets cooked.

    • Now add the measured sugar and cardamom powder and mix until well combined.

    • Let the sugar dissolve completely. Keep stirring and cook for another few minutes.
    • When the mixture thickens, add the fried nuts and mix everything.
    • Turn off the flame. Transfer the halwa to a greased tray and cut into desired shapes.

    Radish Leaves Pakora Recipe - Indian Radish Greens Recipes

    Ingredients:

    • ¼ cup Chopped Radish Leaves, tightly packed
    • ¼ cup Sliced Onion
    • ½ cup Besan / Chickpea Flour
    • ¼ cup Rice Flour
    • ½ cup Water or as requiered 
    • ½ teaspoon Chopped Green Chillies or as needed
    • ½ teaspoon Cumin Seeds
    • ½ teaspoon Red Chilli Powder (optional)
    • A big pinch of Baking Soda
    • Salt to taste
    • Oil for deep frying
    Instructions:
    • Wash and chop the radish greens and set aside.
    • Heat enough oil for deep frying the pakoras.
    • In a mixing bowl, combine the radish leaves, onion, chillies, salt, cumin seeds, baking soda, chickpea flour and rice flour. Mix everything well.
    • Add water little by little and make a thick batter.
    • Take a spoonful of batter and gently drop it into the hot oil. Stir occasionally.
    • Deep fry them until golden brown color.
    • Remove the pakoras from oil and place them on a paper towel.
    • Serve hot with tomato sauce.
