    Velakkaya Perugu Pachadi | Wood Apple Yogurt Chutney Recipe

    Wood Apple / Elephant Apple Yogurt Chutney Recipe
    Preparation & Cooking Time : 15 mins
    Serves: 4 persons

    Ingredients :

    Wood Apple / Elephant Apple: 1
    Fresh Yogurt: 1 cup
    Chopped Ginger : 1 tsp
    Green Chillies : 4
    Turmeric Powder: ¼ tsp
    Mustard Seeds: ¼ tsp
    Chana Dal : ¼ tsp
    Urad Dal : ¼ tsp
    Cumin Seeds: ¼ tsp
    Cilantro : 2 sprigs
    Oil: 2 tsp
    Salt to taste

    Method:

    1. Break the wood apple and scoop out the pulp.

    2. In
    a pan, cover the wood apple pulp with water and cook for 5 minutes.
    Switch off the heat and after it cools grind into a paste.

    3. Heat oil in a
    pan for tempering. Add the mustard seeds, chana dal, urad dal and cumin
    seeds and let them splutter. When the seeds stop tossing, add the
    chopped green chillies and chopped ginger and fry for another few
    seconds. Switch off the flame and allow it to cool.

    4. Combine the tempered
    ingredients, salt, turmeric powder, wood apple paste, yogurt and
    chopped cilantro in a mixing bowl.

    5. Mix very well and serve with hot steamed rice or roti.

     

    Apple Cinnamon Milkshake Recipe

    Apple and Cinnamon Milkshake Recipe
    Preparation & Cooking Time : 10 mins
    Serves: 2 persons
    Recipe adapted from: Tarla Dalal

    Ingredients :

    Chopped Apple : 1 cup
    Milk : 1 cup
    Cinnamon Powder : 1 tsp
    Sugar : 2 tablespoon or to taste
    Ice Cubes

    Method:

    1. In a blender, combine the chopped apple, sugar and cinnamon powder and blend until smooth.

    2. Then add the milk and crushed ice cubes and blend it again for a few seconds. Add more milk if you want a thinner consistency.

    3. Pour the milkshake into glasses and serve immediately.

    Methi Poha |Flattened Rice with Fenugreek Leaves Recipe
    Preparation & Cooking Time : 15 mins
    Serves: 3 persons

    Ingredients :

    Thick Poha / Thick Flattened Rice : 2 cups
    Methi / Fenugreek Leaves : 1 cup
    Onion : 1 big sized
    Green Chillies : 3- 5
    Curry Leaves : 1 sprig
    Lemon : 1
    Turmeric Powder : ½ tsp
    Peanuts : 1 tbsp
    Mustard Seeds : 1 tsp
    Chana Dal : 1 tsp
    Urad Dal : 1 tsp
    A pinch of hing
    Salt to taste
    Oil : 1 tbsp

    Method: 

    1. Wash the poha with plenty of water. Drain and set aside.

    2. Peel and chop the onion into small pieces and keep them aside.

    3. Heat a
    tablespoon of oil in a pan. Add the mustard seeds, chana dal, urad dal
    and peanuts and let them splutter.

    4. Then add the slit green chillies,
    curry leaves and hing and fry for a few seconds. Add the

    chopped onions and fry till the onions are translucent.

    5. Now add the
    fenugreek leaves and turmeric powder. Fry until the leaves wilt. Add the
    soaked poha and salt and mix well.

    6. Switch off the flame and add the
    lemon juice to it. Combine well and serve.

    Pudina Mullangi Pachadi | Radish and Mint Chutney for Tiffins

    Mullangi Pudina Pachadi ~ Mint and Radish Chutney Recipe
    Preparation & Cooking Time : 20 mins
    Serves: 4 persons

    Ingredients :

    Grated Radish / Mooli : 1 cup
    Fresh Mint Leaves : 1 cup, packed
    Green chillies : 3- 5
    Tamarind : 1 inch piece
    Salt to taste
    Oil : 2 tsp

    For Tempering :

    Mustard Seeds : ¼ tsp
    Urad Dal : ¼ tsp
    Oil : 1 tsp
    A pinch of hing (optional)

    Method :

    1. Soak
    the tamarind in water for 10 minutes and set aside.

    2. Heat oil in a
    pan and add the slit green chillies and fry for a minute. Now add the
    grated radish and mint leaves to it and fry for 3 - 5 minutes till the
    raw smell disappears. Remove from the heat and let it cool.

    3. Grind the
    radish mix, soaked tamarind and some salt to a smooth paste by adding little water. Transfer
    the chutney into a bowl and keep it aside.

    4. Heat a teaspoon of oil in a
    pan for seasoning. Add the mustard seeds and urad dal and let them
    splutter. When the seeds stop popping, add the hing and stir for a few
    seconds and turn off the heat.

    5. Pour the tempered ingredients over the
    chutney and combine well. Serve with idli, dosa , pongal or upma.

    Custard Powder Halwa Recipe

    Ingredients:

    Custard Powder : 1 cup ( I used vanilla flavour )
    Sugar : 3 cups
    Water : 4 cups
    Ghee : 3 tbsp
    Cashews : 10 - 15

    Method :

    1. Grease
    a plate with a little ghee and set aside.

    2. Fry the cashews in a teaspoon
    of ghee and keep them aside.

    3. Mix the custard powder, sugar and water
    without any lumps.

    4. Heat the pan with the custard powder mixture and stir
    it continuously to avoid lumps till it becomes thick.

    5. Add the ghee to
    it and mix it very well till the mixture becomes jelly and transparent.
    Now add the fried cashews and switch off the flame.

    6. Pour the mixture
    into the greased tray and let it cool down completely. Cut into pieces
    and serve.

    Palathalikalu Recipe

    Prep Time: 10 mins    |  Cook time: 20 mins    |  Serves: 4

    Ingredients:

    • 4 cups Milk
    • ½ cup + 1 teaspoon Rice Flour
    • ½ cup sugar or as needed
    • ¼ cup grated coocnut
    • ½ teaspoon Cardamom Powder or a pinch of cooking camphor
    • 2 teaspoon Ghee

    Method:

    1. Combine the rice flour and a teaspoon of ghee in a wide bowl. Add boiling water little by little  to the flour, mix very well with a spatula and make a soft dough.
    2. Allow it cool for a couple minutes then knead it well.
    3. The dough should be soft and smooth. Grease your hands with little ghee and divide the dough into small balls & shape into long strips.
    4. Take a wide vessel and bring milk to boil. Add the sugar and cardamom powder and allow it to boil for a couple of minutes.
    5. Now add the dough strips to the boiling milk and cook for 10 - 15 minutes.
    6. Dilute a teaspoon of rice flour in a little water and set aside. Now add the coconut and diluted rice flour mixture to the milk and cook for 3 -5 minutes and switch off the flame.

    Rava Vada / Vadai ~ Semolina Fritters Recipe

    Rava Vada / Ravva Vadai Recipe
    Preparation & Cooking Time : 20 - 30 mins
    Makes about 15 - 17


    Ingredients:

    Semolina / Suji : 1 cup
    Yogurt : ¾ cup
    Onion : 1 big sized
    Chopped Green Chillies: 4
    Grated Ginger : 1 - 2 tsp
    Cilantro / Curry leaves : 2 sprigs
    Salt to taste
    Oil for deep frying

    Method:

    1. Peel and chop the onion into small pieces and set aside.

    2.
    In a mixing bowl, combine the chopped onion, semolina, curd, salt,
    chopped ginger, chopped chillies and curry leaves. Mix very well and set
    aside.

    3.
    Meanwhile, heat oil for deep frying the vadas. Apply little oil or
    water on palm and take a small amount of semolina mixture, flatten
    lightly with fingers and drop it into hot oil.

    4. Deep fry them until golden brown color and crispy and remove from the
    oil.

    5. Serve on a cloudy day with a cup of hot coffee or tea.

    Peanut & Coconut Kozhukattai / Modak Recipe
    Preparation & Cooking Time : 40 - 50 mins
    Makes about 12 -14

    Ingredients :

    Rice Flour : 1 cup
    Peanuts : ½ cup
    Grated fresh coconut : ½ cup
    Powdered Jaggery : ½ cup
    Cardamom Powder: ½ tsp
    Ghee : 1 - 2 tsp
    A big pinch of salt




    Method :

    1. Heat
    a heavy
    bottomed pan on a medium heat, slowly roast the peanuts to golden brown
    color. Cool and rub the skins off.

    2. Grind the roasted peanuts into a
    little coarse powder and set aside.

    3. Combine
    the coconut and jaggery in a heavy bottomed pan and allow the jaggery to
    melt.

    4. Now add the peanut powder and mix very well. Cook on a medium
    flame for 3 - 5 minutes. When it thickens,
    add the cardamom powder and mix well. Allow it to cool and roll into a
    round shape balls.

    5. Combine the rice flour and salt in a wide bowl. Add
    boiling water little by little  to the flour, mix very well with a
    spatula and make a soft dough.

    6. Allow it cool for 3 - 5 minutes then knead it well. The dough
    should be soft and smooth.

    7. Grease your hands with ghee.Take a ball of the rice flour dough and flatten it as thin as possible.

    8. Place
    the coconut ball in the middle and cover it from all sides
    towards the middle and shape into a round ball.

    9.Place them in a greased
    idly plates and steam them for 10 - 15 minutes. Serve and enjoy!

    Sweet Corn Curry Toast Recipe

    Curried Sweet Corn Toast / Sandwich Recipe
    Preparation & Cooking Time: 15 mins

    Makes 4 or 5 - Serves 2

    Ingredients :
    Bread Slices : 8 -10
    Sweet Corn : 1 (approx. 1 cup)
    Onion : 1 medium
    Lemon : 1
    Cumin Seeds : ¼ tsp
    Green Chillies : 3 - 4
    Red Chilli Powder : ½ tsp
    Turmeric Powder :¼ tsp
    Grated Ginger : 1 tsp
    Garam Masala : 1 tsp
    Handful of chopped cilantro
    Oil
    Method :
    1. Grind the sweet corn kernels into a coarse paste and set aside.
    2. Heat a table spoon of oil in a pan and add the cumin seeds. Once they start to splutter, add the finely chopped chillies and grated ginger and fry for a couple of seconds. Now add the finely chopped green chillies and grated ginger and fry for a minute.
    3. Add thechopped onions and fry till the onions are translucent. Now add the
    sweet corn paste, turmeric, salt, garam masala, red chilli powder and
    little water and mix well. Cover with a lid and cook for 5 minutes.

     

    4. Switch off the flame and add the lemon juice and chopped cilantro and
    combine well.
    5. Spread this mixture evenly on the bread slices and toast with a little butter or oil until both sides are golden brown.
    6. Serve hot with tomato ketchup.
