    Panakam Popsicles Recipe - Healthy and refreshing jaggery ice pop, mildly spiced with black peppercorns and flavored with cardamom.

    What is Panakam Popsicle?

    "Popsicle" is a frozen treat or snack with a stick to hold. It is also known as ice pops. They are usually made with water, fresh fruit juices, milk, or yogurt.

    Instead of using any fruits or yogurt, I used "Panakam". Panakam or Panagam is one of the traditional and healthy Indian drinks to beat the summer heat. It is nothing but jaggery water mildly spiced with black peppercorns and flavored with cardamom powder. It is an ayurvedic energy-boosting drink.

    I just gave a new look to the classic panakam by freezing it in a popsicle mold.

    Can I make them without molds?

    You can use small cups as molds to make ice pops. Fill cups with your popsicle mix and cover it with a cling wrap or aluminum foil. Carefully make a hole through the foil and insert popsicle sticks. If you don't have wooden sticks, simply use spoons in the place of sticks.

    Can I use sugar?

    No, it wouldn't work for this recipe.

    Serving suggestions:

    Serve them as a snack or dessert.

    These are perfect to serve on sunny days.

    Tips:

    • Use the crushed or coarsely ground black pepper to get the mild flavor.
    • Do not skip using lemon juice, it gives a wonderful taste to them.
    • The color of the ice lollies completely depends on the color of the jaggery you use.

    Step by step preparation:

    • Grate or chop jaggery and measure it. You can also use the powdered jaggery to speed up the process.
    • Combine jaggery, water, lightly crushed peppercorns, cardamom powder, lemon juice and dry ginger powder in a bowl.

    • Mix well and let it sit for 20-30 minutes to dissolve the jaggery.

    • Once the jaggery is dissolved completely, filter it using a strainer to remove any impurities and crushed pepper.

    • Pour them into the popsicle molds or small cups and insert the sticks.
    • Place them in the freezer until they are completely set and solid.

    • To remove the popsicles from the mold, run the water on the outside of the molds for some time until the ends are loose.

    Ingredients

    • 2 cups Water

    What is Rooh Afza Popsicle?

    Popsicle is a frozen treat or snack with a stick to hold. It is also known as ice pops. They are usually made with water, fresh fruit juices, milk, or yogurt. Instead of using any fruits or yogurt, I have flavored them with "Rooh Afza Syrup". You only need 3 ingredients to prepare these wonderful ice pops.

    How do you make popsicles without molds?

    Pasta e Piselli Recipe - Classic Italian Pasta with Peas {Video}

    Pasta e Piselli Recipe - Classic and quick Italian pasta dish with green peas, onion and parsley. 

    What is Pasta e Piselli?

    Pasta e Piselli is a simple and comforting Italian pasta dish with green peas (Piselli in Italian). It is one of the authentic and quick Italian recipes that can be done in a flash.

    This recipe doesn't require garlic, tomatoes and any fancy ingredients. All you need is some pasta, peas, onions and olive oil.

    Ingredients needed:

    Pasta: You can use any kind of short pasta in this dish.

    Green Peas: Use fresh green peas when they are in season for the better taste and flavor. However, it can be made with frozen green peas as well.

    Onion: White onion, yellow onion, shallots or spring onions can be used.

    Parsley: It gives a lovely flavor to the dish. You can skip them if you don't have them in hand.

    Cheese: Top the dish with parmigiano, parmesan or any powdered cheese before serving

    Olive Oil: Use a good quality extra virgin olive oil. Do not replace it with any other oils.

    Pepper

    Salt

    Step by step preparation:

    • Bring water to a boil along with salt in a big pot.
    • Add any short pasta such as Ditalini, Shells or Anelli. I have used Anelli here.

    • Cook it according to the package directions or until al dense.
    • Once it is done, reserve a few ladles of pasta cooked water for later use.
    • Drain it completely and keep it aside.

    • Heat extra virgin olive oil in a skillet or heavy-bottomed pan.
    • Add chopped onions and saute them for 4-5 minutes or until they are transparent.

    • Add thawed green peas to the pan and saute for about minute.

    • Season with salt and ground pepper and mix well.

    • Now add a ladle full of the reserved water to the pan.
    • Cover and cook until the peas are soft and cooked.

    • Add chopped parsley leaves and saute for another minute.

    • Finally, add the cooked pasta and combine everything together well.
    • Adjust salt at this stage.
    • If you prefer soupy consistency, add more pasta cooked water.

    • Serve hot with some powdered cheese on top.

    • Add green peas and saute for 2 minutes.
    • Add enough salt and pepper powder and give it a mix.
    • Add a ladle full of pasta water to the pan. Cover and cook until peas are soft.
    • Once done, add chopped parsley and mix well.
    • Add the cooked pasta and mix until well combined.
    • Add more pasta water if you want a soupy consistency.
    • Adjust salt and serve hot with cheese and pepper powder.

    What is Mango Iced Tea?

    It is a refreshing and delicious summer drink made with black tea and fresh mango pulp. It is our family's favorite and a must-try beverage in summer.

    It is one of the easy mango drink recipes and can be made in no time.

    Can I use canned mango pulp?

    Absolutely. if you don't have fresh fruit in hand, you can swap it with canned ones.

    How long can I store it?

    You can refrigerate it for 1 - 2 days.

    Can I use green tea instead of black?

    Absolutely! it works pretty well.

    Serve it chilled on hot summer evenings or after a meal.

    Chocolate Makhana Recipe - Chocolate Covered Fox Nuts {Video}

    Healthy, yummy and super simple chocolate-coated fox nuts or phool makhana. You will need 2 ingredients and 15 minutes to prepare this healthy snack.

    What is Chocolate Makhana?

    Chocolate makhana is nothing but roasted phool makhana coated with melted dark chocolate. You only need 2 ingredients to make this delicious snack at home.

    Phool makhana is also known as fox nuts and puffed lotus seeds. If you are looking for popcorn alternatives, you can replace them with makhana.

    What is the best chocolate?

    I have used semi-sweet dark chocolate in this recipe. However, you can also use milk chocolate or anything.

    Can I use choco chips?

    Absolutely, replace the chopped dark chocolate with the same amount of choco chips.

    Serving suggestions:

    They are so good as an evening snack.

    Step by step preparation:

    • Dry roast the foxnuts over a low flame for about 5 minutes or till they become crispy. Always roast on a low flame and stir constantly to ensure even roasting and prevent burning.
    • Try to crush the nuts to test the doneness.
    • Once they are roasted well, keep them aside to cool completely.
    • Line a baking sheet / tray / plate with parchment paper and keep it aside.

    • I am using the double boiler method to melt the chocolate.
    • Roughly chop and measure the dark chocolate.
    • Heat some water in a pan or vessel over low heat and place a heat resistant bowl on top of the water pot.
    • Add the measured chocolate into the top bowl and keep stirring to melt it completely.

    • Once it is melted and smooth, remove the bowl from heat.
    • Do not overcook it.

    • Add the roasted nuts immediately.
    • Mix until well coated.

    • Using a fork, transfer them to the parchment paper-lined baking sheet.
    • Make sure you separate them so they don't stick together.

    • Place it in the refrigerator until set.
    • Peel them off the paper and store them in the refrigerator for a week.

    Grilled Chocolate Sandwich - Super simple, warm, delicious and crispy sandwich. All you need is 5 minutes and 3 ingredients to make!

    What is Chocolate Sandwich?

    Chocolate Sandwich is a super easy, crispy and delicious grilled sandwich made of bread slices and some dark chocolate. It is one of the easier sweet snacks that can be done in 5 minutes with just 3 ingredients.

    Can I use choco chips instead of dark chocolate?

    Yes, you use choco chips or semi-sweet chocolate.

    Variations:

    With fruits: If you love fruits in your sandwiches, include sliced bananas or strawberries in the stuffing.

    With nuts: You can add some chopped almonds, cashews and pistachios along with chocolate. It gives a nice crunch as well.

    Serving suggestions:

    It tastes amazing when it served warm with a cup of coffee or tea.

    You can also sprinkle a little bit of sugar powder on top.

    Tips:

    • Always roast on a low-medium flame to make it crispy.
    • Spread butter evenly to ensure even roasting.
    • You can also make this using a sandwich maker or grill pan.

    Step by step preparation:

    • Start the process by chopping some dark chocolate into small chunks. If you are using choco chips, skip this step and use them directly.
    • Using a spoon or knife apply a teaspoon of butter on one side of the bread slice evenly.

    • Heat a pan or skillet on a medium flame.
    • Place the bread slice on the hot pan with the buttered side facing downwards.

    • Reduce the flame to low.
    • Spread 2 tablespoons of chopped dark chocolate on the top of the bread. The quantity depends on the size of the bread. Add more if needed.

    • Place another bread slice on the top to cover the chocolate and spread a teaspoon of butter evenly.

    • Roast on both sides over a low flame until it is golden brown and crispy.
    • Cut in half and serve warm!

    Dalgona Coffee (Whipped Coffee)

    Dalgona coffee is a delightful whipped beverage made by combining instant coffee, sugar, and hot water to achieve a frothy and creamy texture. Serve it over a glass of hot or cold milk!

    What is Dalgona Coffee?

    It is a very simple and trending form of coffee, that contains two components at large - milk and whipped coffee. The latter is made with equal quantities of 3 simple ingredients - instant coffee, sugar and water. The beverage derives its name from the Korean toffee Dalgona's tastes and looks, despite not having anything to do with it! Funny, right? More on that later. If you haven't heard of this drink over the last couple of months, now is the time to crack the whip on your instant coffee and give it an aesthetically pleasing, peaky and foamy form! 

    In India, it is known as whipped coffee, beaten coffee. In Greece though, it's called Frappé Coffee. 

    What does it taste like?

    Like a foamy cold coffee with the perfect blend of sweet and bitter. If you enjoy caffeine-based milkshakes, this one's right up your ally.

    Can I make it without instant powder?

    Yes, but it may not turn out as foamy as it should. Give it a try with strong black coffee or decoction. However, ground coffee isn't a substitute. 

    Can I reduce the quantity of sugar?

    Yes, but you'll probably find it hard to make those soft peaks that give the beverage its unique look.

    What kind of sugar can I use?

    All kinds. Palm, Castor, Granulated, Coconut etc.

    Can I use jaggery instead of sugar?

    Yes but the taste and flavor will most definitely be different. You can still generate the foam though.

    Which equipment do I need to use to whip up the coffee?

    What works:

    • An electric hand mixer to make it in a jiffy 
    • A hand whisk - Can take 5-8 mins but still very effective. 
    • A jar to add coffee powder, water and sugar and shake for a few minutes.
    • A fork - Takes longer and probably the most fun way. Be patient.

    What doesn't work:

    • A blender - electric or immersion

    How long can it be stored?

    You can store the whipped cream in the refrigerator for 2-3 days, but nothing else. Assemble it with milk before serving. 

    Tips to make the best whipped coffee:

    1. Don't use more water than required
    2. Coffee, water and sugar need to be added in similar quantities. 
    3. Use only hot water. Otherwise, you will not be able to generate the foam.

    How to make it vegan?

    Swap milk with plant-based milks such as almond milk, soy milk or oat milk. 

    Variations:

    1. Serve it hot or cold: If you want to serve it hot, pour hot milk in a glass and top it with the whipped cream.
    2. Choc-it-up! Add a tablespoon of cocoa powder to the whipped mixture and mix them before adding on top of the milk

    Step by step instructions:

    • Take equal portions of all the ingredients except milk in a bowl.
    • Make sure the water is hot.
    • Mix and start whisking using a hand whisk or fork.
    • Continue whisking for about 5-8 minutes or until you get light and fluffy cream.
    • When soft peaks start appearing, you know it is done. The soft peaks should hold their shape.
    • Add a couple of ice cubes to a glass.
    • Fill ⅔rd of the glass with milk.
    • Top it with the heated cream. You can also sprinkle some cinnamon powder on the top.

    Panakam Recipe - Traditional Andhra Summer Cooler

    What is Panakam?

    Panakam is a traditional and classic South Indian summer cooler usually made during Sri Rama Navami festival. It is also known as Panagam.

    Panakam is one of the simple and healthy Indian drinks to beat the summer heat. It is nothing but jaggery water mildly spiced with black peppercorns and flavored with cardamom powder. It is an ayurvedic energy-boosting drink and way better than the store-bought cool drinks.

    Variations:

    This version is Andhra style of making panakam where we use only pepper and cardamom to add the flavor. There are some other variations where you can also use a pinch of dry ginger powder and some lemon juice.

    How long can I store it?

    It keeps well for 2 days in the refrigerator.

    Tips:

    • The quantity of jaggery completely depends on the type of jaggery you use and your preferences. I would suggest to start with ½ cup of jaggery and add more if you want.
    • I have used coarsely crushed black peppercorns in this beverage, you can always strain the drink if you wish. Let the ground pepper soak in the drink for some time before filtering.
    • If you are adding lemon juice, serve it chilled for the best taste.
    • The color of the drink will depend on the jaggery you use.
    • Use freshly ground pepper and cardamom for the best flavor.

    Panagam preparation:

    • Add ½ to ¾ cup of grated or powdered jaggery to a bowl and pour 2 cups of water.
    • Mix very well and keep it aside until the jaggery dissolved completely.

    • Once the jaggery is dissolved, filter it using a strainer to remove any impurities.

    • Now add pepper and cardamom and give it a mix.
    • If you are using lemon juice and dry ginger powder, add them at this stage.
    • Chill in the refrigerator and strain if needed before serving.

    Homemade Thandai Recipe - Rich, refreshing and traditional Indian drink made with milk, nuts, spices and rose petals. 

    What is Thandai?

    Thandai is an Indian milk-based cold drink. It is a rich and healthy drink and often made during festivals such as Holi and Shivaratri. It is also known as Shardai.

    Ingredients needed

    Nuts: Almonds, cashews, pistachios, poppy seeds, fennel seeds and melon seeds are used in thandai. You can replace cashews and pistachios with almonds.

    Milk: Whole full-fat milk is the best option to make the drink richer. You can also use low-fat milk though.

    Spices: Cardamom, fennel and black peppercorn will give a wonderful flavor and taste to the beverage. Add more or less according to your taste.

    Saffron: It is completely optional. But I would suggest you to not skip it.

    Rose Petals: It helps to cool down the body and gives a lovely flavor. I have used a good quality dried petals in this recipe. If you don't have them in hand, replace them with 2 tablespoons of rose water. You can also substitute them with gulkand. You will need to reduce the sugar quantity if you use gulkand.

    How long can I store it?

    It can be stored in the refrigerator for a day or two.

    Ingredients

    • 500 ml Milk
    • 2 tablespoon Almonds (15)

    Instructions

    • Soak almonds in hot water for about 1 - 2 hours.
    • Soak cashews, pista, poppy seeds, melon seeds, fennel seeds, rose petals and black pepper in hot water for 1-2 hours. Drain water.
    • Peel the soaked almonds.
    • Grind blanched almonds and soaked ingredients to a smooth paste using some water or milk.
    • Bring milk to a boil in a saucepan. Add sugar and saffron and let it boil for another 5-7 minutes.
    • Add the ground thandai masala to the milk and mix well.
    • Turn off the flame.
    • If you want to strain thandai, let it sit for about 50-60 minutes before straining.
    • Let it cool completely and chill in the refrigerator.
    • Pour into glasses and garnish with nuts, saffron and rose petals.

    You can replace rose petals with rose water or gulkand. If you use gulkand reduce the sugar quantity.

    Rava Khoya Laddu Recipe - Sooji Mawa Ladoo Recipe {Video}

    Khoya Rava Laddu Recipe - Super simple and delicious Indian sweet balls made with semolina, mawa (milk solids), cardamom and nuts.

    What is Rava Khoya Laddu?

    It is a super simple Indian dessert or sweet ball made with semolina or sooji and khoya (milk solids). It is one of the easy Indian sweets that can be prepared under 30 minutes. We Indians make a variety of sweets or mithai during festivals like Diwali, Holi, Rakhi and Ganesh Chaturthi and these sooji ladoos are perfect to try on festive days.

    Ingredients needed

    Semolina: Semolina is also known as sooji or rava in India. I have used the regular rava that we use to make upma. If you find the yellow coarse semolina, you can use it.

    Khoya: Khoya or mawa is dried whole milk. You can find it in Indian stores or can make it at home. Check my Homemade Khoya to make your own. Read more about mawa here.

    Ghee: Fresh homemade ghee will give the best taste and flavor to any Indian dish. Use the best quality store-bought ghee if you don't have the homemade one.

    Cardamom: I have used cardamom pods for the better flavor. If you have ground cardamom, use ½ teaspoon of it.

    Nuts: Use any of your favorite nuts here. I used cashew nuts.

    Sugar

    How long can I store them?

    They will be good in an airtight container for 4-5 days at room temperature.

    Why I am unable to roll them?

    They need to be shaped when the mixture is still warm. If you are unable to roll them, add little more hot ghee or hot milk to it and try again. If you use milk, the shelf life of the sweet will be reduced.

    Serving Suggestions:

    • Serve them as a sweet snack along with a cup of coffee or tea.
    • It can be served as a prasadam or naivedyam during festivals such as Ganesh Chaturthi or Navratri.
    • Arrange them in a gift box and distribute to your friends and family on Diwali

    Tips to make the best mawa rava ladoo:

    • Always roast semolina over a low flame to prevent it from burning.
    • Make sure the rava is a light brown color and roasted well.
    • Do not add sugar powder when the mawa-semolina is hot.Let the mixture cools down before adding sugar. When it is warm enough to touch add ground sugar.

    Sooji khoya ladoo recipe with step by step photos:

    • Add sugar and cardamom seeds in a mixie jar or blender and grind it to a fine powder.
    • Keep it aside until use.
    • Heat measured ghee in a pan and add the chopped cashew nuts. You can also use chopped almonds.
    • Fry them to a golden brown color and remove out of the pan. Set them aside.
    • In the same pan, add semolina and turn the flame to low.
    • Keep stirring and roast it over a low flame for about 8-10 minutes or until it is roasted well and light brown color.
    • Take it out of the pan and set aside.
    • In the same pan, add unsweetened khoya and saute it for 4-5 minutes on a low flame and turn off the flame.
    • Combine the sauteed khoya, roasted sooji in a mixing bowl or wide bowl.
    • Mix everything together until well combined.
    • Let it cool down a little. It should be warm enough to touch.
    • Once it is warm, add ground sugar and roasted cashews.
    • Mix everything well.
    • If there are any lumps, break them with your fingers.
    • Immediately roll the mixture into round balls when it is still warm.
    • Let them cool completely and store them in an airtight container.

    Ingredients

    • ½ cup Semolina

    • Grind sugar and cardamom seeds together to a fine powder and set aside.

    • In the same ghee, add semolina and roast on a low flame until light golden color. Remove from the pan and set aside.
    • In the same pan, add khoya or mawa and roast on a low flame for 4-5 minutes.
    • Combine roasted semolina and roasted mawa in a mixing bowl and let it cool down a bit.
    • When it is still warm, add powdered sugar and fried cashews to it.
    • Mix everything well together.
    • When it is still warm, shape the mixture into 10-12 laddus or balls.
    • Let them cool completely and store in an airtight container for 4-5 days.

    Roast the semolina well on a low flame and don't burn it.
    Make sure you make laddus when the mixture is still warm. 
    If you are not able to make ladoos, sprinkle some milk and try again.

    Matar Ki Chaat Recipe - Easy, yummy and one of the healthy Indian chaat recipes made with green peas and spices.

    What is green peas chaat?

    Green peas chaat or Matar ki chaat is a super easy and healthy Indian style savory snack made with green peas, onion, tomato and spices. Chaat is one of the Indian street foods, typically made with lentils, pulses, vegetables and spices. Many Indian chaat varieties are served with sweet, tangy and spicy sauces/chutneys. This chaat doesn't need any chutneys or preparations, can be made in no time.

    There are few more variations of making matar ki chaat but this one is the dry chat variation. If you are looking to try healthy Indian chaat recipes then this recipe is for you.

    How to cook green peas for this recipe?

    I have boiled them in the water on a stovetop until they are soft and cooked. You can also steam or pressure cook them for this dish. Make sure they are not overcooked.

    Can I use Frozen Peas?

    Yes, just thaw them or rinse them with hot water and use it in the recipe.

    Can I make this chaat in advance?

    Cook green peas in advance and mix everything just before you serve. Otherwise, it oozes out water. If you want to serve it warm, reheat the peas before you assemble everything.

    Is it vegan?

    YES! it is a vegan snack.

    Serving suggestions:

    It tastes great when served warm with a cup of ginger tea or coffee. You can also serve this as a breakfast. Adding sev or bhujia on top will give the extra crunch and taste but it is completely optional.

    Step by step instructions:

    • Add one cup of peas in a vessel or saucepan along with water. Make sure you add enough water to cook them.
    • Cover the pan with a lid and let them cook for about 10 - 15 minutes or until they are soft and tender.

    Kasoori Methi Paratha Recipe - Healthy, flavorful and easy Indian flatbread prepared with whole wheat flour, dry fenugreek leaves and spices.

    What is Kasuri Methi?

    Kasuri Methi is dried methi leaves or fenugreek leaves and has a strong aroma. Adding a pinch of dried fenugreek will give a great aroma to the Indian curries or dals such as Kadai Mushroom, Masoor Dal and Matar Mushroom Butter Masala.

    What is Kasoori Methi Paratha?

    Apart from adding dry methi to the Indian curries, we can also make parathas or flatbreads with them. Traditionally, methi parathas are made with fresh fenugreek leaves but here I am replacing it with dried ones. This is a wonderful way to prepare flavorful and healthy parathas if you don't find fresh greens.

    Are these paranthas vegan?

    Yes, just use oil instead of ghee to cook them if you are vegan.

    Serving suggestions:

    They are perfect to serve as breakfast, lunch or dinner and tastes great with pickle, curries or yogurt.

    Tips:

    • The dough should be soft and pliable in order to make the soft parathas.
    • Always keep the dough covered to prevent it from drying.
    • If you have time, let the dough rest for some time to make soft parathas.
    • You can also use cumin seeds instead of ajwain or carom seeds.

     

    Kasoori Methi Roti Recipe with Step by Step Photos:

    • To soften the dry leaves, boil one cup of water and soak leaves in hot water for about 10 minutes. Discard if there are any hard stems in it.

    • Drain water completely and keep it aside.

    • In a mixing bowl, add one cup of whole wheat flour or atta, drained leaves, turmeric powder, salt, red chilli powder, ajwain and 1 tablespoon of oil.
    • Mix and rub everything together using your fingers.

    • Sprinkle water little by little and start kneading to make a soft dough.

    • Make sure the dough is soft and smooth. Otherwise, parathas won't be soft.
    • You can rest the dough for some time at this stage or prepare rotis immediately.

    • Divide the prepared dough into 6 equal portions and make them into round balls.

    • Dust each ball with wheat flour and roll it using a rolling pin to make a thin or slightly thick round circle.
    • Transfer the rolled dough to a hot pan and press gently and cook for a minute.

    • Flip the paratha and drizzle some oil or ghee and cook on both sides.
    • Serve hot!

    • Make a soft dough by adding water little by little.
    • Divide the dough into 6 round balls and keep them covered.
    • Dust each ball with wheat flour and roll to make round roti.
    • Place the rolled paratha on a hot pan. Press gently and cook for a minute.
    • Flip the paratha and drizzle some oil or ghee and cook on both sides.
    • Remove from the pan and place the hot paratha in a bowl and cover it with a lid.
    • Serve hot with yogurt or pickle.
