    Grape Juice Recipe ~ Summer Drink Recipes

    Fresh Grapes Juice with Lemon Recipe:

    Preparation & Cooking Time : 10 mins

    Serves: 3 persons

    Ingredients:

    Seedless black grapes: 2 cups
    Lemon Juice : from ½ a lemon
    Sugar: 1 tablespoon or to taste
    Water: As needed
    Ice Cubes: As needed

    Method:

    1. Rinse
    the grapes and separate the grapes from its stalks.

    2. Grind the grapes in
    a mixie or blender until smooth.

    3. Pour the juice through the strainer into a bowl and
    press the flesh with a metal spoon .Use little water while straining to
    make it easy.

    4. Add the sugar and lemon juice to it and mix well until
    sugar is dissolved.

    5. Then add ice cubes and serve chilled.

    Eggless Wheat Cashew Butter Cookies Recipe - There homemade cookies are very tasty, crispy, easy and perfect for Christmas, birthday parties or to serve with tea or coffee. If you want to avoid plain flour / maida in your baking then this whole wheat butter cookie recipe is for you.
    I've used toasted cashew nuts in this recipe because I just love cashews in butter cookies. You can substitute cashews with your favorite nuts using the same recipe.

    Eggless Wheat Butter Cashew Cookies Recipe

    Very simple and easy Cashew Butter Cookies with Whole Wheat Flour.

    Ingredients

    • 1 cup Whole Wheat Flour
    • ½ cup Sugar
    • ½ cup Unsalted Butter softened
    • ½ cup Cashew Nuts
    • ½ teaspoon Vanilla Essence
    • 2 tablespoon Milk or as needed
    • A Pinch of Salt

    Instructions

    • To toast the nuts, preheat the oven to 180 degree C. Spread the cashew nuts on a baking tray and bake them for 7 – 8 minutes until light brown color.
    • Remove the toasted nuts from the oven and let them cool completely.
    • Grind the cooled nuts coarsely and set aside.
    • Grind the sugar into a fine powder and set aside.
    • Preheat the oven to 180 degree C.
    • In a mixing bowl, combine the wheat flour, powdered sugar, salt and coarsely powdered nuts and mix well.
    • Then add the softened butter and vanilla essence to it and mix well.
    • Then sprinkle milk little by little over it and mix it well to make a dough. The dough should be very soft.
    • Divide the dough into 26 – 28 equal sized balls and press the each ball between your palms lightly.
    • Place them on a baking tray spacing about 1 inch apart.
    • Bake the cookies in the preheated oven for 18 minutes at 180 degree C or until the edges are browned.
    • Remove them from the oven and let them cool down for 2-3 minutes and place them on a wire rack to cool completely. Store them  in an airtight container.

    Sorakaya Perugu Pachadi ~ Bottle Gourd Yogurt Chutney Recipe

    Bottle Gourd in Spiced Yogurt ~ Sorakaya Perugu Pachadi Recipe:
    Preparation & Cooking Time : 20mins 

     
    Serves: 4 persons

    Ingredients:

    Bottle Gourd : 1 cup
    Yogurt : 1 cup
    Grated Ginger : 1 tsp
    Mustard Seeds: ½ tsp
    Cumin Seeds: ½ tsp
    Chopped Green Chillies: 2
    Curry Leaves : 1 sprig
    Turmeric Powder: ¼ tsp
    Salt to taste
    Oil: 2 tsp

    Method:

    1. Wash, peel and chop the bottle gourd into small pieces.

    2. In a vessel, add the chopped bottle gourd, water, turmeric and salt.
    Cover with a lid and cook until the bottle gourd pieces are tender.

    3.  Drain the excess water and allow it to cool.

    4. Heat oil in a pan for
    seasoning. Add the mustard seeds and cumin seeds and let them splutter.
    Then add the grated ginger, chopped green chillies and curry leaves and
    fry for a minute.

    5. Remove from the flame and let it cool completely.

    6. Combine the cooked bottle gourd and seasoned ingredients with curd.

    7. Adjust the salt and serve with rice or roti.

    Rava Laddu / Rava Ladoo ~ Festival Special Recipes

    Rava Laddu / Ladoo (Sweet Semolina Balls with Cashews, Raisins and Cardamom) 
    Preparation & Cooking Time : 25mins 

     
    Makes about 12 - 14 laddoos

    Ingredients: 

    Semolina/ Suji: 1 cup
    Sugar : 1 cup
    Finely grated or powdered dry coconut : ½ cup
    Milk: ¼ cup or as required
    Cardamom Pods: 4
    Handful of Cashews and Raisins
    Ghee: 2 - 3 tbsp

    Method: 

    1. Grind
    the sugar and cardamom seeds into a powder and set aside.

    2. Heat ghee in a
    heavy bottomed frying pan and fry the cashews until light brown color.
    Then add the raisins and fry until it plumps up. Take them out of the
    ghee and set aside.

     

    3. In the same pan, add the semolina and fry
    continuously on a medium flame till they change color to light golden.

    4. Now add the coconut, powdered sugar and roasted nuts to it and mix well.

    5. Sprinkle the milk over the semolina mixture and mix well with a spatula.

    6. When the mixture is warm enough to handle take a little portion of it and roll into balls.

    7. Its best to consume within 4-5 days of making them.

    Ingredients

    • 1 cup Grated Sweet Potato
    • ¾ cup Chickpea Flour / Besan
    • 1 - 2 tablespoon Rice Flour
    • 1 big Onion
    • ½ teaspoon Dried Mango Powder
    • 1 - 2 teaspoon Red Chilli Powder or as needed
    • ¼ teaspoon Turmeric Powder
    • 1 sprig Curry Leaves
    • Salt to taste
    • Oil for deep frying

    Instructions

    • Peel and chop the onion into thin slices and set aside.
    • Wash, peel and grate the sweet potato. In a mixing bowl, combine the flours, grated sweet potato, onion, salt, curry leaves, turmeric, amchur and red chilli powder.
    • Mix very well and add enough water to make a thick batter.
    • Heat oil for deep frying. Take a small portion of besan and sweet potato mixture and drop them into the hot oil.
    • Deep fry the fritters until golden brown and crispy and remove from the oil.
    • Serve hot with tomato sauce and coffee.

    Notes

    You can also add ginger garlic paste to make it more flavorful.

    Pearl Millet Almond Cookies Recipe (Eggless)

    Eggless Pearl Millet Almond Cookies ~ Eggless Bajra Cookies Recipe: 
    Preparation & Cooking Time : 25mins

     

    Makes about 24 cookies

    Ingredients :

    Pearl Millet Flour / Sajja Pindi : 1 cup
    Unsalted Butter : ½ cup, softened
    Sugar : ½ cup
    Green Cardamom Pods: 8
    Chopped Almonds : ¼ cup
    A pinch of salt
    About  2 tablespoons of milk (only if you need it)

    Method:

    1.Grind the sugar and cardamom seeds into a fine powder and set aside.

    2. Preheat
    the oven to 180 degree C.

    3. In a bowl, combine the flour, chopped almonds, powdered sugar and salt well.

    4. Next add the softened butter to the flour and mix everything to make a soft dough.

    5. Divide the dough into 24 equal sized balls and press the each ball between your palms lightly.

    6. Place them on a baking tray spacing
    about 1 inch apart.

    7. Bake the cookies for 15 minutes at 180 degree C.

    8. Then remove from
    the oven and let them cool down for 2-3 minutes before taking them of
    the baking tray.

    9. Place them on a wire rack to cool. Store in an airtight container.

     

    Raw Banana Fry with Dried Mango Powder

    Aratikaya Vepudu / Raw Plantain Fry with Amchoor Recipe:

    Preparation & Cooking Time : 20 mins

    Serves: 4 persons

    Ingredients :Chopped Plantain / Raw Banana : 2 cups
    Amchoor / Dried Mango Powder : 1 teaspoon (You can also make amchur at home )
    Red Chilli Powder : ½ to 1 tsp
    Turmeric Powder : ¼ tsp
    Sugar : ¼ tsp
    Mustard Seeds : ½ tsp
    Cumin Seeds : ½ tsp
    Hing: ⅛ tsp
    Salt to taste
    Oil : 2 tbsp

    Method:

    1. Wash, peel and chop the plantain into pieces. Add them to a bowl of water to prevent discoloration.

    2. Heat oil in a skillet. Add the mustard seeds and cumin seeds and let them splutter. Then add the hing and stir fry for a few seconds.

    3. Remove the plantain pieces from water and
    them to the skillet.

    4. Add salt and turmeric powder and stir fry for a
    minute. Cover it with a lid and let it cook on a low flame.

    5. When they
    are turning to soft, remove the lid and continue to stir frying until
    soft and little crisp. Stir in between to avoid burning.

    6. When it's done,
    add the red chilli powder, dried mango powder and sugar.

    7. Sprinkle very
    little water and combine well. Cover and cook for a minute and switch
    off the flame.

    8.Serve hot with rice.

    Banana Chocolate Milkshake Recipe

    Ingredients :

    Ripe Banana : 1 small sized
    Milk : 1 cup
    Unsweetened Cocoa Powder : 2 tsp
    Sugar to taste
    Ice Cubes

    Method :

    1. Peel and chop the banana.

    2. In a blender, add the chopped banana, sugar and cocoa powder and blend until smooth.

    3. Then
    add the milk and crushed ice cubes and blend it again for a few
    seconds.

    4. Add more milk if you want a thinner consistency.

    5. Pour the
    milkshake into glasses and serve immediately.

    Bread Besan Toast Recipe:
    Preparation & Cooking Time : 15 mins

    Serves: 3 - 4 persons

    Ingredients :

    Bread Slices : 6 - 8
    Chickpea Flour: 1 cup
    Rice Flour: ¼ cup
    Onion : 1
    Green Chillies: 2, finely chopped
    Finely Chopped Cilantro / Coriander Leaves : 3 tbsp
    Roasted Cumin Powder : 1 teaspoon (you can also make cumin powder at home)
    Red Chilli Powder : ½ teaspoon (Optional)
    Salt to taste
    Oil

    Method:

    1. Peel and chop the onion into small pieces.

    2. In a mixing bowl, Combine all the above ingredients except bread and oil.

    3. Slowly add water and
    mix it to a thin consistency.

    4. Dip the each bread slice both sides into the batter and place it on the hot tawa / pan.

    5. Add
    oil around the edges and roast it both sides on low heat till golden
    color.

    6. Remove from the flame and serve hot with chutney or tomato sauce.

    Eggless Ragi Thumbprint Cookies ~ Finger Millet Jam Cookies Recipe

    Eggless Finger Millet Thumbprint Cookies Recipe:

    Preparation & Cooking Time : 40 mins

    Makes about 20 cookies


    Ingredients:

    Finger Millet Flour / Ragi Flour: 1 cup
    Unsalted Butter: ½ cup, softened
    Powdered Sugar: ½ cup
    Vanilla Essence : ½ tsp
    A pinch of Salt
    Cashews : ½ cup
    Fruit Jam : 4 tablespoon (I uses mixed fruit jam here)

    Other Ingredients:


    Water: ½ cup
    Sugar : 1 tsp
    Corn Flour: 1 tsp

    Method:

    1. To toast the nuts, preheat
    the oven to 180 degree C. Spread the cashew nuts on a baking tray and
    bake them for 7 - 8 minutes. Remove from the oven and let them cool
    completely. Chop or grind the nuts coarsely and set aside.

    2. In a small bowl, add a teaspoon of sugar, corn flour and water and beat it until frothy. Keep it aside.

    3. Sieve / mix the flour and salt together and set aside.

    4. Preheat the oven to 180 degree C

    5. In
    a bowl, combine the softened butter, powdered sugar and vanilla essense
    and beat it until light and fluffy.

    6. Add the mixed flour to the butter
    mixture and mix everything to make a dough.

    7. Divide the dough into 20 balls. Dip the each ball into the corn flour mixture and then
    lightly roll in the prepared nuts.

    8. Place them on a baking tray spacing
    about 1 inch apart.

    9. Using your thumb or a small cap, make a indention
    into the center of each dough ball. Now fill each indention with melted
    jam.

    10. Bake for about 13 - 15 minutes 180 degree C.

    11. Then remove from
    the oven and let them cool down for 2-3 minutes before taking them of
    the baking tray.

    12. Place them on a wire rack to cool. Store in a airtight container.

    Mirapakaya Bajji ~ Green Chilli Fritters Recipe

    Mirapakaya Bajjilu / Mirchi Bajji /Green Chilli Fritters Recipe:

    Preparation & Cooking Time : 20 -25 mins

    Serves: 3 persons

    Ingredients :

    Large Green Chillies : 10
    Besan : 1 cup
    Rice Flour : ¼ cup
    Cooking Soda : ¼ tsp
    Turmeric Powder: ¼ tsp
    Salt to taste
    Oil for deep frying

    For Stuffing:


    Tamarind Pulp: 2 tbsp
    Besan : 2 tbsp
    Ajwain Seeds / Powdered Ajwain: 1 tsp
    Salt to taste

    Method:

    1. Combine
    all the stuffing ingredients in a bowl and make into a smooth paste.
    Keep it aside.

    2. Wash the chillies and dry them. Slit the chillies
    lengthwise and remove the seeds.

    3. Fill the each chilli with prepared
    stuffing mixture and set aside.

    4. In a mixing bowl, combine the chickpea
    flour, rice flour, cooking soda, turmeric and salt.

    5. Slowly add water and
    mix it to a thick consistency.

    6. Heat oil in a pan for deep frying.

    7. Dip
    the each chilli into the batter and slide them onto edge of the batter
    bowl to expose the side of chilli.

    8. Then slowly drop them into hot oil.
    Deep fry them on a medium flame until golden brown color.

    9. Serve
    immediately with sliced onions and lemon juice.
