    Aratipandu Boorelu - Sweet Appam Recipe - Instant Wheat Flour Appam Recipe - Navaratri Naivedyam Recipes

    Ingredients:

    • 1 cup Wheat Flour
    • ½ cup Jaggery, powdered
    • 2 small Ripe Banana (approx. ½ cup of pulp)
    • 2 tablespoon Rice Flour
    • A big pinch of Cardamom Powder
    • A big pinch of Baking Soda
    • A pinch of Salt
    • Oil for deep frying

    Instructions:

    • Add little water to the jaggery and heat until the jaggery dissolves completely. Strain to remove impurities and keep it aside.
    • Mash the banana well in a mixing bowl. Add the wheat flour, rice flour, cardamom powder, baking soda and salt to the banana pulp.
    • Then add the jaggery syrup to the flour and mix.
    • Make a thick smooth and thick batter by adding water little by little.
    • Heat oil in a pan for deep frying.
    • Pour a spoonful of batter into the hot oil and deep fry them until golden brown color.
    • Serve hot!

    Ingredients

    • 1 cup Basmati Rice
    • ½ cup Mint Coriander Chutney
    • ½ cup Green Peas
    • 1 Cup Onion Sliced
    • ½ cup Potato chopped
    • ½ cup Tomato chopped
    • 1 ¼ cups Water
    • 2 Cardamom
    • 2 Cloves
    • 1 Bay Leaf
    • ¼ teaspoon Turmeric Powder
    • Red Chilli Powder as needed
    • Salt to taste
    • 3 tablespoon Oil

    Instructions

    • Soak rice in water for 30 minutes. Drain water and set aside.
    • Heat oil in a pressure cooker and add the cumin seeds, bay leaf, cloves, cinnamon and cardamom.
    • When they are brown, add sliced onions and fry until transparent.
    • Then add the coriander mint chutney and fry for few minutes.
    • Add chopped vegetables, turmeric, red chilli powder and salt and combine well.
    • Now add the soaked rice and fry for a minute.
    • Add water and pressure cook for 3 – 4 whistles.
    • Serve hot with raita.

    Chutney Pulao Recipe with Step by Step Photos:

    • Wash and chop the vegetables into pieces and set aside until use.
    • Wash basmati rice with plenty of water and soak for 3o minutes. Drain water completely and set aside.

    • Heat oil in a pressure cooker or pressure pan and add cumin seeds, cloves, cardamom, cinnamon and bay leaf.
    • Saute them to a brown color.
    • When they are browned and fragrant, add the sliced onion and saute for a couple of minutes or until translucent.
    • When it is done, add green chutney and fry for few minutes.

    • Add vegetables, turmeric, red chilli powder and salt and combine well.
    • Then add the soaked rice and saute for a minute.
    • Add 1 ¼ cups water and pressure cook for 3 - 4 whistles.
    • Serve hot with plain yogurt or raita.

    Ingredients

    • ½ cup Black Chickpeas
    • Marble sized Tamarind Ball approx. ½ tbsp
    • 1 Onion
    • 1 Tomato
    • 2 teaspoon Rice Flour
    • ½ to 1 tablespoon Jaggery
    • ¼ teaspoon Turmeric Powder
    • ¼ teaspoon Fenugreek Seeds
    • ½ teaspoon Mustard Seeds
    • ¼ teaspoon Cumin Seeds
    • A pinch of Hing
    • 1 Green Chilli
    • 1 tablespoon Desiccated Coconut
    • Red Chilli Powder as needed
    • 1 Sprig Coriander Leaves
    • 3 teaspoon Oil
    • Salt to taste

    Instructions

    • Soak the black chickpeas overnight and pressure cook for 5 – 6 whistles or until soft. Set aside.
    • Heat a teaspoon of oil in a pan. Add the sliced onions and green chilli and fry until transparent. Add turmeric powder, chopped tomatoes and water and cook until tomatoes are mushy.
    • Add the cooked chickpeas, tamarind extract, salt, red chilli powder, jaggery and water (adjust to desired consistency).
    • Dilute the rice flour and little water and add it to the chickpeas mixture. Mix everything.
    • Let it boil for 8 – 10 minutes.
    • Add the desiccated coconut and coriander leaves and mix well. Turn off the flame.
    • Heat oil in a pan for seasoning. Add mustard seeds, cumin seeds and fenugreek seeds and let them splutter. Add hing and turn off the flame. Pour this over the prepared chickpea stew and combine.
    • Serve hot with rice.

    Ingredients

    • 25 Jackfruit Seeds
    • ¼ cup Moong Dal
    • ¼ cup Grated Fresh Coconut
    • 1 small Onion
    • ½ teaspoon Cumin Seeds
    • 1.5 teaspoon Sambar Powder
    • 1 teaspoon Urad Dal
    • ½ teaspoon Mustard Seeds
    • ⅛ teaspoon Turmeric Powder
    • Gooseberry sized Tamarind Ball
    • A few Curry Leaves
    • A big pinch of Hing
    • 2 teaspoon Oil
    • Salt to taste

    Instructions

    • Pressure cook the moong dal with water for 3 whistles.
    • Soak tamarind in water for 15 minutes and squeeze the extract out of it. Keep it aside.
    • Cut the jackfruit into 2 pieces and remove the white skin around it. Wash the peeled seeds and chop into small pieces. Soak them in water to prevent discoloration.
    • Add chopped seeds, salt, turmeric powder and water in a vessel and let it cook until the pieces are tender.
    • Meanwhile, grind the chopped onion, coconut and cumin seeds to a little coarse paste using little water. Set aside.
    • Add the tamarind extract, sambar powder, cooked moong dal and ground coconut paste to the cooked jackfruit seeds and mix.
    • Add water to adjust the consistency of the kootu.
    • Adjust the salt and let it cook for 6 – 8 minutes.
    • Turn off the flame and keep it aside.
    • Heat oil in a pan for seasoning. Add the mustard seeds and urad dal and let them splutter. Add the hing and curry leaves and stir for few seconds. Add this to the prepared kootu and combine.
    • Serve hot with rice.

    Bajra Modak or Sajja Modakam Recipe - Indian steamed sweet dumpling filled with coconut and jaggery filling. 

    What is Bajra Modak?

    Modak is a Maharashtrian steamed dumpling stuffed with sweet coconut-jaggery filling. Traditionally the outer layer is made with rice flour but I have replaced with Bajra flour or pearl millet flour in this modak recipe.

    If you want to avoid or reduce rice intake and increase the millets in your diet, Bajra Modak is perfect for you.

    Modak is also known as Modakam and Kozhukattain in South India where we use different types of fillings.

    Modaks are often made during Ganesh Chaturthi or Vinayaka Chaviti festival along with other traditional prasadams.

    How long can I store them?

    They keep well for a day at room temperature and a couple of days in the refrigerator.

    Can I make the dough and stuffing beforehand?

    You can prepare the stuffing beforehand and store it in the refrigerator.

    But you should always make the dough just before you steam them. Otherwise, dumplings will become soggy.

    Serving suggestions:

    Traditionally we serve them during festivals but they can also be served as a sweet snack along with a cup of coffee or tea.

    Step by step preparation:

    • Dry roast the poppy seeds on a low flame until light brown color. If you are not using poppy seeds, skip this step.
    • Add grated fresh coconut and jaggery to the pan and combine well.
    • Mix well until the jaggery dissolves completely.
    • Add the cardamom powder and cook on medium flame until you get a thick mixture.
    • Once it is done, turn off the flame and let it cool completely.
    • Divide it into 6 - 7 round balls and set aside.

    • Bring some water along with a pinch of water to a rolling boil and turn off the flame.
    • Pour the boiling water little by little over millet flour and mix it well together with a spatula.
    • Let it cool for 2 -3 minutes and knead it to make a soft dough.
    • Grease your hands with little oil/ghee and divide the dough into  6-7 equal portions.
    • Flatten each dough ball and keep pressing with your fingers to form a disc or cup.
    • Place the prepared sweet stuffing in the center.
    • Bring the edges together and seal them.
    • Arrange them on greased idli plates or steaming plates and steam cook on high flame for 10 - 12 minutes.

    • Let it cool for 2 -3 minutes and knead it to make a soft dough.
    • Grease your hands with little oil/ghee and divide the dough into 6-7 equal portions.
    • Flatten each ball and keep pressing with your fingers to form a disc or cup.
    • Place the prepared coconut stuffing in the center.
    • Bring the edges together and seal them.
    • Arrange them on greased idli plates or steaming plates and steam cook on high flame for 10 – 12 minutes.
    • Serve warm!

    • 1 cup Grated Fresh Coconut
    • ½ cup Jaggery, powdered
    • 2 tablespoon Melted Ghee 
    • 1 tablespoon Poppy Seeds
    • 1 tablespoon Sesame Seeds
    • ¼ teaspoon Cardamom Powder
    • Oil for deep frying
    • A pinch of Salt

    Instructions:

    • Combine the flour and salt in a mixing bowl. Add slightly heated ghee and mix well.
    • Make a soft dough by adding water little by little.
    • Cover and keep aside for 15 - 30 minutes.

    • Take a small portion of the dough and roll it into a thin  puri / circle.
    • Cut the puri with a round shaped cutter.
    • Place a spoon of coconut filling in the center.
    • With your fingertip or brush, apply little water around the edges of the puri
    • Then pleat the edges as shown in the picture.

    • Pinch the edges together and seal it properly.
    • Prepare all the modaks and keep them covered.
    • Heat oil in a pan for deep frying.
    • Gently drop the modaks in the hot oil.
    • Deep fry them over a medium flame, turn over to fry on both sides evenly.

    Modaka Payasam / Kheer Modak Recipe

    Ingredients:

    For the rice balls:

    • ½ cup Fresh Grated Coconut
    • ¼ cup jaggery, powdered
    • ½ cup Rice Flour
    • A pinch of Cardamom Powder
    • ½ teaspoon Ghee or Sesame Oil
    • ½ cup Water or as needed

    For the sauce:

    • 3 cups Milk
    • ½ to ¾ cup Sugar
    • 2 pinches of Cardamom Powder 

    Instructions:

    • Combine the grated coconut and jaggery in a pan and let the jaggery dissolves completely.
    • Cook over a medium flame. Stir continuously until you get a thick mixture.
    • When it thickens, add the cardamom powder and mix.
    • Switch off the flame and let it cool completely. 
    • Grease your and hands and make 35 - 40 small balls out of the coconut mixture.
    • Keep them aside.
    • Add water and ghee in a vessel and bring water to a rolling boil.
    • Take the rice flour in a mixing bowl and add the boiling boil little by little.
    • Mix it well with a spoon.
    • When it is still warm, knead it well to make a soft dough.
    • The dough should be soft and slightly sticky.
    • Divide the dough into small round balls and keep them covered.
    • Heat milk in a heavy bottomed pan. Boil on a medium - low flame till the milk is reduced to half. Stir occasionally.
    • While milk is heating, grease your hands with little oil or ghee and flatten the rice flour dough ball to form a disc or cup.
    • Place the coconut stuffing in the center and bring the edges together to seal it. Shape into a small round ball.
    • repeat the same process until all the dough finishes.
    • Cover them with a lid and set aside.

    • Add the sugar and cardamom powder to the reduced milk and let the sugar dissolves completely.
    • Let it boil for 2 minutes.
    • Slowly drop the prepared rice flour balls to the boiling milk.
    • Let them cook on medium flame for 7 - 8 minutes.
    • Turn off the flame and serve at room temperature or warm.

    Ellu Kozhukattai - Sesame Modak

    Ellu Kozhukattai or Til Modak Recipe - Easy and traditional Indian steamed rice flour dumplings stuffed with sweet sesame seed filling. An easy recipe for Ganesh Chaturthi or Vinayagar Chaturthi!

    What is ellu kozhukattai?

    Ellu Kozhukattai is a traditional and popular South indian steamed dumpling stuffed with sweet sesame seeds(ellu) filling. These are also known as Til Modak and Nuvvu Poornam Kudumulu.

    These are usually made during an Indian festival called Ganesh Chaturthi / Vinayakaya Chavithi. However, these dumplings can be served as a sweet snack along with a cup of coffee or tea.

    Ingredients & Substitutes:

    Rice Flour - You will need a good quality rice flour for the outer layer. Both homemade and store-bought flour would work well.

    Sesame Seeds - I have used raw white sesame seeds. You can also use store-bought roasted sesame seeds. If it is the case, skip roasting sesame seeds step.

    Jaggery - You can get jaggery from any Indian grocery stores or online. If you can't find it, replace it with the same quantity of brown sugar or cane sugar. I highly recommend jaggery in this recipe though.

    Coconut - Use fresh or frozen coconut if possible. Omit it if you don't have or swap it with desiccated coconut.

    Ghee - Ghee is clarified butter and you will need a little bit of it. Swap it with sesame oil, coconut or sunflower oil.

    Cardamom Powder

    Storage & Make-Ahead:

    The sesame seed filling can be made a day or two before and stored in the refrigerator. Make sure you make the dough on the same day you make the modaks.

    The steamed modaks / kozhukattais stays fresh for couple of days if stored properly in the refrigerator.

    Tips & Notes:

    You will need to boil water really well to make a soft and smooth dough.

    Knead rice flour dough well when it is still warm.

    Make sure you cover the rice flour dough with a damp cloth if you are not shaping modak immediately.

    Do not over cook the stuffed kozhukattai/modak to prevent them from breaking while steaming.

    The outer layer should not be too thick or too thin.

    You can also use a Modak Mould to make the beautiful modaks. You will get them from most of the Indian stores or online.

    Step by step instructions:

    Dry roast the raw sesame seeds on a low-medium flame until they are golden color. Skip this step if you are using roasted sesame seeds.

    Take them out of the pan and let them cool completely.

    Once they are cool, transfer them to a blender or mixie jar and grind to a coarse powder.

    Add the powdered jaggery, coconut and cardamom powder to the ground sesame seeds and blend it again until combined.

    Divide the ground mixture into 10-11 equal balls and set them aside.

    Combine water, salt and ghee in a saucepan and bring it to a rolling boil. Remove from the flame.

    Add boiling water to the rice flour little by little and mix with a spatula or spoon to make a soft dough.

    Let it cool down for 2 minutes and knead it well to make a soft and slightly sticky dough.

    Divide the dough into 10-11 equal size balls and keep them covered.

    Grease your hands and flatten each rice flour dough ball and place the sesame filling in the middle. Bring the edges together to seal it.

    Arrange them on a steamer or idli plate and steam cook for 10-12 minutes on a high flame.

    Remove from the steamer and serve!

    • Let it cool for 2 minutes. When it is still warm, knead it well to make a soft dough. The dough should be soft and slightly sticky.
    • Divide the dough into round balls and keep them covered.
    • Grease your hands with little oil or ghee and flatten the dough ball to form a disc.
    • Place the sesame seeds stuffing in the center and bring the edges together to seal it.
    • Place the prepared modaks on steaming plate or idli plate and steam cook them on a high flame for 10 - 12 minutes.
    • Serve!
