    Ulundu Kozhukattai / Uppu Kozhukattai / Kolukattai Recipe

    Ingredients:

    • 1 cup Rice Flour
    • ½ Cup Urad Dal
    • 2 tablespoon Grated Fresh Coconut
    • 3 - 4 Green Chillies
    • Mustard Seeds: ½ tsp
    • Hing: ⅛ tsp
    • Turmeric Powder: ¼ tsp
    • Few Curry Leaves
    • Oil: 2 tsp
    • Salt to taste

    Method:

    • Soak the urad dal for an hour. Drain water and grind it along with green chillies and salt into a coarse mixture. Just run the mixer twice or thrice to make a coarse mixture.
    • Make the mixture into patties and place them on greased idli plates. Steam cook for 6 - 7 minutes.
    • Cool down and mash it. Keep it aside
    • Now heat a teaspoon of oil in a pan. Add the mustard seeds and let them splutter. Add the curry leaves and hing and stir for a couple of seconds. Add the steamed urad dal mixture and turmeric and fry for 3 - 4 minutes.
    • Then add the coconut and fry for a minute. Remove from the flame and set aside.

    • Add water, salt and a teaspoon of oil in a saucepan. Bring the water to a rolling boil and turn off the flame.
    • Take the rice flour in a wide mixing bowl. Add the boiling water little by little to the flour to the flour and mix it well with a spatula.
    • Let it cool for 2 - 3. When it is still warm knead it well to make a soft dough. The dough should be soft and slightly sticky. Keep covered till you use to prevent drying.
    • Grease you hands with little water and divide the dough into lemon sized balls. Flatten the ball and keep pressing with fingers to form a disc or cup.
    • Place a tablespoon of prepared urad dal mixture in the center. Carefully press the edges to seal the opening. Repeat the same procedure until all the dough finishes.
    • Steam the kozhukattais for about 10 - 12 minutes. Serve hot or warm.

    Thambittu Unde Recipe - A Traditional South Indian Sweet Recipe

    Ingredients:

    • 1 cup Raw Rice
    • ½ cup Roasted Gram
    • ½ cup Raw Peanuts
    • 1.5 cups Jaggery, powdered
    • 1 ¼ cups Grated Dry Coconut
    • 1 tablespoon White Sesame Seeds
    • 1 tablespoon Ghee

    Method:

    1. Dry roast the rice until golden brown color and allow it cool.
    2. Dry roast the peanuts and let them cool completely. Cool and rub the skins off. Grind it to a coarse powder and set aside.
    3. Dry roast the sesame seeds until light golden color and set them aside.
    4. Grind the roasted rice along with roasted gram into a fine powder and keep it aside.
    5. Combine the powdered jaggery and water (approx.½ cup of water) in a heavy bottomed pan.
    6. Let the jaggery dissolves completely and bring it to a boil.
    7. Now add the powdered rice mixture, coconut, sesame seeds and coarsely powdered peanuts to it and mix well.
    8. Add the ghee and keep stirring until the mixture leaves sides of the pan.
    9. When the mixture becomes like a dough, turn off the heat. Let it cool.
    10. Shape the mixture into round balls and store in a airtight container.

    Suji Kakara Pitha Recipe - Traditional Oriya Sweet Recipe

    Ingredients:

    • 1 cup Semolina
    • 1 cup Grated Fresh Coconut
    • ½ cup + 2 tablespoon Sugar
    • ½ teaspoon Cardamom Powder
    • 2 cups Water
    • Ghee as needed
    • Oil for deep frying

    Method:

    1. Combine the grated coconut and sugar in a heavy bottomed pan. Allow the sugar to melt and cook on a medium flame.
    2. Stir continuously until you get a thick mixture. When it thickens, add the cardamom powder and mix well.

    3. Remove it from the heat and let it cool.
    4. Shape the mixture into round or oval shape balls and set aside.

    5. Add 2 cups of water, 2 tablespoons of sugar and a teaspoon of ghee in a saucepan. Bring the water to a rolling boil.
    6. Slowly add the semolina to it and stir continuously without any lumps. Reduce the flame to low and let it cook for couple of minutes or until the mixture thickens.

    7. Let it cool for sometime and knead it well. The semolina dough should be soft.
    8. Grease your hands and divide the dough into equal portions.
    9. Flatten the dough each dough ball using your palms and place the coconut stuffing in the middle. Cover it from all sides.

    10. Heat oil in a pan for deep frying. Deep fry the stuffed ball in hot oil until golden brown color.
    11. Remove from the oil and serve warm!

    Ammini Kozhukattai Recipe - Steamed Rice Flour Balls seasoned with coconut and spices.
    Ammini Kozhukattai or Mani Kozhukattai is a traditional South Indian dish that usually made during Ganesh Chaturthi festival. These tiny kozhukattais are so easy to make and can be served as a snack or naivedyam during festivals. This dish is also known as undralla guggillu or kozhukkatai sundal. There are a few variations of making this and today's one is the easier one with fresh coconut and spices.

    Ingredients

    • ½ cup Rice Flour
    • ½ cup water or as needed
    • 2 - 3 Grated fresh coconut
    • ½ teaspoon Mustard Seeds
    • ¼ teaspoon Urad Dal
    • A big pinch of Hing
    • A pinch of Turmeric powder
    • 2 teaspoon Oil
    • 2 dried red chillies
    • Few Curry Leaves
    • Salt to taste

    Instructions

    • Add water, salt and a teaspoon of oil in a saucepan. Bring water to a rolling boil and turn off the flame.
    • Take the rice flour in a wide mixing bowl. Add the boiling water little by little to the flour and mix it well with a spatula / wooden spoon. Combine well to make a smooth dough.
    • Let it cool for 2 – 3 minutes. When it is still warm knead it well.
    • The dough should be soft and slightly sticky.
    • Grease your hands with oil and divide the dough into small sized round balls.
    • Steam cook the dough balls in greased idli plates for 8-10 minutes. Keep them aside.
    • Heat a teaspoon of oil in a pan. Add the mustard seeds and urad dal and let them splutter.
    • Add the curry leaves, broken red chillies and hing to it and stir for a couple of seconds.
    • Add the steamed balls, turmeric and coconut to it and mix well. Adjust the salt.
    • Fry for 1 – 2 minutes and turn off the flame.
    • Serve warm.

    Ammini Kozhukattai Recipe with Step by Step Photos:

    • Combine water, salt and one teaspoon of oil in a vessel and bring it to a rolling boil.
    • Turn off the flame and keep it aside.

    • Take the rice flour in a wide mixing bowl and add the boiling water little by little to the flour.
    • Combine everything with a spatula and make a smooth dough.

    • Let the dough cool a bit before you knead.
    • When the dough is still warm, knead it well with greased hands.

    • Grease your hands with a little oil and divide the dough into small round balls.

    • Keep them covered and set aside.

    • Transfer the rolled dough balls to greased idli plates or steamer plates.

    • Steam cook the dough balls for about 8-10 minutes over a high flame.
    • When they are steamed, remove from the flame and keep aside.

    • Heat 1 teaspoon of oil in a pan for seasoning and add the mustard seeds and urad dal.
    • When they are browned, add curry leaves, broken red chillies and hing to it and saute for a couple of seconds.

    • Add the steamed rice balls, turmeric powder and coconut to the seasoned ingredients. Adjust salt.
    • Mix everything well and saute for a min or two.

    • Remove from the flame and serve hot or warm!

    Lobia Chaat / Black Eyed Peas Chaat Recipe

    Ingredients:

    • ¾ cup Black eyed peas
    • 1 Onion, finely copped
    • 1 Tomato, chopped
    • 1 or 2 green chillies, finely chopped
    • 1 teaspoon chaat masala
    • 1 teaspoon roasted cumin powder
    • Red Chilli Powder to taste
    • Lemon Juice as needed
    • Salt to taste
    • Some chopped coriander leaves for garnishing

    Method:

    1. Wash and soak the black eyed beans in lot of water overnight.
    2. Drain water and pressure cook for 3 - 4 whistles with fresh water.
    3. Drain and transfer the cooked beans into a mixing bowl.
    4. Add the finely chopped onion, tomato, chat masala, salt, red chilli powder, coriander leaves and lemon juice to it. Mix well.
    5. Taste and add more spices if needed.
    6. Serve warm.

    Roasted Gram and Coconut Laddu Recipe

    Ingredients:

     

    • 1 cup Roasted Bengal Gram
    • ½ cup Sugar
    • ½ cup Melted Ghee
    • ½ cup Dessicated Coconut
    • 3 - 4 Cardamom Pods
    • 1 tablespoon cashew pieces or as needed

     

    Method:

    1. Grind the roasted gram into a fine powder and set aside. Grind the sugar and cardamom seeds into a fine powder and keep it aside.
    2. Heat ghee in a pan and add the cashew pieces. Fry them until golden brown.
    3. Add the powdered gram dal to it and fry for 1 - 2 minutes.
    4. Turn off the flame and let it cool down. When the mixture is little warm, add the powdered sugar and coconut to it. Do not add the sugar when the mixture is hot.
    5. Mix well and take a little portion of it and roll into balls. If the mixture is sticky to roll, set it aside for sometime or until firm. Store in a airtight container and serve.

    Pav Bhaji is a very famous Indian street food. It is a thick mashed vegetable curry cooked with spices and served with a soft buttered bread roll. There are many variations of Mumbai Pav Bhaji such as Jain Pav Bhaji, Cheese Pav Bhaji and Khada Pav Bhaji.

    Paneer Pav Bhaji is another famous variation of pav bhaji from Mumbai, India. This street food is so simple to make at home and can be served as a breakfast, lunch or dinner.

    Capsicum, potatoes, cauliflower, carrots, green peas, tomatoes and french beans are usually added to make pav bhaji. You will need to use a special spice blend called Pav Bhaji Masala to make this dish tasty and flavorful. You can use store-bought masala powder or homemade masala powder.     Ingredients

    • ¾ cup Crumbled Paneer (Indian Cottage Cheese)

    • ¾ cup Chopped Cauliflower

    • 1 small Capsicum
    • 1 large Potato
    • 2 large Tomatoes
    • 1 large Onion finely chopped
    • 1 or 1.5 tbsp Pav Bhaji Masala
    • 1.5 teaspoon Ginger Garlic Paste
    • ½ teaspoon Turmeric Powder
    • 1 teaspoon Red Chilli Powder
    • ½ teaspoon Garam Masala
    • 1 Green Chillies chopped
    • 8 Pavs
    • 2 to 3 tablespoon Butter / Oil
    • Salt as needed
    • Chopped Coriander Leaves
    • Lemon Juice as required

    Instructions

    • Pressure cook the peas, potato, cauliflower, beans and carrot along with water, till soft. Drain any left over water. Lightly mash the cooked vegetables and set aside.
    • Heat butter / oil in a pan. Add the finely chopped onion and chopped green chilli. Saute them till they become translucent.
    • Now add the ginger garlic paste and fry till the raw smell disappears.
    • Add the chopped tomatoes and cook until soft and mushy.
    • Add the chopped capsicum, turmeric, pav bhaji masala, chilli powder and garam masala. Fry for 2 minutes.
    • Add water, salt and cooked vegetables to it and mix well. Let it simmer for 6 – 7 minutes. Add little more water if it is too thick.
    • Now add the paneer and let it cook for a couple of minutes.

    Easy Corn Rava Upma Recipe

    Prep Time: 5 mins    |  Cook time: 15 mins    |  Serves: 4

    Ingredients:

    • 1 cup Cornmeal / Maize Rava / Corn Rava
    • 2 cups Water
    • 1 Onion
    • 2 - 3 Green Chillies, chopped
    • 1 Sprig Curry Leaves
    • 1 small sized Lemon
    • 1 teaspoon Mustard Seeds
    • 1 teaspoon Urad Dal
    • 1 teaspoon Chana Dal
    • 1 tablespoon Peanuts
    • 2 tablespoon Oil
    • Salt to taste

    Method:

      1. Dry roast the cornmeal until a nice aroma comes out. Keep it aside.
      2. Heat oil in a heavy bottomed pan and add the mustard seeds, chana dal, urad dal and peanuts. Let them splutter.
      3. Now add the chopped green chillies and curry leaves and fry for a couple of seconds.
      4. Add the chopped onion and fry until translucent. Add salt and 2 cups of water to it and bring everything to a boil.
    1. Once
      it comes to a boil, add the roasted cornmeal. Mix well and cover it
      with a lid.
    2. Reduce the flame and let it cook completely.
    3. Switch off the flame. Add the lemon juice and mix well.
    4. Serve hot with a cup of ginger tea and chutney.

    Amaranth Flour Burfi Recipe

    Ingredients:

    • ½ cup Amaranth Flour / Rajgira Atta
    • 1 cup Sugar
    • 1 cup Melted Ghee
    • ½ teaspoon Cardamom Powder
    • 10 Almonds

    Method:


    1. Dry roast the amaranth flour in a heavy bottomed pan till the color changes to light golden brown color. Remove from the flame and set aside.
    2. Grease a plate with ghee and keep it near the stove.
    3. Roast the sliced almonds in a teaspoon of ghee and set aside.
    4. Combine the sugar and little water
      in a heavy bottomed pan and place over low flame.
    5. The amount of water
      should be just enough to soak the sugar and make a syrup of half thread
      consistency.
    6. Now add the roasted flour and cardamom powder and mix well.
    7. Keep stirring continuously. Add the melted ghee little by little while stirring the mixture.
    8. When the mixture starts leaving the sides & bottom of the pan, turn off the flame. Immediately pour the mixture on a greased tray.
    9. Sprinkle the almonds on top and press gently.
    10. Let it cool a bit and cut into desired shapes.
    11. Let them cool completely and store in a airtight container.
