    Ingredients:

    For Cake:

    • ¾ cup All Purpose Flour
    • ½ cup Sugar
    • ½ cup Milk
    • 2 tablespoon Cocoa Powder
    • 3 tablespoon Oil
    • ½ teaspoon Baking Soda
    • 1.5 teaspoon Lemon Juice
    • 1 teaspoon Vanilla Essence
    • ¼ teaspoon Salt
    For Chocolate Glaze:
    • ¼ cup Powdered Sugar
    • ¾ tablespoon Cocoa Powder
    • ½ tablespoon Unsalted Butter
    • 1 tablespoon Warm Milk
    • ⅛ teaspoon Vanilla Essence

    Instructions:

    • Fill the pressure cooker / idli cooker / idli pot with sand or salt till 1 inch level. If you are using pressure cooker, do NOT use the whistle and gasket. Do NOT heat the pressure cooker without sand and don't pour water in the cooker.
    • Preheat the cooker for 10 minutes over low flame.
    • Meanwhile, combine the milk, vanilla, oil, sugar and lemon juice in a mixing bowl and whisk well.
    • Sift the flour, cocoa powder, salt and soda together to ensure even mixing.
    • Slowly add the sifted flour to the milk mixture and gently mix until the batter shows no trace of flour.
    • Do not overbeat or overmix.
    • Quickly pour the batter into the greased tin / vessel.
    • Now carefully place the tin inside the preheated cooker and close with a lid.
    • Now let it bake on low flame for 30 - 40 minutes or till a toothpick inserted into the middle of the cake comes out clean.
    • Remove the cake tin out of the cooker and let it cool for 15 - 20 minutes and then invert.
    • Let the cake cool completely.
    • To make the chocolate glaze, melt the butter and set aside.
    • Whisk the cocoa powder and powdered sugar in a bowl.
    • Add the warm milk, vanilla and melted butter to the cocoa mixture and mix until well combined.

    • Immediately pour the glaze over the whole cake or each slice.

    What is chocolate gulab jamun?

    Gulab Jamun is a traditional Indian dessert, which is deep-fried khoya (milk solid) dumplings soaked in cardamom-infused sugar syrup. Chocolate gulab jamun is a fusion and innovative variation that is made with instant gulab jamun mix and stuffed with chocolate chips. I have made this without khoya but you can also follow the traditional way and stuff them with chocolate chips.

    Can I use dark chocolate instead of chocolate chips?

    Yes, dark chocolate would work well. Just stuff the dough balls with a small piece of dark chocolate or semi-sweet chocolate.

    How long can I store them?

    They keep well at room temperature for 2-3 days. If you want to store them for a longer period, store in the refrigerator for a week.

    How to make gulab jamuns without breaking?

    Gulab jamuns break for many people especially when they make with instant mixes. Follow the below tips to make them perfect every time.

    • The dough should be soft and smooth.

    • Roll the dough balls without any crackers. They should be smooth on top.

    • Always deep fry them over a low flame until they become dark brown color.

    • If you fry them to a golden brown color, they will break after adding to the syrup.

    • The sugar syrup ratio is very important. Jamuns will be too soft and mashed if you add more water than needed. The perfect water and sugar ratio is 1:1

    Serving Suggestions:

    Serve them chilled or warm with a scoop of ice cream. Ice cream is completely optional but some people like that combination.

    Ingredients

    • 200 grams Instant Gulab Jamun Mix
    • ¼ cup Chocolate Chips or as needed
    • 3 cups Sugar
    • 3 cups Water
    • ¼ teaspoon Cardamom Powder
    • Oil for deep frying
    • Milk as needed
    • Almonds or Pistachios for Garnish

    Instructions

    • Take the instant gulab jamun mix powder in a mixing bowl.
    • Add milk little by little and gently mix to make a smooth and soft dough.
    • Cover and set aside for a few minutes.
    • Meanwhile combine the cardamom powder, sugar and water in a wide vessel and let the sugar dissolves completely.
    • Let the syrup to a boil for 7 – 8 minutes. Turn off the flame. Cover and set aside.
    • Heat oil in a pan over medium flame.
    • Meanwhile, divide the dough into small balls.
    • Stuff the each with few chocolate chips and make round and smooth balls without any wide cracks
    • Do not apply too much pressure while making the balls.
    • When the oil is hot (not smoking hot) enough to fry the gulab jamuns, reduce the flame to low.
    • Slowly drop the prepared dough balls into the oil and deep fry them until dark brown color.
    • Do not overcrowd, fry a few at a time.
    • Keep rolling the jamuns while frying for even browning.
    • Take the fried jamuns out of the oil and add them to the hot sugar syrup. If needed, heat the sugar syrup again before adding the fried jamuns to it.
    • Let them soak in the sugar syrup for an hour or two.
    • Garnish with chopped nuts and serve chilled.

    Notes

    Roll the dough balls without any cracks.
    Always fry in low flame.
    The sugar and water ratio should be 1:1 to make the syrup.

     

     

    Strawberry Shakarpara Recipe

    Strawberry Shakarpara or Shankarpali Recipe - Innovative, delicious and crunchy sweet snack with strawberries.

    What is Strawberry Shakarpara?

    Shakarpara or Shankarpali is a popular Indian bite-sized crispy sweet snack often made during festivals like Diwali, Holi and Rakhi. Traditionally, it is made with flour, ghee and sugar and we don't need to add anything else. I have given a twist to the traditional shankarpali by adding strawberry puree to the flour while kneading the dough. Strawberries will give a nice color and subtle flavor to them.

    How long can I store them?

    They keep well in an airtight container for up to 10 days. No need to refrigerate them.

    How to Make Strawberry Shankarapali Step by Step

    • To prepare the strawberry puree, wash strawberries with plenty of water and remove the green part.
    • Chop them into pieces and measure.

    • Transfer them to a blender and grind into a smooth puree along with sugar.
    • No need to add water to blend them.

    • Combine flour and slightly heated ghee in a mixing bowl to make a breadcrumb-like texture.

    • Add the poppy seeds and strawberry puree to the flour mixture and knead it into a smooth and firm dough.

    • Cover it and allow it to sit for 30 minutes.

    • Divide the dough into small round balls. Dust the work surface or a wooden board with little flour and roll each ball into a little thick circle.

    • Cut it into small pieces.

    • Deep fry them in hot oil over low-medium flame until golden brown color.

    • Drain on kitchen napkins.

    Can I bake them instead of deep-frying?

    If you don't want to deep fry them, you can bake them in the preheated oven. Follow the below steps.

    • Preheat the oven to 180 degrees C.
    • Roll the shankarpali dough into a little thick roti or circle and cut into pieces.
    • Prick the dough pieces with a fork or toothpick.
    • Arrange them on a greased or lined baking tray and bake at 180 degrees C for 15 minutes or until the edges are golden brown.
    • Once the edges are browned, remove them from the oven and cool completely before you store in an airtight container.

    • Drain them on a paper towel and let them cool completely.
    • Store them in an airtight container.
    • If you want to bake them instead of frying, preheat the oven to 180 degrees C.
    • Roll the dough into a little circle and cut into desired shapes.
    • Prick the pieces with a fork.
    • Place the pieces on a greased baking tray and bake at 180 degrees C for 15 minutes or until the edges are golden brown.
    • Let them cool completely and store in an airtight container.

    Ingredients

    • 2 cups Grated Carrot packed
    • 2 cups Coconut Milk
    • ¾ cup Sugar
    • 3 tablespoon Ghee
    • ½ teaspoon Cardamom Powder

    Instructions

    • Wash, peel and grate the carrots and measure it. Keep it aside.
    • Heat 2 tablespoons of ghee in a heavy bottomed pan.
    • Add and fry the cashews until golden brown color. Take them out of the ghee and set aside.
    • Add the sliced almonds to the same pan and fry until golden brown. Keep them aside.
    • In the same pan, add the grated carrot and saute until the raw smell disappears or for 5 minutes.
    • Keep frying till it shrinks.

    • 1 cup Chopped Strawberries
    • 1 to 1.5 cups Chilled Milk
    • 2 – 3 tbsp Sugar
    • Few Ice Cubes (optional)

    Instructions

    Ingredients

    • 2 cups Fresh Coconut
    • 1 cup Chopped Tomato
    • 1 inch piece Ginger
    • 2 teaspoon Red Chilli Powder or to taste
    • ¼ cup Roasted Bengal Gram
    • 2 tablespoon Oil
    • ½ teaspoon Mustard Seeds
    • ½ teaspoon Urad Dal
    • Few Curry Leaves
    • Salt to taste
    • A pinch of Hing

    Instructions

    • Heat a tablespoon of oil in a pan and add the chopped tomatoes. Cook until tomatoes are soft and pulpy.
    • Switch off the flame and let it cool completely.
    • Grind the coconut pieces, ginger, roasted bengal gram, cooked tomatoes, salt and red chilli powder into a paste using water.
    • Adjust the water to get the desired consistency.
    • Heat a tablespoon of oil in a pan for seasoning.
    • Add the mustard dal and urad dal and let them splutter. Add the curry leaves and hing and turn off the flame.
    • Pour this over the prepared chutney and mix until well combined.
    • Serve with idli, dosa, pongal and upma.

    Bread Vada Recipe is an instant version to make the South Indian Vadas. Vada is South Indian fried lentil donuts traditionally made with soaked and ground urad dal batter.  This bread vada is so quick to make and can be made with usually available ingredients.     Ingredients

    • 10 - 12 Bread Slices
    • 1 - 1 ¼ cup Yogurt
    • ½ cup Rice Flour
    • ½ teaspoon Cumin Seeds
    • 2 - 3 Green Chillies finely chopped
    • 1-inch piece Ginger finely chopped
    • 1 Onion
    • Few Curry Leaves
    • A Pinch of Baking Soda
    • Salt to taste
    • Oil for deep frying

    Instructions

    • Trim the edges of bread slices and cut into cubes.
    • Add yogurt and rice flour and mix until well combined or bread is mashed.
    • Add the chopped onion, green chillies, ginger, curry leaves, cumin seeds, salt and baking soda to the bread mixture and mix well to form a thick batter.
    • Add little more yogurt or rice flour to adjust the consistency
    • Heat oil in a pan for deep frying the vadas.
    • Wet your fingers and take a small portion of vada batter and flatten it on your palm or on a plastic sheet.
    • Make a small hole in the middle of the vada and slowly drop it in the hot oil.
    • Fry them until golden brown on both sides.
    • Drain on a paper towel and serve hot with chutney or tomato sauce.

    Ingredients

    • 4 Bread Slices
    • 1 Onion
    • 2 small Tomatoes finely chopped
    • 1 Green Chilli finely chopped
    • ½ teaspoon Mustard Seeds

    • A pinch of Turmeric Powder
    • 2 tablespoon Oil

    Instructions

    • Cut the bread slices into cubes and set aside.
    • Heat oil in a pan and add the mustard seeds, chana dal and urad dal. Let them splutter.
    • Add the finely chopped ginger and green chillies and fry for a couple of seconds.
    • Add the chopped onion and fry until they are light brown color.
    • Now add the chopped tomato, turmeric and salt and cook until tomatoes are mushy.
    • Add the cubed bread slices to the cooked tomato mixture and mix until combined.
    • Cook for 2 minutes and add the chopped coriander leaves.
    • Turn off the flame and serve hot.

    What is Broccoli Pakora?

    It is an Indian style deep fried broccoli fritters covered with gram flour, rice flour and spices mixture. They are crispy outside and soft inside. I have made them in South Indian style and they can be called Broccoli Bajji as well.

    Serving Suggestions:

    They are a great appetizer for any occasion. It can also be served with rice as a side dish.

    • 2.5 cups Broccoli Florets
    • 1 cup Besan / Chickpea Flour
    • ½ cup Rice Flour
    • ½ teaspoon Carom Seeds / Ajwain
    • A pinch of Baking Soda
    • 2 teaspoon Red Chilli Powder or as needed
    • Salt to taste
    • Oil for deep frying

    Instructions

    • In a mixing bowl, combine the chickpea flour, rice flour, salt, baking soda, carom seeds and red chilli powder.
    • Heat oil in a pan for deep frying.
    • Add water little by little and make a little thick batter.
    • Dip each broccoli floret into the batter and carefully drop it in hot oil.
    • Deep fry until golden brown color.
    • Drain in a paper towel and serve hot with tomato sauce.

    Notes

    Adjust the spice levels according to your taste.

    Chocolate Covered Ice Cream Bites Recipe - Valentines Day Special Recipes

    Ingredients:

    • 1.5 cups Vanilla Ice Cream
    • ¾ cup Dark Chocolate, roughly chopped
    • 2.5 tablespoon Coconut Oil
    • Sprinkles for decoration (optional)
    Instructions:
    1. Line a tray or box with a parchment paper and scoop the ice cream into it. Freeze until firm.
    2. Cut the ice cream into bites and freeze it again until use.
    3. Place a vessel on top of another vessel which has some water. Add chocolate and coconut to it and heat till it melts.
    4. Let it cool completely.
    5. Dip the ice cream bite into the melted chocolate and roll it around until coated well.
    6. Carefully remove and place it on a parchment paper. Decorate with sprinkles and store in the freezer.
